Abstract
Liquid smoke compositions comprise a mixture of smoke colouring and flavouring constituents, and an amount of a water soluble solubilizing agent sufficient to prevent said smoke constituents from separating out. The solubilizing agent may be ethanol, glycerine, propylene glycol or triethylene glycol. The liquid composition has at least 15% by weight of the smoke constituents. The compositions may be used for coating tubular food casings over a surface thereof, the casings being suitable for imparting smoke flavour and colour to food products processed therein.
