CONSISTE EN SOMETER A FERMENTACION ANAEROBICA POR ACIDO LACTICO, CON UTILIZACION DE LACTOBACILOS RESISTENTES A PENICILINA, A UNA MASA DE MICELIO BRUTO DE PENICILLIUM. LA MASA DE MICELIO BRUTO, ES TRANSFORMADA EN UN PRODUCTO DE ENSILADO CON MICELIOS EXENTO DE PENICILINA, QUE A CONTINUACION SE APORTA COMO SUSTANCIA DE INOCULACION A LA CANTIDAD PRINCIPAL DE LA MASA DE MICELIO BRUTO, Y ESTA SE SOMETE A UNA FERMENTACION ANAEROBIA POR ACIDO LACTICO. EL PRODUCTO RESULTANTE DE ENSILADO, CON MICELIOS, EXENTO DE PENICILINA, TIENE UN PH DE 4,2 A 4,5.
