Abstract
Continuous production of sour milk in a cheese factory by bringing the milk, already provided with rennet and/or acid medium into a pulsation zone of an apparatus, the walls of which deform as a result of the pulsations, and in which the sour milk is formed and is collected at the outlet thereof. Additional deformation of the walls of the apparatus is preferably brought about by externally applied mechanical forces.
