Abstract
PURPOSE: To improve oxidation preventing effect of food especially containing fats and oils, by using an extracted material of rosemary or sage with a specific organic solvent and an organic acid, inorganic acid, or its salt.
CONSTITUTION: An active ingredient is extracted from rosemary or sage by using a specific organic solvent. The solvent is removed from the extracted solution by evaporation to give powder, which is used as antioxidant (the ingredient A). When an organic acid such as citric acid, malic acid, lactic acid, etc., an inorganic acid such as phosphoric acid, polyphosphoric acid, etc. or the salt of the acid (the ingredient B) is used together with the ingredient A, the synergistic effect can provide oxidation preventing effect similar to or more effective than that of a conventional antioxidant. Amounts of the ingredients A and B which are added to a food are about not more than 0.2wt% based on the food respectively. The acid and salt of the ingredient B is used together in the case of an alkaline food so that they have buffer action.
