Abstract

PURPOSE: To inhibit industrially and advantageously the fading of paprika coloring matter with time, by adding to paprika coloring matter a solvent extract obtd. from rosemary, sage or a mixture thereof.
CONSTITUTION: An extract obtd. by extracting vegetable rosemary, vegetable sage or a mixture thereof with a solvent such as hexane, ethanol or water is purified and then added to paprika coloring matter. For example, 1kg of the leaves or the stem of dried rosemary is immersed in 10l of water contg. 50wt% ethanol. The extraction is conducted at 20°C for 2W3hr. The resulting extract is decolorized by using activated carbon, etc. Impurities are removed by filtration or a steam-blowing method. Then the extract is concentrated by drying it under vacuum, to obtain a dried product. This purified product is homogeneously mixed with paprika coloring matter. Alternatively, a soln. of the purified product is sprayed on the surface of pharmaceutical products, foods, etc. colored with paprika coloring matter. The fading of paprika coloring matter with time is inhibited.
