Die vorliegende Erfindung betrifft Hartkaramellen sowie Hartkaramellmassen, welche zu einem überwiegenden Anteil Isomaltulose, das heißt Palatinose™, enthalten, Verfahren zu deren Herstellung sowie die Verwendung von Isomaltulose als Bestandteil einer Hartkaramelle.
Bekannte Hartkaramellen enthalten als Bestandteile in der Regel Saccharide wie Saccharose, Glucose, aber auch Malzsirup, Fructo- se, Isomaltose, Meso-Erythrit oder hydrierte Isomaltulose, das heißt ein Gemisch aus 6-O-α-D-Glucopyranosyl-D-Sorbit (1 ,6-GPS) und dem stereoisomeren 1-O-α-D-Glucopyranosyl-D-Mannit (1 ,1-GPM) sowie gegebenenfalls Trehalulose. Dabei gewinnen Karamellen ohne Zucker wie Saccharose oder Glucose und mit zahnschonenden oder energiearmen Inhaltsstoffen immer mehr an Bedeutung. Zahnschonende Zucker sind durch die Mikroorganismen der Mundflora nicht als Substrat nutzbar; es entstehen keine Säuren, die den Zahnschmelz zerstören können. Es besteht auch ein hoher Bedarf an „energiearmen" Hartkaramellen, die aus Bestandteilen aufgebaut sind, die gar keine oder nur einen geringen Anteil an für den Körper verwertbarer Energie liefern, gleichzeitig aber technologisch erwünschte Eigenschaften besitzen (sogenannte Füllstoffe oder „Bulk- Substanzen").
Hartkaramellen enthalten die vorgenannten Saccharide im Wesentli- chen in amorpher Form, also in nicht kristalliner Form. Ein wesentlicher Aspekt bei der Lagerung von Hartkaramellen ist die Vermei-
dung der Rekristallisation, wobei sich, rekristallisierte Bereiche besonders auf der Oberfläche der Hartkaramellen bilden beziehungsweise Trübungen in den Hartkaramellen auftreten. Bei der Lagerung tritt oft eine unerwünschte Aufnahme von Wasser aus der Umge- bung auf. Solche Erscheinungen sind unerwünscht, da sie sowohl die Verkaufsfähigkeit der Karamellen als auch die Sensorik bei der Verkostung nachteilig beeinflussen können.
Die DE 195 32 396 C2 offenbart zahnschonende, energiearme Hartkaramellen, die ein 1 ,6-GPS oder 1 ,1-GPM-angereichertes Gemisch enthalten. Unter einem 1 ,1-GPM-angereicherten Gemisch wird ein Gemisch aus 1 ,6-GPS und 1 ,1-GPM verstanden, welches ein Verhältnis von 1/99 Gew.-% bis 43/57 Gew.-% 1 ,6-GPS/1 ,1-GPM aufweist, das heißt 57 bis 99 Gew.-% 1 ,1-GPM enthält. Die konkret offenbarten Hartkaramellen weisen einen 1 ,1-GPM-Gehalt von 85 Gew.-% auf. Solche Hartkaramellen neigen bei längerer Lagerung zur Rekristallisation.
Die EP 1 217 898 B1 offenbart zahnschonende, energiearme Hartkaramellen mit einem 1 ,1-GPM-Gehalt von 52 bis 60 Gew.-% sowie einem Sorbit-Gehalt von 0,5 bis 3,5 Gew.-%. Solche Hartkaramellen zeichnen sich besonders durch verbesserte Lagerstabilität, das heißt verminderte Rekristallisationsneigung und/oder verminderte Wasseraufnahme, aus. Als nachteilig erweist sich jedoch, dass in den vorgenannten Hartkaramellen besonders durch das Einstellen eines bestimmten 1 ,1-GPM-Gehaltes, die Oberfläche der Hartkaramellen rauer ist und vom Konsumenten als nicht-attraktiv empfunden wird. Genauso sensorisch unattraktiv sind Hartkaramellen, die eine übermäßig glatte Oberfläche aufweisen. Als unattraktiv für den Konsumenten erweist sich ferner die Beobachtung, dass Hartkaramellen,
die 1 ,1 -GPM enthalten, beim Auflösen im Mundraum, das heißt während des Verzehrs, zu einem Gefühl des Entstehens oder Ausbil- dens von Rauigkeit, wohl aufgrund von Rekristallisierung des 1 ,1- GPM, neigen.
Darüber hinaus weist eine Reihe bekannter, insbesondere zahnschonender oder energiearmer, Hartkaramellen Bestandteile mit negativer Lösungswärme auf. Dadurch wird beim Verkosten ein „Kühleffekt" erzeugt, der bei einigen Produkten wie Bonbons mit Pfefferminz- oder Mentholaroma durchaus erwünscht sein kann. Bei ande- ren Produkten, beispielsweise mit Schokoladen-, Vanille oder Karamellaroma, sind solche Effekte allerdings teilweise unerwünscht und können zu Ablehnung durch den Konsumenten führen.
