1413482 Baking bread; cooling baked bread TWEEDY OF BURNLEY LTD and W BRADSHAW 15 Jan 1973 10904/75 Divided out of 1413481 Headings A2A and A2E The normal cooking time for a foodstuff, e.g. bread, consists of a first stage during which cooking takes place and a shorter second stage for drying and stabilisation. According to this invention the foodstuff is removed from the oven at the end of the first stage and, without deliberate precooling, subjected to rapid cooling under reduced pressure, which treatment also effects the necessary drying and stabilisation of the foodstuff.
