Claims (12)
- An apparatus, in particular a high-performance slicer, for slicing food products such as sausage, cheese, ham and the like, having a product feed which feeds a product to be sliced to a cutting plane (11) in which a cutting blade adjacent to a cutting edge (13, 15) forming the end of the product feed moves, in particular in a revolving manner, wherein an end region (17, 19) of the product feed including the cutting edge (13, 15) is provided with means (21, 23) which excite at least one product-feeding support and/or contact surface (25, 27) of the end region (17, 19) to oscillations,
characterised in that
a main oscillation direction extends substantially perpendicular to the support and/or contact surface (25, 27). - An apparatus in accordance with claim 1, characterised in that the end region (17, 19) includes a horizontal support surface (25) for the product to be sliced with a horizontal cutting edge (13) for which exactly one oscillation source (21) is provided.
- An apparatus in accordance with any one of the preceding claims, characterised in that the end region (17, 19) includes a vertical support surface (27) for the product to be sliced with a vertical cutting edge (15) for which exactly one oscillation source (23) is provided.
- An apparatus in accordance with any one of the preceding claims, characterised in that the oscillation source (21, 23) is an ultrasound source.
- An apparatus in accordance with any one of the preceding claims, characterised in that the oscillation source includes at least one piezo-element as an oscillation exciter.
- An apparatus in accordance with any one of the preceding claims, characterised in that the oscillation source includes an oscillation mechanism in particular electrically or pneumatically driven.
- An apparatus in accordance with any one of the preceding claims, characterised in that the support and/or contact surface (25, 27) is formed at a separate end piece (17, 19) of the product feed which fixes the cutting edge (13, 15) and which is coupled to at least one oscillation source (21, 33) which sets the end piece (17, 19) as a whole into oscillation.
- An apparatus in accordance with any one of the preceding claims, characterised in that the end piece (17, 19) is formed in right-angle form and in particular in parallelepiped form.
- An apparatus in accordance with any one of the claims 1 to 7, characterised in that the end piece is made in the manner of a moulded tray surrounding the product to be sliced in full or in part.
- An apparatus in accordance with any one of the claims 1 to 8, characterised in that the end region is formed by two separate end pieces (17, 19) whose product-feeding surfaces (25, 27) and cutting edges (13, 15 are arranged at right angles to one another and which can each be set into oscillations by exactly one oscillation source (21,23).
- A method of slicing food products such as sausage, cheese, ham and the like by means of a cutting apparatus, in particular a high-performance slicer,
wherein a product to be sliced is fed to a cutting plane (11) in which a cutting blade adjacent to a cutting edge (13, 15) forming the end of the product feed is moved, in particular in a revolving manner,
characterised in that
an end region (17, 19) of a product feed including the cutting edge (13, 15), in particular at least one product-feeding support and/or contact surface (25, 27) is excited to oscillations, with a main oscillation direction extending substantially perpendicular to the support and/or contact surface (25, 27). - A method in accordance with claim 11, characterised in that an apparatus having the features of any one of the claims 1 to 10 is used.