Die EP 1 217 898 B1 lehrt, die Lagerstabilität von Hartkaramellen dadurch zu verbessern, dass die Hartkaramellen mindestens eine Säure enthalten. Dieser Lösungsweg lässt sich jedoch nur beschreiben, wenn Hartkaramellen erhalten werden sollen, die selbst einen säuerlichen Geschmack aufweisen oder, im Falle von gepufferten Säuren, der Geschmack der gepufferten Säuren toleriert werden kann. Es besteht jedoch auch ein Bedarf an Hartkaramellen, die eine möglichst hohe Lagerstabilität aufweisen und gleichzeitig keine Säure enthalten, beispielsweise besondere Rezepturen mit basischen Bestandteilen, wie basischen Salzen und/oder mit Bestandteilen, die nicht säurestabil sind.
Es besteht daher nach wie vor ein Bedarf an, insbesondere zahn- schonenden beziehungsweise energiearmen, Hartkaramellen, die bei möglichst hoher Lagerstabilität, auch unter klimatisch ungünstigen Bedingungen, zum Beispiel hoher Luftfeuchtigkeit und hoher
Umgebungstemperatur, vom Konsumenten nicht nur optisch sondern auch sensorisch als attraktiv empfunden werden, das heißt insbesondere kein oder nur geringes Auskristallisieren der enthaltenen Komponenten aufzeigen, eine nur geringe Rauigkeit beziehungswei- se, vorzugsweise überhaupt keine Rauigkeit auf ihrer Oberfläche, verspüren lassen und/oder den teilweise unerwünschten „Kühleffekt" vermeiden. Besonders soll damit zumindest eine gleichbleibende oder verbesserte sensorische Attraktivität und/oder verbessertes organoleptisches Empfinden verbunden sein. Weiter sollen die Hartka- rameilen besonders auch dann eine zumindest gleich bleibende oder verbesserte Lagerstabilität aufweisen, wenn sie keine Säure (Genusssäure) als weiteren Bestandteil enthalten.
Das der vorliegenden Erfindung zugrunde liegende technische Problem besteht darin, derart verbesserte Hartkaramellen sowie Verfah- ren und Mittel zu deren Herstellung bereitzustellen.
Die Lösung dieses technischen Problems wird im Wesentlichen erreicht durch die Bereitstellung einer Hartkaramelle, die Isomaltulose mit einem Anteil von 60 bis 100 Gew.-%, bevorzugt von 80 bis 98 Gew.-%, aufweist.
Im Zusammenhang mit der Erfindung sind Gew.-%-Angaben immer bezogen auf die Gesamttrockensubstanz der Hartkaramelle, falls sich nichts anderes ergibt.
Isomaltulose ist ein Zucker, der auch unter der Marke Palatinose™, bekannt ist. Chemisch ist Isomaltulose alpha-1 ,6 glycosidisch ver- knüpfte Glucose und Fructose: 6-O-α-D-Glukopyranosyl-D-Fructose. Isomaltulose ist ein, in geringen Mengen auch natürlich vorkommendes, Isomer der Saccharose, das technisch in der Regel durch en-
zymatische Umsetzung aus Saccharose erhalten werden kann. Die Süßkraft beträgt nur etwa 40% der Saccharose. Isomaltulose enthält weniger Kalorien als Saccharose und wirkt nicht kariogen (d.h. Karies auslösend). Der Grund hierfür ist, dass die Bakterien der Mund- flora Isomaltulose nicht in zahnschädigende Säuren umsetzen können. Darüber hinaus verhindert Isomaltulose eine Adhäsion Plaque bildender Bakterien an den Zähne und verhindert dadurch auch die Bildung von Belägen und Zahnstein.
Die Erfindung stellt also die technische Lehre bereit, dass eine be- sonders lagerstabile und bevorzugt sensorisch besonders attraktive sowie bevorzugt im Wesentlichen säurefreie Hartkaramelle bereitgestellt werden kann, wenn die Hartkaramelle Isomaltulose in einem Gehalt von mehr als 50 Gew.-%, erfindungsgemäß von 60 bis 100 Gew.-%, bevorzugt von 80 bis 98 Gew.-%, aufweist. Die Erfindung bereichert den Stand der Technik dadurch, aufgezeigt zu haben, dass ein Anteil von 60 bis 100 Gew.-%, bevorzugt von 80 bis 98 Gew.-%, an Isomaltulose zu besonders vorteilhaften Hartkaramellen führt.
Ein bevorzugter Gegenstand der Erfindung sind aber auch Hartka- rameilen mit einem bestimmten Isomaltulose-Gehalt; dieser wird je nach Anwendungsgebiet und den gewünschten Vorteilen gewählt. Er beträgt vorzugsweise mehr als: 60, 65, 70, 75, 80, 85, 90, 95, 98 beziehungsweise 99 Gew.-%.
Ein weiterer Gegenstand der Erfindung ist auch eine Schmelze oder Hartkaramellmasse, bevorzugt zur Herstellung der erfindungsgemäßen Hartkaramellen. Bevorzugt enthält diese Schmelze oder Hartkaramellmasse Isomaltulose in einem Anteil wie in der erfindungsge-
mäßen Hartkaramelle selbst, also bevorzugt von 60 bis 100 Gew.-%, besonders bevorzugt von 80 bis 98 Gew.-%. Weitere zweckmäßige Isomaltuloseanteile in der Rezeptur können je nach Anwendungsgebiet gewählt werden, besonders mehr als: 60, 65, 70, 75, 80, 85, 90 beziehungsweise 95 Gew.-%.
