Abstract
PURPOSE:To obtain a jelly raw cake comprising a core material having excellent compatibility with jelly, having natural flavor, taste and grace, by sealing sterilized raw fruits as the core material together with gelatin and agar in a transparent synthetic polymer container having no gas permeability. CONSTITUTION:Fresh raw fruits are immersed in a sterilizing solution comprising 94-98wt.% sodium hypochlorite and 4-8wt.% water for 4-8min, washed with water and dehydrated. Gelatin and/or agar is heated with citric acid, lysine and water and, after 5-8min, blended with a small amount of essence obtained from raw fruit to give a jelly. The sterilized raw fruits and the jelly are sealed in a sterilized container made of synthetic polymer having no gas permeability to give the aimed jelly raw cake which is preservable at ice temperature for a month and has an appreciable natural taste of characteristic core material.
