Abstract

PURPOSE: To provide an antioxidant having remarkably improved antioxidation effect of natural antioxidant and effective at a small amount of application, by combining an antioxidation component extracted from herb spices, etc. with specific amounts of phospholipid and ethyl alcohol.
CONSTITUTION: The objective antioxidant is prepared by compounding (A) 1pt.wt. of an antioxidation component obtained by extracting a herb spice (preferably sage, resemarry, marjoram, thyme, oregano, or basil), residue of the spice left after separating essential oil, oleo resin of a herb spice extracted with a polar solvent (e.g. ehtyl ether), oleo resin of a herb spice extracted with a nonpolar solvent (e.g. n-hexane), and its extraction residue, with a polar solvent, with (B) 1W20pts. of a phospholipid (e.g. soybean phospholipid) and (C) 0W50pts. of ethyl alcohol. The oxidation of an oil or fat, or a food containing oil or fat, can be prevented by using the above antioxidant.
