Description

  • Die Erfindung betrifft Ess- und/oder Servierbestecke aus einem Stahlwerkstoff, der aus einem ferritischen Kern mit einer im Wesentlichen martensitischen Randschicht gebildet ist. Bei dem Ess- und/oder Servierbesteck der Erfindung ist dabei die Oberflächenhärte der Randschicht, bestimmt nach der Härteprüfung nach Vickers HV3, um 30 bis 300 % größer als die kleinste Härte des Kerns, gemessen ebenso nach Vickers HV 3.
  • Üblicherweise wird bei Ess- und/oder Servierbesteck, insbesondere bei Messern, zur Verbesserung der Schneidtähigkeit und der Schneidhaltigkeit der Grundwerkstoff der Klinge, der meistens aus Stahl besteht, durch eine Wärmebehandlung gehärtet. Die Art und Weise der Wärmebehandlung hängt dabei auch von dem eingesetzten Stahl ab, d.h. ob ein niedriglegierter Stahl oder ein hochlegierter Stahl, verwendet wird.
  • Als Wärmebehandlungsverfahren kommen dabei grundsätzlich die klassischen Verfahren in Frage, wie z.B. eine Temperaturbehandlung in einem Ofen. Die Härtetemperatur, die für derartige Prozesse eingesetzt werden muss, hängt dabei von der Stahlsorte ab und kann über 1000 °C liegen.
  • Im Stand der Technik sind weiterhin auch schon Härteverfahren bekannt geworden, bei denen mittels Laserstrahl und/oder Elektronenstrahl eine Härtung durchgeführt wird.
  • Es hat sich aber nun in der Praxis gezeigt, dass diese Wärmebehandlungsverfahren und/oder die anderen vorstehend genannten Härtungsverfahren in Bezug auf Ess- und/oder Servierbestecke nicht immer zu befriedigenden Ergebnissen führen. Der Hauptgrund ist darin zu sehen, dass durch die vorstehend genannten Härtungsverfahren in der Regel eine vollständige Durchhärtung des Stahlwerkstoffes erreicht wird, wobei dann aber die insgesamt für Ess- und/oder Servierbestecke geforderte Brauchbarkeit in der Weise leidet, dass die einzelnen Teile, z.B. ein Messer oder eine Gabel, insbesondere in ihren elastischen Eigenschaften beeinträchtigt sind. Es hat sich weiterhin gezeigt, dass auch in vielen Fällen die Oberflächenhärte, die dadurch erzielt werden kann, nicht genügend ist, um ein Verkratzen der Ess- und/oder Servierbestecke bei ständigem Gebrauch zu verhindern. Auch wurden in einigen Fällen Anrostungen der Oberfläche festgestellt.
  • Ein Härtungsverfahren eines martensitischen Stahls (AISI 410) ist aus Corrosion Science 48 (2006) 2036-2049 von C. X. Li et al. bekannt. Weiterhin ist es aus Davis et al., ASM Handbook, Volume 4, Heating Treating 1991, ASM International US bekannt, auch Stähle des Types AISI 430 und 460 bei Temperaturen bis maximal 595 °C zu nitrieren.
  • Aus Dokument JP-57098674 ist ein Essbesteck aus ferritischem Edelstahl mit einer karburisierten Oberfläche bekannt.
  • Es besteht deshalb ein großes Bedürfnis, Ess- und/oder Servierbestecke noch dahingehend zu verbessern, dass auch für den Dauergebrauch eine hohe Elastizität vorliegt, bei gleichzeitig ausgezeichneter Oberflächenbeschaffenheit in Bezug auf Kratzbeständigkeit und Korrosionsbeständigkeit.
  • Ausgehend hiervon ist es Aufgabe der vorliegenden Erfindung, Ess- und/oder Servierbestecke anzugeben, die in ihrer Elastizität, dem Stand der Technik überlegen sind und die gleichzeitig eine so hohe Oberflächenhärte und eine Oberflächenbeschaffenheit aufweisen, dass ein Verkratzen weitgehend vermieden wird und eine Korrosionsbeständigkeit auch im Dauergebrauch erreicht wird.
