Abstract

A method of preparing cellulosic tubular charcuterie casings, which can be easily detached from the food contained therein, method comprising the steps of: enabling a cellulose, tubular charcuterie casing material; advancing said charcuterie casing around a mandrel to and through a gathering apparatus; applying to the inside surface of said delicatessen casing advancing to about 0.775 mg/cm2 of a homogeneous aqueous coating composition containing at least about 0.05% by weight of water soluble cellulose ether and between about 0.1 and 15 times the quantity of said cellulose ether of a second component selected from the group consisting of animal and vegetable oils, mineral oil, silicone oils and a water soluble alcoholic oxide adduct of partial fatty acid esters, said said being applied aqueous coating composition to the surface of said advancing casing, at least about 0.00016 mg/cm2 of said cellulose ether being applied to the inside surface of said casing and less than about 0.465 mg/cm2 of water to the wicked, and then gather said advancing tubular charcuterie casing.
