  1. Logement de couteau (10) pour une machine à couper, en particulier une machine à couper des produits alimentaires, comportant une surface d'appui (24) pour un couteau (12), en particulier un couteau circulaire ou un couteau en forme de faucille,
    une portion de logement (26) pour le couteau (12), qui fait saillie axialement de la surface d'appui (24), et
    au moins un élément transmetteur de couple de rotation (38) qui fait saillie axialement de la surface d'appui (24), qui est espacé radialement de la portion de logement (26) et qui vient s'engager dans le couteau (12), élément dans lequel est réalisé un logement pour un moyen de fixation destiné à fixer le couteau (12) sur le logement de couteau (10),
    caractérisé en ce que
    le logement de couteau (10) comprend un tenon de préfixation (36) qui pénètre radialement dans un espace intérieur (30) de la portion de logement (26).
  2. Logement de couteau (10) selon la revendication 1,
    caractérisé en ce que
    un taraudage (39) destiné à loger une vis (40) prévue pour visser le couteau (12) sur le logement de couteau (10) est réalisé dans le ou dans chaque élément transmetteur de couple de rotation (38).
  3. Logement de couteau (10) selon la revendication 1 ou 2,
    caractérisé en ce que
    une dimension axiale du ou de chaque élément transmetteur de couple de rotation (38) est inférieure à une dimension axiale du couteau (12) dans la zone de l'élément transmetteur de couple de rotation (38).
  4. Logement de couteau (10) selon l'une des revendications précédentes, caractérisé en ce que
    le ou chaque élément transmetteur de couple de rotation (38) présente un contour extérieur adapté à une traversée associée (66) du couteau (12).
  5. Logement de couteau (10) selon l'une des revendications précédentes, caractérisé en ce que
    il est prévu plusieurs éléments, en particulier trois éléments transmetteurs de couple de rotation (38), et en particulier
    tous les éléments transmetteurs de couple de rotation (38) présentent la même distance radiale de la portion de logement (26), et/ou tous les éléments transmetteurs de couple de rotation (38) sont équidistants le long d'une trajectoire circulaire agencée concentriquement à la portion de logement (26).
  6. Logement de couteau (10) selon l'une des revendications précédentes, caractérisé en ce que
    la portion de logement (26) est réalisée au moins partiellement en forme cylindrique et est en particulier adaptée à une ouverture centrale (54) circulaire associée du couteau (12), et au moins une portion partielle (32) de la portion de logement (26), voisine de la surface d'appui (24), forme un ajustement correspondant avec l'ouverture centrale (54) du couteau (12), et une extrémité libre de la portion de logement (26) présente un diamètre extérieur réduit par rapport à la portion partielle (32).
  7. Logement de couteau (10) selon l'une des revendications précédentes, caractérisé en ce que
    la portion de logement (26) définit un espace intérieur (30) en particulier cylindrique qui est ouvert du côté frontal et qui est orienté concentriquement à la portion de logement (26), de sorte qu'il en résulte une paroi annulaire (28), et au moins un tenon de préfixation (36) pénètre depuis la paroi annulaire (28) radialement dans l'espace intérieur (30).
  8. Dispositif de manipulation (42) pour monter ou démonter un couteau (12) sur un logement de couteau (10) d'une machine à couper, en particulier selon l'une des revendications 1 à 7, comportant
    au moins un moyen pour monter de façon détachable le dispositif de manipulation (42) sur le couteau (12), et
    un élément de préfixation (52) monté en particulier solidairement en rotation sur le dispositif de manipulation (42), élément qui est apte à traverser une ouverture centrale (54) du couteau (12) monté sur le dispositif de manipulation (42) et qui peut être introduit dans un espace intérieur (30) d'une portion de logement (26) d'un logement de couteau (10) de la machine à couper,
    caractérisé en ce que
    sur une surface enveloppe de l'élément de préfixation (52), il est prévu au moins un guidage (56) pour au moins un tenon de préfixation (36) du logement de couteau (10), pénétrant radialement dans l'espace intérieur.
  9. Dispositif de manipulation (42) selon la revendication 8,
    caractérisé en ce que
    l'élément de préfixation (52) est adapté au contour de l'espace intérieur (30) et est en particulier réalisé cylindrique ou cylindrique-creux.
  10. Dispositif de manipulation (42) selon l'une des revendications 8 ou 9, caractérisé en ce que
    le guidage qui est en particulier un guidage à coulisse est réalisé de manière à permettre un premier mouvement axial de l'élément de préfixation (52) jusque dans l'espace intérieur (30), une rotation de l'élément de préfixation (52) dans l'espace intérieur (30) et ensuite un second mouvement axial de l'élément de préfixation (52) jusque dans l'espace intérieur (30).
  11. Dispositif de manipulation (42) selon la revendication 10,
    caractérisé en ce que
    le guidage est réalisé en forme de guidage à coulisse (56) et comprend une première portion de gorge (58) s'étendant axialement et une seconde portion de gorge (60) qui s'y raccorde et qui s'étend en direction circonférentielle, et en particulier
    le guidage à coulisse (56) comprend en supplément une troisième portion de gorge (64) s'étendant axialement qui s'étend à partir de la seconde portion de gorge (60) dans une direction opposée à la première portion de gorge (58), et/ou
    la largeur de la seconde portion de gorge (60) s'étendant en direction circonférentielle est au moins localement supérieure à une dimension maximale du tenon de préfixation (36), vu en direction axiale.
  12. Système, comprenant :
    un logement de couteau (10) d'une machine à couper, en particulier d'une machine à couper des produits alimentaires, selon l'une des revendications 1 à 7,
    un couteau (12), en particulier un couteau circulaire ou un couteau en forme de faucille, susceptible d'être fixé sur le logement de couteau, pour la machine à couper, comprenant une ouverture centrale qui correspond avec une portion de logement (26) du logement de couteau (10) de la machine à couper, et au moins une traversée (66) radialement espacée de l'ouverture centrale (54) pour le passage d'un moyen de fixation prévu pour fixer le couteau (12) sur le logement de couteau (10) et associé à un élément transmetteur de couple de rotation (38) respectif faisant saillie axialement de la surface d'appui (24) du logement de couteau (10), le contour de la ou de chaque traversée (66) étant adapté au contour extérieur de l'élément transmetteur de couple de rotation (38),
    un dispositif de manipulation (42) selon l'une des revendications 8 à 11, susceptible d'être monté sur le couteau (12),
    et, en vue d'une fixation sur le logement de couteau (10), le couteau (12) est susceptible d'être préfixé sur le logement de couteau (10) au moyen du dispositif de manipulation (42).
