Abstract
Beschrieben wird die Verwendung bestimmter Alkyloxyalkansäureamide als (i) Aromastoff und/oder (ii) zur Erzeugung eines Gefühls von Kribbeln und/oder (iii) zur Erzeugung eines Gefühls von Schärfe und/oder (iv) zur Anregung des Speichelfusses im Mund und/oder (v) zur Verstärkung des Geschmacks von Ethanol und/oder (vi) zur Imitierung des Geschmacks von Ethanol.
Description
Verwendung von Alkyloxyalkansäureamiden insbesondere als Aromastoffe sowie neue Alkyloxyalkansäureamide
Die vorliegende Erfindung betrifft die Verwendung bestimmter Alkyloxyalkansäureamide als (i) Aromastoff und/oder (ii) zur Erzeugung eines Gefühls von Kribbeln und/oder (iii) zur Erzeugung eines Gefühls von Schärfe und/oder (iv) zur Anregung des Speichelfusses im Mund und/oder (v) zur Verstärkung des Geschmacks von Ethanol und/oder (vi) zur Imitierung des Geschmacks von Ethanol, bevorzugt in der Ernährung, der Mundhygiene oder dem Genuss dienenden Zubereitungen oder oralen pharmazeutischen
Zubereitungen. Die Erfindung betrifft auch neue Alkyloxyalkansäureamide sowie Zubereitungen, welche die erfindungsgemäß zu verwendenden Alkyloxyalkansäureamide umfassen.
Capsaicin [Λ/-(4-Hydroxy-3-methoxybenzyl)-8-methyl-(6E)-nonensäureamid, Formel (1)] und andere Capsaicinoide sind als scharf schmeckende und wärmeerzeugende Aromastoffe aus verschiedenen Capsicum-Arten, insbesondere Chili, schon seit 1871 bekannt. Unter wärmeerzeugenden
Stoffen bzw. Stoffen mit einem wärmeerzeugenden Effekt werden solche verstanden, die sensorisch einen Wärmeeindruck hervorrufen. Bei entsprechend geringer Dosierung der Capsaicinoide (der Schwellenwert liegt bei einer Verdünnung von ca. 1:105) wird nur eine angenehme, neutrale
Schärfe und ein Wärmegefiihl im Mund wahrgenommen, die aber lange anhält. Problematisch ist bei Capsaicin die hohe akute Toxizität (LD50 {Maus oral) 47 mg), die die Anwendbarkeit bei der Zubereitung erschwert, sowie die bei häufiger Anwendung und Überdosierung auftretende chron. Gastritis, Nieren- und Leberschädigung (Römpp Lexikon Naturstoffchemie, Thieme 1997, S. 109). Somit besteht trotz der guten sensorischen Eigenschaften ein Bedarf an weniger problematischen Scharf Stoffen. Das im weißen Pfeffer vorkommende Piperin (1-Piperoylpiperidin, Formel (2),) verursacht zwar auch einen scharfen Eindruck (Römpp Lexikon Naturstoffchemie, Thieme 1997, S. 500), zeigt aber im Vergleich zu Capsaicin eine relative Schärfe von nur ca. 1 %. Darüber hinaus besitzt Piperin einen intensiven Eigengeschmack, der an Pfeffer erinnert, so dass die Anwendung in vielen Zubereitungen nur beschränkt erfolgen kann. Ethanol (trivial: Alkohol) zeigt in höheren Konzentrationen (ab ca. 1 %) ebenfalls einen scharfen und warmen Geschmackseindruck. Auf der anderen Seite ist Ethanol nicht in allen Nahrungsmitteln erlaubt, z.B. aus ethischen und religiösen Gründen, und der Konsum sollte aus gesundheitlichen Gründen verringert bzw. weitgehend vermieden werden.
Der vor allem in Mundpflegeprodukten zusätzlich zu den scharfen Eindrücken erwünschte Effekt eines erhöhten Speichelflusses wird durch die vorgenannten Substanzen nicht verursacht. Die natürlich vorkommenden und partiell für diesen Zweck geeigneten Alkamide Spilanthol (Formel (3)) und Pellitorin (Formel (4)) zeigen neben der speichelanregenden und kribbelnden Wirkung einen langanhaltenden und betäubenden Effekt im Mundraum, der nicht für alle Anwendungen erwünscht ist (vgl. H. CF. Su und R.. Horvat, J. Agric. Food Chem. Jhrg. 1981, Bd. 29, Seiten 115-118). Zudem sind sie auf Grund ihrer stark ungesättigten Struktur synthetisch schwer zugänglich und gegen Sauerstoff- und Lichteinfluss sehr empfindlich.
Primäre Aufgabe der vorliegenden Erfindung war es, Stoffe anzugeben, die zur Erzeugung eines Gefühls von Kribbeln und/oder zur Erzeugung eines Gefühls von Schärfe/Wärme und/oder zur Anregung des Speichelflusses im Mund (mundwässernder Effekt) geeignet sind. Solche Stoffe sollten dabei auch den scharfen und wärmenden Geschmackseindruck von Ethanol imitieren können. Zudem sollten diese Stoffe dabei vorzugsweise ein relativ neutrales Geruch- und Geschmacksprofil besitzen, keine nennenswerte betäubende Wirkung haben, synthetisch leicht zugänglich und stabil sein. Die anzugebenden Stoffe sollten zudem bedenkenlos in der Ernährung, der Mundhygiene oder dem Genuss dienenden Zubereitungen oder oralen pharmazeutischen Zubereitungen eingesetzt werden können.