In einer bevorzugten Ausführungsform ist die Hartkaramelle beziehungsweise die Schmelze frei, beziehungsweise im Wesentlichen frei von Säure. Das heißt, sie weist freie Säuren und/oder saure Salze von Säuren in jeweils so geringen Anteilen auf, dass der Fach- mann darunter keine säurehaltige Hartkaramelle mehr versteht. Bevorzugt weist die erfindungsgemäße Hartkaramelle weniger als: 5%, 4%, 3%, 2%, 1%, 0,5%, 0,1 %, 0,05%, 0,01% Säure und/oder saure Salze auf.
In einer weiteren bevorzugten Ausführungsform ist die Hartkaramelle oder Schmelze im Wesentlichen frei von Fett. In einer weiteren Ausführungsform ist die erfindungsgemäße Hartkaramelle im Wesentlichen frei von Öl. In beiden Fällen ist also der Anteil an Fett und/oder Öl in der erfindungsgemäßen Hartkaramelle so gering, dass der Fachmann nicht von einer Fett- und/oder Öl-haltigen Hartkaramelle ausgeht. Bevorzugt weist die erfindungsgemäße Hartkaramelle weniger als: 5%, 4%, 3%, 2%, 1%, 0,5%, 0,1 %, 0,05%, 0,01 % Fett und/oder Öl oder Fett- und/oder Öl-haltige Bestandteile auf.
Die erfindungsgemäßen Hartkaramellen zeichnen sich überraschenderweise auch durch eine besonders geringe Wasseraufnahme bei der Lagerung aus. Sie zeigen eine wesentlich geringere Neigung zur Rekristallisation, besonders auch dann, wenn der Wassergehalt in der Karamelle hoch ist, das heißt mehr als 2%, bevorzugt mehr als
3%, aufweist. Ihre Lagerfähigkeit ist dadurch erheblich verbessert. Damit ist es gelungen, dass - bei gleicher oder verbesserter La- gerstäbilität - der Wasseranteil in den erfindungsgemäßen Hartkaramellen höher ausfallen kann als bei bekannten Hartkaramellen. Die Erfinder fanden überraschend, dass besonders bei säurefreien Hartkaramellen die Lagerstabilität erheblich verbessert werden konnte.
In einer besonders bevorzugten Ausführungsform weist die erfindungsgemäße Hartkaramelle oder Schmelze einen Wassergehalt unmittelbar nach der Herstellung (Ausgangswassergehalt) von größer oder gleich 2%, bevorzugt von größer oder gleich 3% auf.
Durch diesen überraschenden Effekt ist es vorteilhafterweise auch möglich, die Hitzeeinwirkung, die bei der Herstellung der Hartkaramellen zur Reduktion des Wassergehalts in der Hartkaramellmasse notwendig ist, zu reduzieren. Gemäß der Erfindung kann der Wassergehalt in den erfindungsgemäßen Hartkaramellen höher liegen als in bekannten lagerstabilen Hartkaramellen. Dadurch wird es auch möglich, bei der Herstellung der Hartkaramellen Bestandteile zu verwenden, die besonders hitzeempfindlich sind. In einer besonders bevorzugten Ausführungsform enthalten die erfindungsgemäßen
Hartkaramellen daher Bestandteile, deren Verarbeitung aufgrund der hohen Temperaturen bei der Herstellung bekannter lagerstabiler Hartkaramellen bislang nicht verwendet werden konnten.
Im Zusammenhang mit der vorliegenden Erfindung wird unter einer Hartkaramelle ein im Wesentlichen amorphes, glasartiges Produkt verstanden, welches herstellbar ist, indem man einer wässrigen Lösung oder Suspension eines Süßungsmittels, wie zum Beispiel ei-
nem Zuckeraustauschstoff, durch Verdampfung Wasser entzieht, sodass die Lösung oder Suspension des Zuckeraustauschstoffes aufkonzentriert wird und dieses Konzentrat in eine beliebige Form bringt, zum Beispiel gießt oder prägt. Hartkaramellen gemäß der Er- findung können auch durch Schmelzextrusion eines trockenen Su- ßungsmittelgemisches hergestellt werden. Selbstverständlich können der Hartkaramelle, die, sofern sie neben körpergebendem Zucker oder Süßungsmittel keine weiteren Zutaten enthält, auch als Glaskörper oder Hartkaramellmasse bezeichnet wird, bei ihrer Herstel- lung weitere Bestandteile wie Aromen, Farbstoffe, Intensiv-Süßstoffe oder ähnliches zugefügt werden.
