Abstract
Procedimiento y dispositivo de vinificación por maceración carbónica, del tipo según el cual se desunen las bayas de los escobajos de modo que las bayas así desunidas puedan liberar una fracción del mosto que contienen y se encuentran rodeadas por una masa líquida sustancialmente incompresible, el procedimiento caracterizado porque se opera esta separación impulsando la vendimia bruta a las cubas por medio de una bomba de tal modo que en un instante del ciclo de ésta los racimos sean bruscamente sometidos a la presión de impulsión que cumple la misión de onda de choque.
