Abstract

Foodstuffs are prepared by adding konjak paste having a pH value of 9.0 to 10.3 to the food raw materials then processing the mixture. 1 to 50% konjak paste may be used. Hamburger, a salmon product and Vienna sausage are exemplified. The konjak paste may be prepared using basic amino acids and basic salts.