In einer besonderen Ausführungsform weist die erfindungsgemäße Hartkaramelle beziehungsweise Hartkaramellmasse als einzigen und alleinig vorkommenden Austauschstoff für kariogene Zucker und/oder als einzigen und alleinig vorkommenden Zucker Isomaltu- lose auf. In einer weiteren bevorzugten Ausführungsform weist die erfindungsgemäße Hartkaramelle beziehungsweise Hartkaramellmasse Isomaltulose als einziges und alleinig vorkommendes körpergebendes süßendes Agens, insbesondere als einziges und alleinig vorkommendes süßendes Agens, auf. Im Zusammenhang mit der vorliegenden Erfindung werden unter dem Begriff "süßendes Agens" Substanzen verstanden, die Süßkraft aufweisen und zum Beispiel Lebensmitteln oder Getränken zugesetzt werden, um einen Süßegeschmack hervorzurufen. Im Zusammenhang mit der vorliegenden Erfindung werden die "süßenden Agenzien" unterteilt in "Zucker" wie Saccharose, Glucose oder Fructose, die Körper und Süßkraft geben sowie "Süßungsmittel", also Stoffe, die keine Zucker sind, aber trotzdem Süßkraft aufweisen, wobei letztere wiederum untergliedert werden in "Zuckeraustauschstoffe", also süßende Agenzien,
die einen Körper und einen physiologischen Brennwert zusätzlich zu einer Süßkraft aufweisen (körpergebende Süßungsmittel), und "Intensivsüßstoffe", also Stoffe, die in der Regel eine sehr hohe Süßkraft, aber keinen Körper und in der Regel keinen oder nur einen geringfügigen physiologischen Brennwert aufweisen.
In einer besonders bevorzugten Ausführungsform ist die vorliegende erfindungsgemäße Hartkaramelle beziehungsweise Hartkaramellmasse zahnschonend, akariogen und/oder brennwertreduziert und/oder kalorienreduziert.
In einer weiteren Ausführungsform ist die erfindungsgemäße Hartkaramelle beziehungsweise Hartkaramellenmasse frei von Intensiv- Süßstoffen. Die erfindungsgemäße Hartkaramelle oder Hartkaramellmasse kann wie erläutert diabetiker-geeignet und/oder zahnfreundlich sein; es ist in einer weiteren Variante aber auch vorgese- hen, dass in der Karamelle Zucker wie Saccharose, Glucose, Maltose oder ähnliche vorhanden sind.
Die Hartkaramelle beziehungsweise Hartkaramellenmasse enthält gegebenenfalls weitere Hilfs- oder Zusatzstoffe, wie weitere Süßungsmittel, zum Beispiel Zuckeralkohole, Zuckeraustauschstoffe oder Intensiv-Süßstoffe, aber auch Hilfs- oder Zusatzstoffe ausgewählt wie Farbstoffe, Geschmacksstoffe, Aromen, gegebenenfalls lebensmittelverträgliche Säuren, Konservierungsmittel, Wirkstoffe, Füllstoffe, gegebenenfalls Fette, Fettersatzstoffe, Bindemittel, Mineralsalze, enthaltend zum Beispiel Ca2+, NaCI, Trinatriumcitrat, Phos- phat oder Mg2+. So enthält eine bevorzugte erfindungsgemäße Karamelle Zuckeralkohole wie 1 ,6-GPS, 1 ,1-GPS, hydrierte und/oder
nicht hydrierte Stärke-Hydrolysate (HSH), Erythrit, Xylit, Maltotriit, Lactit, Maltodextrine und/oder Mannit.
Bevorzugt wird der Hartkaramelle als Wirkstoff mindestens ein medizinisch aktiver Stoff zugesetzt, der prophylaktische oder therapeuti- sehe Wirkung auf den menschlichen oder tierischen Körper entfaltet, zum Beispiel Antihistamine, Antibiotica, Fungizide, Microbizide, He- xylresorcin, Dextromethorphan-Hydrobromid, Menthol, Nicotin, Coffein, Vitamine, Zink, Eukalyptus, Benzocain, Cetylpyridinium, Fluoride, Phenylpropanolamin oder andere pharmazeutisch wirksame Substanzen. Bei Verwendung als medizinisch aktive Hartkaramelle kann der Wirkstoff in einer Menge von zum Beispiel 1 ,0 bis 15 mg pro Einheit enthalten sein.
Die Hartkaramellen können auch Aromastoffe, wie Pflanzen- und Fruchtöle, Zitrusöle, Blüten- oder Blattöle, Öle aus Kirsche, Erdbee- re, Menthol, Eukalyptus, Pfefferminz, Honig oder grüner Minze, Fruchtessenzen, Grüner-Tee-Extrakt oder natürliche oder synthetische Färbemittel etc. enthalten. Die genannten Aromastoffe werden vorzugsweise in einer Menge von 0,05 bis 3 Gew.-% zugegeben.
Die Hartkaramellen können in bevorzugter Ausgestaltung der Erfin- düng auch Bindemittel, wie Alginate, Cellulose, Gelatine oder pflanzliche Gummis enthalten.
Es kann auch vorgesehen sein, den Hartkaramellen Intensivsüßstoffe zur Erhöhung der Süßkraft zuzufügen, wie Aspartam, Cyclamat, Acesulfam-K, Saccharin, Sucralose, Glycyrrhizin, Monellin, Dulcin, Naringin, Dihydrochalkon, Neotame, Alitame, Neohesperidin DC (Di- hydrochalkon), Stevioside, Thaumatin oder ähnliche.
