Abstract

Un proceso para convertir el fitato presente en un alimento en fosfato inorgánico, que comprende las etapas de: (i) mezclar mecánicamente una suspensión que comprende: (a) 100 partes en peso del alimento que contiene fitato, (b) 60-1000 partes en peso de una mezcla de disolventes que comprende agua y un disolvente orgánico inmiscible con agua que tiene un punto de ebullición de 20- 100C, constituyendo el disolvente orgánico inmiscible con agua el 20-85% en peso de la mezcla de disolventes, y (c) una fitasa; y (ii)secar el alimento para retirar el disolvente orgánico.