  • Diese Aufgabe wird durch die kennzeichnenden Merkmale des Patentanspruchs 1 gelöst. Die Unteransprüche zeigen vorteilhafte Weiterbildungen auf.
  • Erfindungsgemäß wird somit vorgeschlagen, dass für die Ess- und/oder Servierbestecke der Erfindung ein Stahlwerkstoff verwendet wird, der aus einem ferritischen Kern mit einer im Wesentlichen martensitischen Randschicht besteht. Die Randschicht kann dabei ein- oder mehrseitig oder den Kern ummantelnd ausgebildet sein. Die Erfindung schließt dabei auch Ausführungsformen mit ein, bei denen die Randschicht noch einen geringen Anteil, in Abhängigkeit vom eingelagerten C- und N-Gehalt des Stahlwerkstoffs an Restaustenit aufweist. Wesentlich für die Erfindung ist, dass zwischen der Oberflächenhärte der Randschicht und der kleinsten Härte des Kerns ein Härteunterschied, gemessen nach Vickers HV 3, um mindestens 30 bis 300 % besteht. Die erfindungsgemäßen Ess- und/oder Servierbestecke zeichnen sich weiterhin dadurch aus, dass sie unabhängig von dem vorstehend genannten Härteunterschied auch einen Unterschied in Bezug auf den E-Modul zwischen der martensitischen Randschicht und dem Kern des Werkstoffs besitzen. Erfindungsgemäß weist die martensitischen Randschicht ein E-Modul, gemessen in kN/mm2 auf, das um 1 bis 100 % größer ist als der E-Modul des Kernwerkstoffes.
  • Es hat sich nun gezeigt, dass Ess- und/oder Servierbestecke, die die vorstehend genannten Bedingungen erfüllen, die Aufgabenstellung gemäß der vorliegenden Erfindung lösen. Dies ist offensichtlich darauf zurückzuführen, dass gemäß der Erfindung der Kern relativ elastisch belassen wird, d.h. aus einem ferritischen Werkstoff gebildet ist, der die an und für sich innewohnenden Eigenschaften des unbehandelten Stahlwerkstoffes beibehält und dass dann lediglich die Randschicht so ausgebildet ist, dass hier ein Härteunterschied bzw. ein Unterschied des E-Moduls, wie vorstehend beschrieben, eingestellt wird. In Versuchen konnte die Anmelderin dabei zeigen, dass nicht nur eine sehr hohe Elastizität der erfindungsgemäßen Ess- und/oder Servierbestecke vorliegt, sondern dass auch ein Verkratzen der Oberfläche weitgehend vermieden werden kann.
  • Bei den erfindungsgemäßen Ess- und/oder Servierbestecken ist es dabei bevorzugt, wenn der Härteunterschied zwischen der Oberflächenhärte der Randschicht zur kleinsten Härte des Kerns 80 bis 250 %, bevorzugt 100 bis 250 % beträgt. Bevorzugt kann dabei die Oberflächenhärte der martensitischen Randschicht im Bereich von 320 bis 650 HV 3 und die kleinste Härte des Kerns im Bereich von 160 bis 260 HV 3 liegen. In Bezug auf die Härteprüfung nach Vickers wird auf die bekannten Normen nach DIN EN ISO 6507 verwiesen.
  • Für den E-Modul ist es besonders günstig, wenn hier zwischen der martensitischen Randschicht und dem Werkstoffkern ein E-Modul vorliegt, mit der Maßgabe, dass der E-Modul in der Randschicht um 1 bis 50 % größer ist als derjenige des Kerns. Die Bestimmung des E-Moduls in kN/mm2 erfolgte dabei bei 20 °C.