Als Farbstoffe kommen synthetische oder natürliche Farbstoffe in Betracht. Als synthetischer Farbstoff kann beispielsweise Erythrosin, Indigo Carmine, Allurarot, E171 , Tartrazin, Titandioxid oder ähnlichen verwendet werden. Natürliche Farbstoffe können Carotinoide, zum Beispiel Betacarotine, Riboflavine, Chlorophyll, Anthocyane, zum Beispiel aus der Roten Bete, Betanin oder ähnliche sein. Im Fall der Verwendung von synthetischen Farbstoffen werden typischerweise 0,01 bis 0,03 Gew.-% an Farbstoff eingesetzt, während im Fall natürlicher Farbstoffe bevorzugt 0,1 bis 1 Gew.-% verwendet wer- den.
Als Füllstoffe können beispielsweise Polydextrose oder Inulin dienen. Als Fettersatzstoffe kommen beispielsweise Caprenin, Salatrim oder Olestra in Betracht.
Als Fette können pflanzliche Fette, zum Beispiel ungehärtete Fette, oder Milchfett verwendet werden. Die Fette können auch in fett- oder ölhaltigen Produkten wie Milchprodukte zum Beispiel Sahne oder Butter, Eier, andere fette tierische Produkten und/oder Pflanzenprodukte enthalten sein, die der Hartkaramelle zugegeben werden
In einer Variante enthält die erfindungsgemäße Hartkaramelle bezie- hungsweise Hartkaramellmasse mindestens eine Säure und/oder ein saures Salz. Bevorzugt in Frage kommen organische Säuren. Als lebensmittelverträgliche organische Säuren können beispielsweise Zitronensäure, Äpfelsäure, Milchsäure, Weinsäure, Ascorbinsäure oder ähnlich wirkende lebensmittelverträgliche Säuren eingesetzt werden.
Bevorzugt enthalten die Hartkaramellen ein Milcherzeugnis, zum Beispiel ein Molkereierzeugnis wie Vollmilchpulver, Sahne oder But-
ter. Derartige Milcherzeugnisse können bevorzugt in einer Menge von 0 bis 9 Gew.-% vorhanden sein.
Die Hartkaramellen enthalten vorzugsweise auch Emulgatoren, wie Lecithin, zum Beispiel Sojalecithin oder ähnliches, zum Beispiel in einer Menge von 0 bis 5 Gew.-%.
Die Erfindung sieht daher auch eine Hartkaramelle vor, die in den erfindungsgemäßen Mengen Isomaltulose enthält und bevorzugt zusätzlich zu 1 bis 90 Gew.-% aus weiteren Stoffen besteht, ausgewählt aus der Gruppe bestehend aus Intensiv-Süßstoffen, Füllstof- fen, Geschmacks- oder Aromastoffen, Farbstoffen, medizinisch wirksamen Bestandteilen, lebensmittelverträglichen Säuren, Fettersatzstoffen, Fett, Molkereierzeugnissen und/oder Mineralsalzen und/oder Emulgatoren.
Die Erfindung betrifft bevorzugt Hartkaramellen, die das Süßungsmit- tel oder „bulking agent" Isomaltulose in den erfindungsgemäßen Mengen, einen Aroma- oder Geschmacksstoff in einer Menge von 0,01 bis 2,5 Gew.-%, einen Intensivsüßstoff in einer Menge von 0,05 bis 0,25 Gew.-%, gegebenenfalls eine organische Säure in einer Menge von 0,1 bis 5,0 Gew.-% (jeweils bezogen auf das Gesamtge- wicht der Karamelle) und Wasser enthalten. In einer weiteren Ausführungsform wird eine Hartkaramelle bereitgestellt, die Isomaltulose, einen Aroma- oder Geschmacksstoff in einer Menge von 0,01 bis 2,5 Gew.-%, einen Intensiv-Süßstoff in einer Menge von 0,05 bis 0,25 Gew.-%, gegebenenfalls eine organische Säure in einer Menge von 0,1 bis 5,0 Gew.-%, und gegebenenfalls eine Fett- oder Ölhaltige Komponente in einer Menge von 0,1 bis 10 Gew.-% einen
Emulgator in einer Menge von 0,01 bis 2,5 Gew.-% sowie Wasser enthält oder daraus besteht.
