Abstract

Raw eggs are opened, the yolks are sepd. and cooked very carefully without breaking the vitellin membranes; the yolks are then combined with egg white and the two formed by moulding or extruded as the white is cooked. The ratio of egg white to yolk can be adjusted as required and the simulated hard-boiled egg produced in this manner is virtually indistinguishable in taste, texture and smell from individually cooked hard-boiled eggs.
