Ácidos ciclohexanocarboxílicos para el enmascaramiento selectivo del sabor
Campo de la invención
La presente invención se refiere a un procedimiento para el enmascaramiento selectivo del sabor agrio en productos consumibles.
Antecedentes de la invención
La industria alimentaria ha realizado un esfuerzo significativo para modificar y armonizar el sabor, así como para eliminar y reducir el mal sabor en productos alimenticios. Las categorías básicas de sabor son salado, dulce, agrio, amargo y umami. También se pueden incluir sabores adicionales, por ejemplo, metálico, ardiente, acre, astringente y muchos más. En consecuencia, las categorías de mal sabor son muy amplias e incluyen cualquier sabor no deseado. El descubrimiento de nuevos modificadores del sabor que enmascaran el mal sabor desagradable permite la creación de sabores bien equilibrados. No obstante, los modificadores de sabor actualmente disponibles son generalmente no selectivos, por lo que la calidad del sabor en su conjunto puede cambiar. Por lo tanto, es particularmente necesario desarrollar modificadores del sabor que proporcionen un efecto de enmascaramiento específico del mal sabor. Dichos compuestos enmascaran selectivamente un tipo particular de mal sabor sin afectar a los otros sabores de un producto.
La solicitud de patente de Estados Unidos 2007/0026119 divulga el uso de ésteres de esteroles vegetales para enmascarar el sabor amargo, agrio y/o astringente en productos consumibles.
La solicitud de patente de Estados Unidos 2012/0189750 describe el uso del ácido clorogénico como agente para enmascarar o modificar un mal sabor tal como el amargor.
Sumario de la invención
La presente invención proporciona un procedimiento para utilizar una composición de ácido ciclohexanocarboxílico para el enmascaramiento selectivo del sabor agrio en productos consumibles.
La presente invención se refiere a un procedimiento para enmascarar el sabor agrio de un producto consumible mediante la adición de una cantidad eficaz olfativa de ácido (1S,3R,4R,5R)-3-[[3-(3,4-dihidroxifenil)-1-oxo-2-propen-1 -il]oxi]-1,4,5-trihidroxiciclohexanocarboxílico.
El procedimiento puede comprender además la etapa de añadir una cantidad eficaz olfativa de un compuesto seleccionado del grupo que consiste en:
ácido (1 R,3R,4S,5R)-3-[[(2E)-3-(3,4-dihidroxifenil)-1-oxo-2-propen-1-il]oxi]-1,4,5-trihidroxi-ciclohexanocarboxílico; ácido (1a,3R,4a,5R)-4-[[3-(3,4-dihidroxifenil)-1-oxo-2-propen-1-il]oxi]-1,3,5-trihidroxi-ciclohexanocarboxílico; ácido (1S,3R,4R,5R)-3,4-bis[[3-(3,4-dihidroxifenil)-1-oxo-2-propenil]oxi]-1,5-dihidroxi-ciclohexanocarboxílico; ácido (1a,3R,4a,5R)-3,5-bis[[3-(3,4-dihidroxifenil)-1-oxo-2-propen-1-il]oxi]-1,4-dihidroxi-ciclohexanocarboxílico; ácido (1 R,3R,4S,5R)-3,4-bis[[3-(3,4-dihidroxifenil)-1 -oxo-2-propen-1 -il]oxi]-1,5-dihidroxi-ciclohexanocarboxílico y una mezcla de los mismos.
Descripción detallada de la invención
La intensidad de un sabor agrio en un producto consumible viene determinada tanto por iones hidrógeno libres como por iones hidrógeno no disociados, que son aproximadamente iguales en sabor agrio sobre una base molar (Li et al, Food Chem. 2005, 185: 200-204) Hosokawa et al, utilizan aminoácidos que incluyen prolina, ácido aspártico y ácido glutámico para modificar la acidez de una bebida de cítricos, pero persisten problemas tales como un regusto desagradable, productos decolorados y un olor desagradable (documento JP 58-138363) Washino et al, enseña también la mejora de la acidez utilizando un derivado de flavona (documento EP 0605261).