Die Hartkaramellen der Erfindung können in geprägter oder gegossener Form vorliegen und gegebenenfalls geeignete Füllungen, bei- spielsweise Maltit-Sirup, enthalten. Die Erfindung betrifft auch Hartkaramellen die einen Kern und eine, mehrschichtige oder einschichtige, Beschichtung aufweisen. Vorzugsweise enthält ausschließlich der Kern (Füllung) Isomaltulose. In einer weiteren bevorzugten Variante enthält ausschließlich die Beschichtung (Decke) Isomaltulose. In einer weiteren bevorzugten Variante enthalten der Kern (Füllung) und die Beschichtung (Decke) Isomaltulose. Die Füllung kann in fester oder flüssiger Form vorliegen. Die Füllung wird nicht notwendigerweise aus der Hartkaramellenmasse der vorliegenden Erfindung hergestellt. Vielmehr kann vorgesehen sein, eine Hartkaramelle so auszuführen, dass lediglich deren Decke beziehungsweise Beschichtung aus der erfindungsgemäßen Hartkaramellmasse hergestellt ist, während die Füllung aus einem anderen Material, insbesondere einem zuckerfreien Material aufgebaut ist. Insbesondere betrifft die vorliegende Erfindung Hartkaramellen bestehend aus oder enthaltend die erfindungsgemäße Hartkaramellmasse. So kann eine gefüllte Hartkaramelle vorgesehen sein, deren Füllung beliebiger Natur ist, zum Beispiel ein zuckerfreies Süßungsmittel enthält und deren Decke aus der erfindungsgemäßen Hartkaramellmasse besteht.
Die Erfindung betrifft aber auch ungefüllte Hartkaramellen bestehend aus der genannten erfindungsgemäßen Hartkaramellmasse oder enthaltend diese Hartkaramellmasse unter Zusatz der genannten Zusatzstoffe.
Die Erfindung betrifft auch ein Verfahren zur Herstellung der erfindungsgemäßen Hartkaramellen oder Hartkaramellmasse, wobei eine wässrige Lösung oder Suspension, enthaltend ein Edukt-Gemisch aus den vorgenannten Mengen an Isomaltulose, zum Beispiel von 60 bis 100 Gew.-%, auf Temperaturen von 120 bis 145°C, erhitzt, evaporiert, abgekühlt und auf einen Trockensubstanzgehalt von mindestens 95, 96, 97, 98 oder 99 Gew.-%, konzentriert wird. Der Anteil an Isomaltulose im Edukt-Gemisch kann, je nach Anwendung, mehr als: 60, 70, 80 beziehungsweise 90 Gew.-% betragen. An- schließend wird abgekühlt und geformt. Die Aufkonzentrierung erfolgt vorteilhafterweise durch Evaporation von Wasser durch Kochen und/oder Anlegen von Vakuum, beispielsweise satzweise oder kontinuierlich.
Erfindungsgemäß bevorzugt ist der Säuregehalt der wässrigen Lö- sung beziehungsweise Suspension sehr gering, besonders bevorzugt ist keine Säure enthalten. Der pH-Wert der Lösung/Suspension beträgt vorzugsweise größer oder gleich pH 5, bevorzugt größer oder gleich pH 7. Je nach Einsatzgebiet sind folgende pH-Werte als untere Grenzwerte vorteilhaft: 4; 4,5; 5; 5,5; 6; 6,5; 7; 7,5; 8.
Gemäß der vorliegenden Erfindung beträgt die Hitzeeinwirkung bei der Aufkonzentrierung, besonders aber im gesamten Herstellverfahren, stets 135 0C oder weniger, bevorzugt 130 0C oder weniger. Selbstverständlich kann die Aufkonzentrierung auch in an sich bekannter Weise durchgeführt werden und die Hitzeeinwirkung kann dabei mehr als 135 0C, zum Beispiel von 145 bis 170 0C, betragen, ohne dass die Lehre der Erfindung verlassen wird. Je nach Anwendungsgebiet und gewünschtem Ergebnis beträgt die Hitzeeinwirkung
beim Kochen, weniger als oder gleich: 125, 128, 130, 133, 135, 138 beziehungsweise 140 0C.
Die Herstellung der Hartkaramellen kann auch mittels Schmelzextru- sion in an sich bekannter Weise durchgeführt werden. Erfindungs- gemäß bevorzugt ist - unabhängig vom Herstellverfahren - die Hitzeeinwirkung dabei stets 135 C oder weniger, bevorzugt stets 130 0C oder weniger. Sie kann aber auch mehr als 135 C, zum Beispiel von 145 bis 170 0C, betragen, ohne dass die Lehre der Erfindung verlassen wird.
Die Erfindung betrifft also auch mit dem erfindungsgemäßen Verfahren herstellbaren und bevorzugt auch hergestellte Hartkaramellen oder Hartkaramellmassen. Diese weisen unmittelbar nach der Herstellung vorzugsweise einen Wassergehalt von unter: 6, 5 oder 4 Gew.-% (bezogen auf das Gesamtgewicht) auf. Weiter beträgt der Wassergehalt jedoch bevorzugt nicht weniger als: 2; 3 beziehungsweise 4 Gew.-% (bezogen auf das Gesamtgewicht).
Schließlich ist ein weiterer Gegenstand der vorliegenden Erfindung die Verwendung von Isomaltulose als Bestandteil einer Hartkaramelle zum Zwecke der Verbesserung der Lagerstabilität der Hartkara- melle, besonders zur Verminderung der Wasseraufnahme beziehungsweise der Rekristallisation.
Bevorzugt findet die erfindungsgemäße Verwendung bei Hartkaramellen statt, die im wesentlichen frei von Säure sind.
Bevorzugt findet die erfindungsgemäße Verwendung auch bei Hart- karamellen statt, die einen hohen Wassergehalt (Ausgangswasser-
gehalt) aufweisen. Dieser beträgt vorzugsweise größer oder gleich 2%, bevorzugt größer oder gleich 3%.
