Abstract

Procedimiento para el tratamiento de pellejos con enzimas proteolíticas, con simultáneo aflojamiento de la base, caracterizado porque los pellejos reblandecidos, cinerados y descarnados se llevan con ácido a un alcance ácido del ph, pero no por debajo de ph 4 y, después de ello, a temperaturas no esencialmente por debajo de temperatura ambiente, se hacen actuar hasta alrededor de 50ºC, conjuntamente amilasas y proteasas.