En otras áreas de sabor tales como el sabor dulce, Lee et al, enseñan el uso de derivados de ácido clorogénico, cinarina, ácido isoclorogénico y ácido neoclolorénico como inductores de dulzor (documentos US 3.924.017 y US 3.916.028). Chien et al, informan posteriormente que también puede utilizarse una mezcla de ácido clorogénico de 3-CQA, 4-CQA, 5-CQA, 3-FQA, 4-FQA, 5-FQA, 3-p-CoQA, 4-pCoQA, 5-p-CoQA, 3,4-diCQA, 3,5-diCQA, 4,5-diCQA, 3,4-CFQA, 3,5-CFQA y 4,5-CFQA para reducir múltiples tipos de mal sabor, incluidos los sabores metálicos y/o amargos en edulcorantes artificiales, el sabor ardiente en alcohol, el sabor a leguminosa y a aldehído en los
productos de soja, así como la sensación de ardor en productos carbonatados. Se cree que dicho efecto general puede ser una consecuencia de la mejora general de la percepción de dulzor (documento WO 02/100192).
Sin embargo, nada en esta técnica anterior proporciona una composición de enmascaramiento específica del sabor agrio.
El ácido (1 S,3R,4R,5R)-3-[[3-(3,4-dihidroxifenil)-1 -oxo-2-propen-1 -il]oxi]-1,4,5-trihidroxi-ciclohexanocarboxílico (fórmula I) contiene centros quirales, proporcionando de esta forma una serie de isómeros tales como el ácido (1 R,3R,4S,5R)-3-[[(2E)-3-(3,4-dihidroxifenil)-1 -oxo-2-propen-1 -il]oxi]-1,4,5-trihidroxi-ciclohexanocarboxílico (fórmula II). Los ácidos ciclohexanocarboxílicos de la presente invención se pueden obtener comercialmente, se pueden sintetizar según procedimientos conocidos en la técnica, por ejemplo tal como se describe por Sefkow (Eur. J. Org. Chem. 2001, 1137-1141) o se pueden obtener a partir de una diversidad de productos botánicos tales como frutas (por ejemplo, manzanas, albaricoques, moras, arándanos, cerezas, frutos cítricos, melocotones, peras, ciruelas y fresas), hojas de plantas (por ejemplo, hojas de arándano, mate y eucommia), verduras (por ejemplo, alcachofas, coles de Bruselas, berzas, zanahorias, berenjenas, kales, pimientos, patatas y tomates) y otras plantas (por ejemplo, bambúes, granos de café, flores de madreselva, semillas de girasol y yerba mate).
Los expertos en la técnica aprecian cómo pequeñas diferencias estructurales entre análogos cercanos pueden dar lugar a diferencias inesperadas y significativas en propiedades y funciones. Además, las actividades de muchos compuestos también pueden asociarse con su configuración quiral. Un compuesto de una forma enantiomérica incorrecta puede carecer de propiedades biológicas, físicas o químicas deseables. No obstante, identificar un centro quiral y desarrollar un proceso rentable para sintetizar enantiómeros y/o compuestos racémicos dirigidos plantea retos difíciles, dejando aparte que el descubrimiento de una forma activa es impredecible, ya que dicho esfuerzo a menudo no puede conducir a un enantiómero deseable que posea una función más fuerte que los otros y/o su racemato.
Ahora se ha descubierto, sorprendentemente, que los ácidos ciclohexanocarboxílicos de la presente invención poseen un efecto de enmascaramiento específico del sabor. En particular, el ácido (1S,3R,4R,5R)-3-[[3-(3,4-dihidroxifenil)-1-oxo-2-propen-1-il]oxi]-1,4,5-trihidroxi-ciclohexanocarboxílico es claramente eficaz en el enmascaramiento del sabor agrio. Así, el ácido (1S,3R,4R,5R)-3-[[3-(3,4-dihidroxifenil)-1-oxo-2-propen-1-il]oxi]-1,4,5-trihidroxi-ciclohexanocarboxílico proporciona un rendimiento superior de ingredientes y posee ventajas inesperadas en aplicaciones específicas de enmascaramiento del sabor.
En consecuencia, la presente invención se refiere al sorprendente hallazgo de la inesperada eficacia del ácido (1 S,3R,4R,5R)-3-[[3-(3,4-dihidroxifenil)-1 -oxo-2-propen-1 -il]oxi]-1,4,5-trihidroxiciclohexanocarboxílico en el enmascaramiento del sabor agrio de un producto consumible.