Die Lagerstabilität wurde im Rahmen der vorliegenden Erfindung bestimmt, in dem die Hartkaramellen drei Tage offen bei 25°C und 80% relativer Luftfeuchtigkeit gelagert wurden. 72 Stunden nach Beginn der Lagerung wurden die Hartkaramellen einer Beurteilung unterzogen, wobei einerseits das Ausmaß visuell wahrnehmbarer Rekristallisation und andererseits die Klebrigkeit der Hartkaramelle analysiert wurde. Eine verbesserte Lagerstabilität im Rahmen der vorliegenden Erfindung liegt insbesondere dann vor, wenn Vergleichskaramellen hinsichtlich der visuell wahrnehmbaren Rekristallisation und/oder ihrer Klebrigkeit als schlechter zu beurteilen sind, insbesondere, wenn die erfindungsgemäßen Hartkaramellen ein geringeres Ausmaß der visuell wahrnehmbaren Rekristallisation und/oder ein geringeres Ausmaß an Klebrigkeit zeigen. Während Saccharose-Glukosesirup-Glaskörper während der Lagerungstests zu einem Sirup zerflossen und die Isomalt-Glaskörper deutlich rekristallisierten, rekristallisierten die erfindungsgemäßen Isomaltulo- se-Glaskörper nicht oder aber nur zu einem gewissen Grad; jedoch ist die Rekristallisation stets geringer als bei den Glaskörpern nach bekannten Rezepturen.
Weiter wurde die Wiederfindung der Isomaltulose in den gelagerten Glaskörpern ermittelt. Es zeigt sich, dass die Isomaltulose- Wiederfindung größer oder gleich 90% ist, wenn im Wesentlichen keine Säure in der Hartkaramelle enthalten ist.
Besonders vorteilhaft ist auch das Fließverhalten der Isomaltulose- Masse beim Gießen ähnlich dem Fließverhalten bekannter Saccha-
rose-Hartkaramell-Massen. Isomaltulose-Massen zeigen demnach eine ähnlich gute Verarbeitungsfähigkeit wie bekannte Hartkaramellmassen; die Adaption weiterer Prozessparameter bei der Herstellung von Hartkaramellen erübrigt sich somit im Wesentlichen.
Weitere vorteilhafte Ausgestaltungen können den Unteransprüchen entnommen werden.
Die Erfindung wird anhand der folgenden Beispiele und der dazugehörigen Figuren näher erläutert.
Die Figuren 1a, 1 b, 1c, 1d, 1e, 1f sowie Figuren 2a, 2b, 2c, 2d, 2e zeigen Fotos von erfindungsgemäßen Hartkaramellen sowie von Vergleichs-Hartkaramellen nach jeweils 3-tägiger Lagerung bei 25°C bei 80% relativer Luftfeuchte.
Beispiel 1 : Herstellung von Hartkaramellen/Glaskörpern
Folgende 3 Gruppen von Hartkaramellen werden hergestellt:
Gruppe I: Isomaltulose-Glaskörper (erfindungsgemäß):
MS 255/1 : ohne Säure Wassergehalt ca. 2%
MS 255/2: ohne Säure Wassergehalt ca. 3%
MS 255/5: mit 0,9% Äpfelsäure Wassergehalt ca. 3%
Die erfindungsgemäßen Glaskörper der Grupppe I wurden mit dem erfindungsgemäßen Verfahren hergestellt, wobei eine Kochtemperatur von 133 0C zu keinem Zeitpunkt überschritten wurde.
Gruppe II: Isomalt-Glaskörper (Vergleichsbeispiel)
MS 255/6: ohne Säure Wassergehalt ca. 1 %
MS 255/8: ohne Säure Wassergehalt ca. 2%
MS 255/9: mit 0,9% Apfelsäure Wassergehalt ca. 1 %
MS 255/10: mit 0,9% Apfelsäure Wassergehalt ca. 2%
Gruppe IM: Saccharose/Glukosesirup-Glaskörper (50:50) (Vergleichsbeispiel):
MS 255/14: ohne Säure Wassergehalt ca. 2%
MS 255/15: ohne Säure Wassergehalt ca. 3%
MS 255/16: mit 0,9% Apfelsäure Wassergehalt ca. 2%
MS 255/17: mit 0,9% Apfelsäure Wassergehalt ca. 3%
Beispiel 2: Laqerunqstest
a) Wasseraufnahme
Es wurde ein Lagerungstest über einen Zeitraum von 3 Tagen durchgeführt. Die Lagerungstemperatur betrug dabei konstant 25 0C, die Luftfeuchtigkeit betrug konstant 80% relative Feuchte. Der Wassergehalt der Glaskörper wurde zu Beginn des Tests (Nullprobe) und zum Ende des Tests ermittelt. Die Wasseraufnahme in g/100 g wurde errechnet. In Tabelle 1 sind die Ergebnisse dargestellt.

