Definitions

  • the invention relates to a device for slicing food products, in particular meat, with a product feed, with which a product can be conveyed along a conveying direction and fed to a cutting plane, a cutting blade for slicing the product, wherein the cutting blade in the cutting plane, in particular rotating and / or circulating, and a product tray, in particular an endless conveyor belt, which is downstream of the cutting blade in the conveying direction and can fall on the separated by means of the cutting blade from the product slices.
  • the invention also relates to a method for slicing food products, in particular meat, in which a product is fed to a cutting plane of a slicing device and cut by a in the cutting plane, in particular rotating and / or rotating, moving cutting blade, wherein separated by means of the cutting blade from the product Slices fall on a product tray of the slicer.
  • Slicing devices of the type mentioned are known. These are also called slicers. With such slicing devices, fresh meat can also be sliced to produce, for example, schnitzel or chops. It is advantageous if each separated disc can be stored with high accuracy at a specific storage location on the product tray, as this is the further processing can simplify the disc. In addition, a portion with a specific laying pattern on the product tray can be formed from a plurality of successively deposited discs by relatively accurate placement of the discs particularly well.
  • the EP 0 868 982 A2 discloses a device according to the preamble of claim 1 and a method according to the preamble of claim 5.
  • the invention has for its object to improve in a slicer or a method of the type mentioned the deposition of separated slices, in particular of pieces of meat such as schnitzel or chops on the product shelf.
  • the product tray may be movable relative to a falling disc such that the impact of the disc on the product tray can be absorbed.
  • the invention is based on the idea not just to let the falling disc on a stationary product tray "hard”, but on a product tray, which moves in particular in the direction of movement of the disc with the falling disc.
  • the product tray is, so to speak, a "coincidental" tray on which the disc comes to rest only at a low relative speed and is then gradually stopped by the product tray.
  • the disc is thus comparable eg to a flying tennis ball, that of a tennis player by a clever, intuitive movement of the tennis racket is caught so that the tennis ball does not jump off the racket, ie the disc is intercepted by the product tray. It can thereby be achieved that a falling disc remains exactly as it reaches the product shelf.
  • the product tray is movable such that the disc can be slowed down by the product tray gradually, in particular after a predetermined speed curve, from its falling speed to zero speed.
  • the kinetic energy of the disc can be at least approximately completely dissipated via the product tray, and the pulse of the disc can be at least approximately completely transferred to the product tray, so that the disc can not slip, especially in a cleverly chosen speed curve.
  • slicing In known slicing normally takes place a weight-accurate slicing.
  • the weight and the geometric dimensions of the separated disc, in particular the slice thickness, are thus known or can be determined in a manner known per se.
  • the falling web of the falling disc can be determined.
  • the falling speed with which the disk comes to rest on the product tray can thus be calculated and the product tray can be moved in such a way that the disk hits the product tray only at a low relative speed for product placement.
  • the product tray and the disc lying thereon can then be braked gradually to zero speed. There is thus no abrupt braking of the disc more, which is achieved that the disc relative to the product tray no longer moving after it has come to this on the plant.
  • the trajectory of the falling disc can be calculated in a manner known per se so that the direction of movement which the disc has when it strikes the product tray can be determined.
  • the product tray can be moved in the direction of movement of the impinging disk, because the kinetic energy and the momentum of the disk can be transmitted particularly well to the product tray due to the same direction of movement of the disk and product tray.
  • the product storage can be moved from a starting position to an end position and back to the starting position, in particular by lowering and lifting.
  • the product tray can be lowered to catch the falling disc from the starting position to the end position and then raised back to the starting position.
  • the product tray can also be moved into an intermediate position, in particular for the removal of the disc.
  • the product deposit can be moved relative to a falling disc such that the impact of the disc is collected on the product tray.
  • the product tray is moved to catch the impact of the disc from an initial position to an end position, in particular lowered.