  • Erfindungsgemäß ist die Randschicht der Ess- und Servierbestecke der Erfindung durch eine Einhärtungstiefe (EHT) definiert, die von der kleinsten Härte des Kerns, gemessen nach HV 3 + 30 % bis zur Oberfläche der Randschicht führt. Bei der vorliegenden Erfindung kann dabei die Einhärtungstiefe (EHT) im Bereich von 0,005 mm bis 1,0 mm, bevorzugt 0,01 mm bis 0,4 mm und besonders bevorzugt im Bereich von 0,01 bis 0,3 mm liegen.
  • Ein weiteres Kennzeichen der erfindungsgemäßen Randschicht ist es, dass die Härte und auch das E-Modul innerhalb der martensitischen Randschicht ausgehend von der Oberfläche in Richtung des Kerns wie vorstehend definiert abnimmt. Die Abnahme der Härte bzw. des E-Moduls kann dabei kontinuierlich und/oder auch gradientenweise erfolgen. Der größte Beitrag zur Abnahme der Härte bzw, des E-Moduls liegt dabei im oberflächennahen Bereich der Randschicht selbst.
  • Bei den erfindungsgemäßen Ess- und Servierbestecken ist es weiterhin bevorzugt, wenn die Oberfläche der martensitischen Randschicht aufgeraut und/oder mattiert ist, Die Oberflächenrauhigkeit kann dabei im Bereich von 1,5 µm bis 4,0 µm liegen. Bevorzugt sind Rauhigkeiten von 1,9 µm bis 2,8 µm (Scotch-Band) oder 1,7 µm bis 2,1 µm (gebürstet), Polierte Oberflächen hingegen weisen eine Rauhigkeit von 0,8 µm bis 1,3 µm auf.
  • Es hat sich hierbei gezeigt, dass selbst bei den mattiert vorliegenden Ess- und/oder Servierbesteck durch lang andauernden Gebrauch, auch z,B. in Spülmaschinen, eine Beschädigung der Oberfläche durch Kratzer vermindert wird. Dies wird auf die wie vorstehend schon beschriebene Ausbildung der martensitischen Randschicht in Kombination mit dem flexiblen bzw. elastischen Kern zurückgeführt.
  • Aus stofflicher Sicht können bei den erfindungsgemäßen Ess- und Servierbestecken im Prinzip alle ferritischen Stähle verwendet werden.
  • Beispiele für ferritische Stähle sind: 1.4000, 1.4016 und 1.4024. Bevorzugt ist dabei der Stahl 1.4016. Ein wesentlicher Vorteil des erfindungsgemäßen Ess- und Servierbestecks besteht nun darin, dass ein Stahl ausgewählt werden kann, der eine relativ niedrige Härte und damit eine Hohe Elastizität aufweist und dass dann nachfolgend durch das untenstehend beschriebene Behandlungsverfahren die martensitische Randschicht ausgebildet wird. Durch die martensitische Randschicht resultiert dann eine deutliche Härtesteigerung, unter Beibehaltung des elastischen Kerns, womit dann überlegene Eigenschaften in Bezug auf Kratz- und Korrosionsbeständigkeit erreicht werden.
  • Es hat sich weiterhin gezeigt, dass die Oberfläche der Randschicht eine Gefügeausbildung aufweist, die sich durch eine höhere Korngröße im Vergleich zu unbehandelten Stählen auszeichnet, wie auch dadurch, dass keine Chrom-Karbidausscheidungen an den Korngrenzen vorliegen.
  • Die Erfindung umfasst in Bezug auf das Ess- und Servierbesteck grundsätzlich alle entsprechenden Gegenstände, die dem Fachmann bekannt sind. Beispiele sind dabei Messer, Löffel, Gabel, Gebäck- und Kuchenheber, Schöpfer, Zangen und Vorleger.