b) Isomaltulose-Wiederfindung
Weiter wurde die Wiederfindung der Isomaltulose in den Glaskörpern ermittelt. Die Ergebnisse des Wiederfindungstests sind in Tabelle 2 enthalten. Isomaltulose-Glaskörper ohne Säurezusatz zeigen eine Isomaltulose-Wiederfindung von mehr als 90%.

c) Struktur und organoleptische Eigenschaften
In einem weiteren Test wurden Struktur und organoleptische Eigenschaften der gelagerten Glaskörper ermittelt und fotografisch dokumentiert (siehe Figuren 1a bis 1f und 2a bis 2f).
Bei den Isomaltulose-Glaskörpern ohne Säurezusatz (Isomaltulose- Wiederfindung > 90%) sind an der Oberfläche leicht trübe und nicht klebrig. Die Isomaltulose-Glaskörper mit Säurezusatz und einem Wassergehalt von ca. 3% (3,1 %) sind stärker eingetrübt, jedoch nicht deutlich rekristallisiert und zeigen auf der Petrischale einen „Schneckenfuß" (Isomaltulose-Wiederfindung: 82,6%). Die Lagerstabilität der Isomaltulose-Glaskörper ist stark vom Abbaugrad der Isomaltulose und somit von der verwendeten Rezeptur abhängig. Die Isomaltulose-Glaskörper mit einer Isomaltulose-Wiederfindung > 90% (bei Herstellung ohne Säure) sind im Gegensatz zu den Sac- charose-Glukosesirup-Glaskörpem formstabil. Zudem zeigen diese einen erstaunlich geringen Grad der Rekristallisation verglichen mit den Isomalt-Glaskörpern.
Es zeigt sich weiter, dass die Saccharose-Glukosesirup-Glaskörper während der Lagerungstests zu einem Sirup zerflossen sind. Auch die Isomalt-Glaskörper sind deutlich rekristallisiert. Die erfindungsgemäßen Isomaltulose-Glaskörper, die Säure enthalten, rekristallisieren zu einem gewissen Grad, jedoch ist die Rekristallisation geringer als bei den Vergleichsbeispielen. Die erfindungsgemäßen Isomaltulose-Glaskörper ohne Säure, zeigen hingegen unter den gewählten Bedingungen praktisch keine Rekristallisation.
Beispiel 3: Verarbeitungsfähiqkeit
In einem weiteren Test wurde die Verarbeitungsfähigkeit beim Gießen (Fließfähigkeit/Fließverhalten) der Isomaltulose-haltigen Hartkaramellmasse der Karamellen mit bekannten Hartkaramellmassen verglichen.
Es zeigt sich, dass das Fließverhalten der Isomaltulose-Masse beim Gießen ähnlich dem Fließverhalten einer Saccharose-Glukosesirup- Masse (siehe Beispiel 1 ) ist. Isomaltulose-Masse zeigen eine ähnlich gute Verarbeitungsfähigkeit wie bekannte Hartkaramellmassen.
Claims
1. Hartkaramelle, enthaltend Isomaltulose in einem Anteil von 80 bis 98 Gew.-% (bezogen auf die Gesamttrockensubstanz der Hartkaramelle).
2. Hartkaramelle nach einem der vorstehenden Ansprüche, wobei die Hartkaramelle im Wesentlichen frei von Säure ist.
3. Hartkaramelle nach einem der vorstehenden Ansprüche, wobei die Hartkaramelle im Wesentlichen frei von Fett und/oder Öl ist.
4. Hartkaramelle nach einem der vorstehenden Ansprüche, wobei Isomaltulose als einziges Süßungsmittel enthalten ist.
5. Hartkaramelle nach einem der vorstehenden Ansprüche, wobei die Hartkaramelle einen Kern und eine Beschichtung aufweist, wobei ausschließlich der Kern, ausschließlich die Beschichtung oder der Kern und die Beschichtung Isomaltulose enthalten.
6. Verfahren zur Herstellung einer Isomaltulose-haltigen
Hartkaramelle, wobei eine wässrige Lösung oder Suspension enthaltend Isomaltulose von 80 bis 98 Gew.-% unter Hitzeeinwirkung evaporiert, abgekühlt und geformt wird und eine Hartkaramelle erhalten wird.
7. Verfahren nach Anspruch 6, wobei die Temperatur der
Hitzeeinwirkung stets kleiner oder gleich 135 0C, bevorzugt stets kleiner oder gleich 130 0C beträgt.
8. Verfahren nach Anspruch 6 oder 7, wobei der pH-Wert der wässrigen Lösung oder Suspension stets größer oder gleich 5, bevorzugt größer oder gleich 7 beträgt.
9. Hartkaramelle, erhältlich mit dem Verfahren nach einem der Ansprüche 6 bis 8.
10. Verwendung von Isomaltulose als Bestandteil einer Hartkaramelle zur Verbesserung der Lagerstabilität der Hartkaramelle.
11. Verwendung nach Anspruch 12, wobei die Hartkaramelle im Wesentlichen frei von Säure ist.
12. Verwendung nach Anspruch 10 oder 11 , wobei die Hartkaramelle einen Ausgangswassergehalt von größer oder gleich 2 %, bevorzugt größer oder gleich 3 % aufweist.
