Abstract
La présente invention concerne la préparation d'un produit alimentaire liquide dont l'ingrédient protéinique principal est constitué par de la protéine de soja. On forme une solution aqueuse de protéines de soja à un pH supérieur au point isoélectrique mais inférieur à 10, on sépare la matière insoluble de la solution pour obtenir un extrait clarifié contenant en solution la protéine et les hydrates de carbone; on sépare ces hydrates de carbone de l'extrait clarifié par filtration sur une membrane semi-perméable et on associe sur rétentat à d'autres ingrédients alimentaires. Isolat de protéines de soja purifié utilisable pour compléter ou remplacer des aliments (farines).