  • Die Ausbildung der martensitischen Randschicht kann bei den erfindungsgemäßen Ess- und Servierbestecken durch eine Wärmebehandlung, bevorzugt durch ein sog. "Aufsticken" erfolgen, Das Aufsticken von Stahlwerkstoffen ist an und für sich im Stand der Technik bekannt und wird z.B. in der EP 0 652 300 A1 oder auch in der DE 40 33 706 beschrieben.
  • Beim Randaufsticken wird dabei so vorgegangen, dass der Stahlwerkstoff bei einer Temperatur zwischen 1000 °C und 1200 °C in einer stickstoffhaltigen Gasatmosphäre und nachfolgender Abkühlung behandelt wird.
  • Es hat sich nun überraschenderweise gezeigt, dass ein derartiges Verfahren (das z.B. im Stand der Technik auch unter der Bezeichnung "SolNit-Verfahren" bekannt ist) in Bezug auf Ess- und Servierbestecke zu überlegenen Eigenschaften führt. Wesentlich ist dabei, wie bereits vorstehend dargelegt, dass bei den Ess- und Servierbestecken der Erfindung die vorstehend genannten Bedingungen eingehalten werden.
  • Die Erfindung wird nachfolgend anhand der Figuren 1a und 1b näher erläutert, ohne den Gegenstand der Erfindung hierauf zu beschränken.
  • Die Figur 1 zeigt sowohl den Härteverlauf nach einer Wärmebehandlung am Beispiel der Stahlsorte 1.4016 in Form einer graphischen Darstellung sowie in Figur 1b einen Querschliff in der Vergrößerung 50:1.
  • Im Beispielsfall nach der Figur 1 wurde ein Tafellöffel der Firma WMF aus der Stahlsorte 1.4016 bei Temperaturen von über 1050 °C mit Stickstoff aufgestickt und abgeschreckt bzw. tiefgekühlt und angelassen. Der Werkstoff 1,4016, X7 Chrom 17 ist ein ferritischer Stahl mit 0,06 bis 0,1 % Kohlenstoff, Durch das Einlagern von Stickstoff kommt es zu Verspannungen im Gitter, es entsteht beim Abschrecken Martensit, der wie aus Figur 1b zu ersehen zum Kern hin entsprechend der Einlagerungen abnimmt.
  • Wie aus Figur 1a hervorgeht, weist der Tafellöffel eine Oberflächenhärte von 594 HV 3 auf. Die Einhärtungstiefe betrug im Beispielsfall 106 µm. Die Berechnung der Einhärtungstiefe wird erfindungsgemäß so durchgeführt, dass von der geringsten Härte des Kerns ebenfalls gemessen in HV 3 + 30 % ausgegangen wird. Im Beispielsfall ist somit der Ausgangswert 240 HV 3.
  • Figur 1b zeigt sehr anschaulich die Gefügeausbildung, aus der die martensitische Randschicht zu erkennen ist und der im Wesentlichen ferritische Kern, Die behandelte Oberfläche weist dabei einen mittleren Korndurchmesser von 28 bis 40 µm gemessen nach dem Durchschnittsmesserverfahren auf. Der Korndurchmesser des behandelten Teils liegt im Kern bei 15 bis 20 µm und der des unbehandelten Ausgangsmaterials bei 10 bis 14 µm linear.
  • Überraschenderweise wurde nun festgestellt, dass ein Ess- und/oder Servierbesteck mit der vorstehend beschriebenen Oberflächenausbildung überlegene Korrosionsbeständigkeiten und Kratzbeständigkeiten aufweist.

Claims (15)

  1. Ess- und/oder Servierbesteck aus einem ferritischen Stahlwerkstoff, mit einer durch eine Wärmebehandlung unter Aufstickung und nachfolgender Abkühlung gebildeten Randschicht, die im Wesentlichen martensitisch ist, mit der Maßgabe, dass die Oberflächenhärte der Randschicht, bestimmt nach der Härteprüfung nach Vickers HV3 (DIN ISO EN 6507), um 30 bis 300 % größer ist als die kleinste Härte des ferritischen Kerns gemessen nach HV 3.
