Claims (9)

  1. Apparatus for the production or processing of a foodstuff, more especially meat, said apparatus having at least one perforated plate (P), through the perforations (4, 5) of which the foodstuff can be pressed, a cutter (14) in a cutter carrier (10) being associated with the perforated plate (P) and having a cutting edge (28) which travels along said perforated plate, characterised in that the cutter (14) includes a clamping insert (23) for the securement of a blade (24) formed from ceramic material, and the blade (24) has at least one lateral supporting face (31.1, 31.2), which extends substantially in the plane of the cutting edge.
  2. Apparatus according to claim 1, characterised in that the clamping insert (23) is traversed by a tension screw (18), which presses the clamping insert (23) in a slot (13) in the cutter carrier (10) against the blade (24), and presses said blade against a slot wall (22).
  3. Apparatus according to claim 2, characterised in that the clamping insert (23) forms a corner channel (25) for the blade (24), in the region of which are provided centring pins (26.1, 26.2) for the blade (24).
  4. Apparatus according to one of claims 1 to 3, characterised in that a spacing (a1) between the cutting edge (28) and a surface region (27) of the cutter carrier (10) in the direction of rotation in front of the cutter (14) is larger than a spacing (a2) downstream of the cutter (14).
  5. Apparatus according to claim 4, characterised in that a free leading edge (30) of the clamping insert (23) is orientated inclinedly in relation to the surface of the cutter carrier (10), so that it ascends from the surface region (27) upstream of the cutter (14) to the surface region (29) downstream of the cutter (14).
  6. Apparatus according to at least one of claims 1 to 5, characterised in that the perforated plate (P) comprises a carrier (1) and an insert (2).
  7. Apparatus according to claim 6, characterised in that the insert (2) and/or the cutter (14) have/has a low heat conductivity.
  8. Apparatus according to claim 6 or 7, characterised in that the insert (2) and/or the cutter (14) are/is insulated relative to their/its respective carrier (1) by an insulating layer (3).
  9. Apparatus according to one of claims 6 to 8, characterised in that the insert (2) is formed from ceramic material, more especially from silicon nitride.
