Abstract

PURPOSE: To obtain food comprising fats and oils which are not easily oxidized, by the synergistic effect of an extract of rosemaries or sages with an organic solvent, citric acid, and a protein hydrolyzate.
CONSTITUTION: Rosemaries or sages are extracted with an organic solvent, e.g. ethanol or hexane, and the solvent is distilled out of the extract. The solid is pulverized to give a powdery extract, which is added to a food comprising fats and oils with citric acid, and a protein hydrolyzate, e.g. gelatin or casein. The amounts of the extract, citric acid, and hydrolyzate are preferably about 0.02% or less, 0.02% or less, and 1% or less, respectively. Examples of the food include fried noodles, baked cakes or cookies, or margarine. This method is particularly effective for animal oils.
