Claims (5)

1. Lösligt ALDC-derivat (ALDC är en förkortning av orden acetolactate decarboxylase), kännetecknat av att ALDC behand- 5 lats med glutaraldehyd i ett vattenhaltigt medium, varvid koncentrationen motsvarar 0,1-5 g glutaraldehyd per gram rent ALDC-protein.
2. ALDC-derivat enligt patentkrav l, kännetecknat av att 10 glutaraldehydhalten är i intervallen 0,25-2 g glutaraldehyd per gram rent ALDC-protein.
3. Användning av ett lösligt ALDC-derivat enligt patentkrav 1 eller 2 vid ölfermentering. 15
4. Användning enligt patentkrav 3, kännetecknad av att ALDC-derivatet används tillsammans med vanlig jäst i samband med satsfermentering. 20
5. Förfarande för framställning av ett acetolaktatkarboxylas (ALDC)-derivat, kännetecknat av att ALDC behandlas med glutaraldehyd i ett vattenhaltigt medium, varvid koncentrationen motsvarar 0,1-5 g glutaraldehyd per gram rent ALDC-protein, företrädesvis 0,25-2 g glutaraldehyd per gram rent ALDC-25 protein. • · « «
