EL PRODUCTO SE CUECE LUEGO DENTRO DE LA TRIPA Y SE ENFRIA. DURANTE TODO EL PROCEDIMIENTO, LA TRIPA PERMANECE DENTRO DE SU LIMITE ELASTICO DE FORMA QUE PERMANECE EN TENSION. LA CARNE ROJA ESTA CONTENIDA EN SU TRIPA DE POLIMERO QUE SE ESTIRA, DENTRO DE SU LIMITE ELASTICO, HASTA EL 10% Y ESTA BAJO UNA TENSION DE HASTA 2,7 KG POR CM DE ANCHURA A 21C.
