Abstract

The bakery prodts. are conditioned as they leave the cooking oven with a view to effecting a drying/cooling operation to replace the conventional 'sweating'. At the same time the phenomena leading to the degradation of bread during storage are arrested to the max. extent so as to effect a subsequent disinfection treatment; this enables the bread to be preserved in suitable packages for several months. The prodts. are placed in an air-tight container and subjected to a reduced press. of 10-200 torr for 30-180 secs.; moisture is extracted to the extent of 4-6wt.%, and the temp. is quickly reduced from 85-100 degrees C, to a level of 20-30 degrees C, inside the loaf and to 10 degrees C at its periphery. Disinfection is effected in a special chamber with a mixt. of ethylene oxide and freon; contact with the gas is for 30-40 mins. under a press. of 500-600 torr.
