Abstract

El objeto de la Patente es un procedimiento de descongelación y salado simultáneos de piezas de carne o pescado, por inmersión de estas en salmuera de concentración y temperatura controladas. El equipo para su desarrollo consta de un depósito (1) de preparación de salmuera, un tanque (2) de tratamiento de las piezas, un equipo refrigerador (3) de la salmuera y una bomba (4) para la circulación de esta en circuito cerrado. En el tanque (2) puede instalarse una fuente de ultrasonidos, para facilitar la rapidez y homogeneidad de la penetración de la salmuera en la pieza tratada.
