Abstract

Synthetic fruit contains an aq. gel obtained from (0.1-0.5%) carraghenine kappa, (0.06-0.3%) carraghenine iota, (0.04-0.2%) carob gum, (0.05-0.4%) K salt, (32-70%) sweetener, (0.1-3%) dye and perfume, and (20-50%) water. The salt is a citrate, chloride or phosphate. The sweetener is saccharose, invert sugar, starch hydrolysate of high dextrose content. An aq. mixture of the components at >50 degrees C is extruded through a cooled tube of suitable section and cut into pieces. The product has structure and taste similar to natural fruit.