Un producto consumible incluye, por ejemplo, un producto alimenticio (por ejemplo, una bebida), un edulcorante tal como un edulcorante natural o un edulcorante artificial, una composición farmacéutica, un suplemento dietético, un nutracéutico, una composición de higiene dental y un producto cosmético. El producto consumible puede contener además un saborizante.

Un producto cosmético incluye, por ejemplo, entre otros, una crema para la cara, un lápiz de labios, un brillo de labios y similares. Otros productos cosméticos adecuados para su uso en la presente invención incluyen un bálsamo labial, tal como CHAPSTICK o BURT'S BEESWAX Lip Balm.
Un ácido consumible es un ácido comestible o adecuado para el consumo humano en una cantidad dada. Un ácido consumible incluye, por ejemplo, pero sin limitación, ácido acético, ácido alantoico, ácido A-cetoglutarico, ácido ascórbico, ácido aspártico, ácido benzoico, ácido cetoesteárico, ácido citramálico, ácido cítrico, ácido fórmico, ácido fumárico, ácido galacturónico. , ácido glucorónico, ácido glutámico, ácido glicérico, ácido glicólico, ácido clorhídrico, ácido isocítrico, ácido láctico, ácido lactarímico, ácido lactoisocítrico, ácido málico, ácido oxalacético, ácido oxálico, ácido fosfórico, ácido piroglutámico, ácido pirrolidinonacarboxílico, ácido pirúvico, ácido quínico, ácido shikímico, ácido succínico, ácido sulfúrico y ácido tartárico. Un ácido consumible es un compuesto saborizante que contribuye al sabor agrio de un producto consumible. Un compuesto para enmascaramiento del sabor agrio reduce y/o suprime el sabor agrio y la percepción ácida de un ácido consumible en un producto consumible.
Se entiende que la expresión "cantidad eficaz olfativa" significa la cantidad de un compuesto para enmascarar el sabor agrio utilizado en un producto consumible, en el que el compuesto para enmascarar el sabor agrio reduce y/o suprime el sabor agrio del producto consumible.
La cantidad eficaz olfativa puede variar dependiendo de muchos factores, incluidos otros ingredientes, sus cantidades relativas y el efecto olfativo que se desea. Se puede utilizar cualquier cantidad de un compuesto para enmascarar el sabor agrio que proporcione el grado deseado de efecto de enmascaramiento del sabor agrio sin mostrar un mal sabor. En determinadas formas de realización, la cantidad eficaz olfativa varía de 1 parte por billón a 1000 partes por millón en peso, de forma más preferida de 50 partes por billón a 100 partes por millón en peso, de forma incluso más preferida de 1 a 50 partes por millón en peso. Se entiende que el término "ppm" significa parte por millón en peso.
También se pueden utilizar materiales adicionales junto con los compuestos de la presente invención para encapsular y/o suministrar el efecto de enmascaramiento del sabor agrio o amargo. Algunos materiales conocidos son, por ejemplo, pero sin limitación, polímeros, oligómeros, otras sustancias no poliméricas tales como tensioactivos, emulsionantes, lípidos (incluidas grasas), ceras y fosfolípidos, aceites orgánicos, aceites minerales, vaselina, aceites naturales, fijadores de perfume, fibras, almidones, azúcares y materiales de superficie sólida como zeolita y sílice.
La invención se describe con mayor detalle mediante los ejemplos no limitantes siguientes. Los materiales se adquirieron de Aldrich Chemical Company a menos que se indique lo contrario.