  2. Ess- und/oder Servierbesteck nach Anspruch 1, dadurch gekennzeichnet, dass der Härteunterschied zwischen der Oberflächenhärte der Randschicht zur kleinsten Härte des Kerns 80 bis 250 %, bevorzugt 100 bis 250 %, ist.
  3. Ess- und/oder Servierbesteck nach Anspruch 2, dadurch gekennzeichnet, dass die Oberflächenhärte der Randschicht im Bereich von 320 bis 650 HV 3 und die kleinste Härte des Kerns im Bereich von 160 bis 260 HV 3 liegt.
  4. Ess- und/oder Servierbesteck nach mindestens einem der Ansprüche 1 bis 3, dadurch gekennzeichnet, dass die Randschicht durch eine Einhärtungstiefe (EHT) definiert ist, die von der kleinsten Härte des Kerns, gemessen nach HV 3 + 30 %, bis zur Oberfläche der Randschicht führt.
  5. Ess- und/oder Servierbesteck nach Anspruch 4, dadurch gekennzeichnet, dass die EHT im Bereich von 0,005 mm bis 1,00 mm, bevorzugt 0,01 mm bis 0,4 mm, besonders bevorzugt 0,01 bis 0,3 mm liegt.
  6. Ess- und/oder Servierbesteck nach einem der Ansprüche 1 bis 5, dadurch gekennzeichnet, dass die martensitische Randschicht ein E-Modul in kN/mm2 aufweist, das um 1 bis 100 % größer ist als der E-Modul in kN/mm2 des Werkstoffkerns.
  7. Ess- und/oder Servierbesteck nach Anspruch 4, dadurch gekennzeichnet, dass der E-Modul der martensitischen Randschicht um 1 bis 50 % größer ist als der E-Modul des Kerns.
  8. Ess- und/oder Servierbesteck nach mindestens einem der Ansprüche 1 bis 7, dadurch gekennzeichnet, dass innerhalb der martensitischen Randschicht ausgehend von der Oberfläche die Härte und/oder das E-Modul zum Kern hin abnimmt.
  9. Ess- und/oder Servierbesteck nach mindestens einem der Ansprüche 1 bis 8, dadurch gekennzeichnet, dass die Oberfläche der martensitischen Randschicht aufgeraut und/oder mattiert ist.
  10. Ess- und/oder Servierbesteck nach Anspruch 9, dadurch gekennzeichnet, dass die Oberflächenrauhigkeit im Bereich von 1,5 µm bis 4,0 µm, gemessen nach DIN ISO EN 4287, liegt.
  11. Ess- und/oder Servierbesteck nach Anspruch 10, dadurch gekennzeichnet, dass der Stahlwerkstoff ausgewählt ist aus 1.4016, 1.4400 und 1.4024.
  12. Ess- und/oder Servierbesteck nach mindestens einem der Ansprüche 1 bis 11, dadurch gekennzeichnet, dass die Oberfläche der martensitischen Randschicht keine Chrom-Karbidausscheidungen an der Korngrenze aufweist.
  13. Ess- und/oder Servierbesteck nach mindestens einem der Ansprüche 1 bis 12, dadurch gekennzeichnet, dass die Oberfläche der martensitischen Randschicht eine höhere Korngröße aufweist im Vergleich zu einer ungehärteten Oberfläche.
  14. Ess- und/oder Servierbesteck nach mindestens einem der Ansprüche 1 bis 13, dadurch gekennzeichnet, dass die martensitische Randschicht durch eine Wärmebehandlung erhalten worden ist.
  15. Ess- und/oder Servierbesteck nach mindestens einem der Ansprüche 1 bis 14, dadurch gekennzeichnet, dass es ein Messer, eine Gabel oder ein Löffel ist.
