SE PRODUCEN PRODUCTOS LACTEOS FERMENTADOS, TALES COMO YOGUR O SUERO DE MANTECA, POR FERMENTACION DE UNA MATERIA PRIMA ADECUADA, TAL COMO LECHE, CON DIFERENTES ESPECIES DE MICROORGANISMOS, DE MODO QUE LOS MICROORGANISMOS QUE SON BENEFICIOSOS PARA LA PRODUCCION DE LA FASE, PERO AFECTAN DESFAVORABLEMENTE A LA CALIDAD DEL PRODUCTO DURANTE EL ALMACENAMIENTO, SE APARTAN DE LA MEZCLA DE FERMENTACION POR MEDIO DE UNA MEMBRANA SEMIPERMEABLE. EL PROCEDIMIENTO SE PUEDE LLEVAR A CABO EN SISTEMA DE ALIMENTACION DISCONTINUA O CONTINUAMENTE, PREFERIBLEMENTE CON CONTROL DE PH CONTINUO.