  • the falling disc can thus - after it has come to rest on the product tray - gradually decelerate from its falling speed to zero speed.
  • the product storage is preferably moved back to the starting position, in particular raised after the disc has been braked to zero speed.
  • the product tray is moved into an intermediate position, in particular for the removal of the disc.
  • the intermediate position is preferably on the travel path between the end position and the initial position.
  • the disc lying on the product tray is removed as a single disc.
  • a plurality of slices separated one after the other are deposited in a predetermined laying pattern on the product tray and then transported away together.
  • the laying pattern relates to the arrangement of each individual slice on the product tray and / or the arrangement of the individual discs relative to each other.
  • the discs can be stacked on the product tray, shingled or placed in any other storage format. It is particularly advantageous in the method according to the invention that each disc is intercepted by the product tray, so that each disc can not only impinge on the product tray at the respectively desired location, but also remains at this point. A particular laying pattern can therefore be realized with high accuracy.
  • the slicing device 1 shown comprises an inclined product feed 3 designed as an endless conveyor belt, on which a food product 5, such as fresh meat, can be conveyed along a conveying direction I running obliquely to the horizontal and fed to a cutting plane 7 downstream of the product feed 3 in the conveying direction I.
  • a food product 5 such as fresh meat
  • a cutting plane 7 downstream of the product feed 3 in the conveying direction I.
  • an unillustrated cutting blade in particular rotating and / or rotating, arranged to be movable.
  • the slicing device 1 also comprises a product tray 9 formed by a further endless conveyor belt, which is arranged downstream of the cutting plane 7 in the conveying direction I.
  • a separated from the product 5 by means of the cutting blade 11 falls along a trajectory II on the product tray 9.
  • the product tray 9 relative to the falling disc 11 such along a path III traversed that the impact of the disc 11 on the product tray 9 can be caught.
  • the disk 11 therefore does not encounter a stationary product tray 9, but it comes to rest on a moving product tray 9 and is then gradually stopped by it.
  • the falling web II and the falling speed of the disk 11 can be determined relatively accurately in a manner known per se, so that the direction of movement and the falling speed of the disk 11 can be predicted when hitting the product tray 9.
  • the product tray 9 can be considered as a "coincident" tray which, for example, is moved so that it moves only slightly slower than the disk 11 when it hits the product tray 9.
  • the lying on the product tray 9 disc 11 is then slowed down by the product tray 9 on the travel path III gradually from its falling speed to zero speed and thus collected gently.
  • the travel path III of the product tray 9 is further selected so that it extends in the direction of movement of the impinging disk 11. In this way, the kinetic energy and the momentum of the disc 11 are transmitted particularly well to the product tray 9, so that the disc 11 can be collected in an optimal manner.
  • the product tray 9 After the product tray 9 has been lowered from its upper starting position for intercepting the disc 11 in a lower end position, the product tray 9 is raised back to the starting position. The collected disc 11 is then transported further in a transport direction IV.
  • the disc 11 may alternatively be removed in the end position. As a further alternative, it may be provided that the product tray 9 is moved back to the starting position via an intermediate position from the end position and that the disk 11 is transported further in the intermediate position.
  • the disk 11 can initially also rest on the product tray 9, so that a portion of a plurality of slices 11 separated one after the other and deposited in a desired laying pattern can be formed on the product tray 9. The portions forming discs are then removed together.
  • the slicing device 1 has only one track, in which the product 5 of the cutting plane 7 can be supplied. In another embodiment according to the invention, however, two or even more tracks lying parallel next to one another may also be provided, wherein in each track a product 5 can be fed to the cutting plane 7. The supplied products 5 can then be cut parallel to each other. The respective separated at the same time slices 11 fall on the product tray 9 and are collected in the appropriate manner by the product tray 9, as described above with respect to the slicer 1.
  • each track is associated with a separate movable product tray 9, so that the separated slices 11 can be collected by the respective product tray 9 track individual.
