Abstract

Procedimiento para la obtención de un aroma de roble natural, adecuado para envejecer o añejar vinos o licores naturales en un período de tiempo marcadamente inferior al habitual, caracterizado porque se someten a una extracción sólido-líquido, forzada en circuito cerrado, virutas de roble adecuadamente dispuestas en un recipiente de material inerte, siendo dicha extracción realizada en dos fases; porque la primera de dichas fases emplea un agente de extracción constituido por una solución hidro-alcohólica de graduación comprendida entre 45 y 70º, manteniéndose la temperatura del agente de extracción entre 250ºC y 40ºC, con lo que se obtiene un primer extracto líquido de graduación alcohólica inferior a la inicial que se enfría hasta 20ºC antes de retirarlo del circuito de extracción, porque a continuación, las virutas impregnadas con la solución hidro alcohólica se someten a la segunda fase de extracción que, en calidad de agente de extracción líquido, emplea agua descalcificada que circula a través de las virutas en sentido contrario con respecto a la primera fase, manteniéndose la temperatura de dicha fase acuosa en un valor comprendido entre 30ºC y 95ºC , tras lo cual se obtiene un segundo extracto líquido que se enfría hasta 20ºC antes de retirarlo de l circuito de extracción, y finalmente dichos primer y segundo extractos se mezclan en proporciones adecuadas para obtener el aroma de roble natural de graduación alcohólica comprendida entre 30º y 50º
