Abstract
PURPOSE: An extract from rosemarry or sage with ethanol or hexane is used in the combination with a food emulsifier to effectively prevent the oxidation of food with no adverse effects on the taste and color.
CONSTITUTION: Dried leaves of rosemarry or sage are extracted with ethanol or hexane and the extract is dried by the spray drying method to form a dried powder. The powder in an amount of less than 0.2% based on the food is used together with less than 0.1% of food emulsifier such as a fatty acid ester of glycerol or sorbitol or lecithin as a food antioxidant. The food emulsifier is added on the extraction together with the solvent and the slovent is distilled off. Then, the mixture of the extract with the emulsifier is solidified by cooling and made into a powder, which also may be employed.
