Abstract
Se describe un proceso y un aparato para enfriar uvas cosechadas, siendo transportadas las uvas desde un recipiente colector de cosecha (1) hacia una prensa (5) o hacia un recipiente de maceración (23), que se caracteriza porque las uvas son cargadas con dióxido de carbono durante el transporte hacia la prensa (5) y/o durante el transporte hacia el recipiente de maceración (23). Como resultado se logra una mejora en el sabor del vino.
