Juices of fruit and berries are prepared and preserved by exposing the fruit or berries to the action of an invert sugar solution containing acid and having a redox potential so low that no bacterial action or oxidation is possible which solution by virtue of its high osmotic pressure, almost completely separates the juice in the fruit or berries without mechanical appliances.
