Abstract
A method of malting barley and other grains, which includes the steps of soaking the grain with water to initiate germination, germinating the grain for a period of time sufficient to produce sufficient enzymes in the grain to facilitate the completion of malting, subjecting the sprouted grain to a sudden pressure change to thereby restrict further development or respiration thereof, and to continue malting the grain to produce, within a period of no more than 48 hours from the time of said sudden pressure change, a malt that, when drying on the stove, has a difference of fine to coarse extract of no more than 3%.
