A LA FRUTA CITRICA FRESCA SE LE HACE INICIALMENTE UNA INCISION PARA PENETRAR LA CAPA DE ALBEDO, PERO NO LAS SECCIONES DE ZUMO SUBYACENTES, Y LA FRUTA CON LA INCISION SE INTRODUCE ENTONCES EN UNA SOLUCION ACUOSA DE UNA ENZIMA PECTINASA. LA SOLUCION ENZIMICA SE INTRODUCE ENTONCES DENTRO DEL ALBEDO DE LA FRUTA INMERSA USANDO BIEN UN IMPULSO DE VACIO O UNA SERIE DE IMPULSOS DE PRESION POSITIVA.