Ejemplo I: preparación de muestras de ensayo
Se prepararon una serie de soluciones de ácido ciclohexanocarboxílico (10 ppm en agua), a continuación:
1. Ácido (1 S,3R,4R,5R)-3-[[3-(3,4-dihidroxifenil)-1 -oxo-2-propen-1 -il]oxi]-1,4,5-trihidroxi-ciclohexanocarboxílico (fórmula I);
2. Ácido (1 R,3R,4S,5R)-3-[[(2E)-3-(3,4-dihidroxifenil)-1 -oxo-2-propen-1 -il]oxi]-1,4,5-trihidroxiciclohexanocarboxílico (fórmula II);
3. Ácido (1 a,3R,4a,5R)-4-[[3-(3,4-dihidroxifenil)-1 -oxo-2-propen-1 -il]oxi]-1,3,5-trihidroxi-ciclohexanocarboxílico (fórmula III);
4. Ácido (1 S,3R,4R,5R)-3,4-bis[[3-(3,4-dihidroxifenil)-1 -oxo-2-propenil]oxi]-1,5-dihidroxi-ciclohexanocarboxílico (fórmula IV);
5. Ácido (1 a,3R,4a,5R)-3,5-bis[[3-(3,4-dihidroxifenil)-1 -oxo-2-propen-1 -il]oxi]-1,4-dihidroxi-ciclohexanocarboxílico (fórmula V);
6. Ácido (1 R,3R,4S,5R)-3,4-bis[[3-(3,4-dihidroxifenil)-1 -oxo-2-propen-1 -il]oxi]-1,5-dihidroxi-ciclohexanocarboxílico (fórmula VI) y
7. Una mezcla de fórmula I, II, III, IV, V y VI en una relación en peso de 28,1: 4,3: 7,9: 2,0: 2,5: 3,0 (51,7%).
Ejemplo II: Efecto de enmascaramiento del sabor agrio
Se prepararon y se utilizaron solución de ácido láctico (0,09% en peso en agua) y solución de ácido cítrico (0,07% en peso en agua), respectivamente, para evaluar el efecto de enmascaramiento del sabor ácido de los ácidos ciclohexanocarboxílicos, que se expresa utilizando una escala de intensidad de 0 a 10, en la que 0 = enmascaramiento total, 2 = enmascaramiento intenso, 5 = enmascaramiento moderado, 8 = enmascaramiento débil y 10 = sin enmascaramiento. Las puntuaciones de intensidad de los ácidos ciclohexanocarboxílicos fueron las siguientes:
De entre todos los ácidos ciclohexanocarboxílicos evaluados, la fórmula I mostró un efecto de enmascaramiento del sabor agrio particularmente intenso y duradero. Dicha propiedad ventajosa es inesperada. El efecto de enmascaramiento del sabor agrio anterior fue el mismo tanto en ácido láctico como en ácido cítrico.
Claims (5)
1. Un procedimiento para enmascarar el sabor agrio de un producto consumible que comprende la etapa de añadir una cantidad olfativa eficaz de ácido (1S,3R,4R,5R)-3-[[3-(3,4-dihidroxifenil)-1-oxo-2-ácidopropen-1-il]oxi]-1,4,5-trihidroxi-ciclohexanocarboxílico.
2. El procedimiento de la reivindicación 1, en el que la cantidad eficaz olfativa es de 1 parte por billón a 1000 partes por millón.
3. El procedimiento de la reivindicación 1, en el que la cantidad eficaz olfativa es de 50 partes por billón a 100 partes por millón.
4. El procedimiento de la reivindicación 1, en el que la cantidad eficaz olfativa es de 1 a 50 partes por millón.
5. El procedimiento de la reivindicación 1, que comprende además la etapa de añadir una cantidad eficaz olfativa de un compuesto seleccionado del grupo que consiste en:
ácido (1 R,3R,4S,5R)-3-[[(2E)-3-(3,4-dihidroxifenil)-1 -oxo-2-propen-1 -il]oxi]-1,4,5-trihidroxi-ciclohexanocarboxílico; ácido (1a,3R,4a,5R)-4-[[3-(3,4-dihidroxifenil)-1-oxo-2-propen-1-il]oxi]-1,3,5-trihidroxi-ciclohexanocarboxílico; ácido (1S,3R,4R,5R)-3,4-bis[[3-(3,4-dihidroxifenil)-1-oxo-2-propenil]oxi]-1,5-dihidroxi-ciclohexanocarboxílico; ácido (1a,3R,4a,5R)-3,5-bis[[3-(3,4-dihidroxifenil)-1-oxo-2-propen-1-il]oxi]-1,4-dihidroxi-ciclohexanocarboxílico; ácido (1 R,3R,4S,5R)-3,4-bis[[3-(3,4-dihidroxifenil)-1 -oxo-2-propen-1 -il]oxi]-1,5-dihidroxi-ciclohexanocarboxílico y una mezcla de los mismos.
