Abstract
Procedimiento y dispositivo para acelerar los procesos de maduración de bebidas alcohólicas, mediante efecto de ultrasonido sobre las bebidas alcohólicas en presencia de adiciones que forman bouquet, preferentemente maderas odoríferas, sirviendo la bebida alcohólica como medio de transmisión para las ondas ultrasónicas, procedimiento caracterizado porque las bebidas alcohólicas a elaborar se exponen durante un tiempo de 30-60 minutos, en un sistema cerrado bajo constante entremezclado, a un campo de ultrasonido ampliamente homogéneo en todo el volumen, con una frecuencia de 20 a 50 kHz, preferentemente 35 kHz, una potencia acústica especifica de como máximo 1,7 W/1, una intensidad acústica media de como máximo 0,5W/cm2, una superficie de madera específica, conforme a la bebida alcohólica, de 20-40 cm2/1, con un ciclo de trasiego por bomba de 3-4 por hora.
