Abstract

Un procedimiento para la preparación de un producto de enzina sacarificante inmovilizada en forma de partículas, seleccionándose la enzima sacarificante del grupo que consta de amiloglucosidasa y alfaa-aamilasa maltógena, cuyo procedimiento comprende revestir partículas de soporte de caseína granular con una mezcla de reacción acuosa de enzima sacarificante, albúmina de huevo y glutareldehido, en donde las proporciones en peso de la cantidad de enzima sacarificante a caseína y a albúmina se encuentrar en el intervalo de 0,5 y de 0,2 a 20 respectivamente.