zur Verwendung als (i) Aromastoff und/oder (ii) zur Erzeugung eines Gefühls von Kribbeln und/oder (iii) zur Erzeugung eines Gefühls von Schärfe (bzw. Wärme) und/oder (iv) zur Anregung des Speichelfusses im Mund und/oder (v) zur Verstärkung des Geschmacks von Ethanol und/oder (vi) zur Imitierung des Geschmacks von Ethanol, insbesondere zur Verwendung in der Ernährung, der Mundhygiene oder dem Genuss dienenden Zubereitungen oder oralen pharmazeutischen Zubereitungen.
Die Verbindungen der Formeln (5a), (5b) und (5c) können im Falle des Vorhandensein asymetrischer Kohlenstoffatome als reine Enantiomere und/oder Diastereomere oder als Mischungen aller möglicher Verhältnisse derselben vorliegen.
Insbesondere hinsichtlich der Verbindungen der Formeln (5a), (5b) und (5c) gilt:
Alkylreste im Sinne der Erfindung sind lineare, verzweigte oder cyclische Alkylgruppen mit 1 bis 8 Kohlenstoffatomen, wobei die folgenden Gruppen bevorzugt sind: Methyl, Ethyl, n-Propyl (vgl. die Verbindungen 10 - 13, 15 und 17 weiter unten), n-Butyl (vgl. die Verbindungen 6-9, 14 und 16 weiter unten), n-Pentyl und n-Hexyl.
Insbesondere hinsichtlich der Verbindungen der Formeln (5a) und (5c) gilt:
Niederalkylreste im Sinne der Erfindung sind lineare, verzweigte oder cyclische Alkylgruppen mit 1 bis 5 Kohlenstoffatomen, die gegebenenfalls mit einer oder mehreren Hydroxygruppen, bevorzugt genau einer Hydroxygruppe substituiert sind, wobei die folgenden Gruppen bevorzugt sind: Methyl, Ethyl, 2-Hydroxyethyl, Propyl, 3-Hydroxypropyl, 2-Propyl, Cyclopropyl, Butyl, 2-Butyl,
3-Methylpropyl (d.h. Isobutyl), 2-Hydroxy-2-methylpropyl, Cyclobutyl, 1- oder 2-Methylcylopropyl, 2-Methylpropyl, Pentyl, 2-Pentyl, 3-Pentyl, 2-Methylbutyl, 3-Methylbutyl, Cyclopentyl und 1-, 2- oder 3-Methylcyclobutyl; insbesondere aber 2-Hydroxyethyl (vgl. Verbindungen 16 und 17), Isobutyl (vgl. Verbindungen 6 und 10) oder 2-Methylbutyl (vgl. Verbindungen 7 und 11).
Insbesondere hinsichtlich der Formel (5c) gilt:
Ein Alkylenrest im Sinne der Erfindung ist eine Alkylengruppe mit 2 bis 6 Kohlenstoffatomen, die ihrerseits gegebenenfalls durch ein oder mehrere Niederalkylreste substituiert sein kann, wobei folgende Gruppen bevorzugt sind: Ethylen, Propylen, Butylen (vgl. die Formeln 9 und 13 weiter unten) und Pentylen (vgl. die Formeln 8 und 12 weiter unten).
Die vorliegende Erfindung betrifft auch die Alkyloxyalkansäureamide der Formeln
(5a) und
(5b)
wobei
jeweils n, R1, R2, m, R1, R" die oben für (5a) bzw. (5b) angegebene Bedeutung haben. Diese Verbindungen sind neu. Ihre Eignung für die oben genannten Zwecke und insbesondere für die Vermittlung von Schärfe, ggfs. Wärme und/oder Kribbeln und/oder Anregung des Speichelfluss ist angesichts des bekannten Standes der Technik überraschend.
Die Alkyloxyalkansäureamide der Formeln (5a) und (5b) können mit an sich bekannten Methoden zur Amidsynthese (vgl. z.B. Lehrbücher der praktischen organischen Chemie) aus den bekannten Alkyloxyalkansäuren oder deren Alkylestern hergestellt werden. Beispielsweise können die Alkyloxyalkansäuren in die entsprechenden Säurechloride überführt und mit dem entsprechenden Alkylamin allein oder unter Zuhilfenahme einer Hilfsbase mit oder ohne Lösungsmittel einfach in die erfindungsgemäßen Alkyloxyalkansäureamide überführt und mit den üblichen Methoden (z.B. Destillation, Kristallisation, Chromatographie) aufgereinigt werden. Die Methode wird mit dem folgenden Schema verdeutlicht:
Einige Alkyloxyalkansäureamide der Formel 5c sind schon vorher beschrieben worden. So wurde das N.N-Diethyl-3-decyloxypropionsäureamid (CA 187885- 89-8) in US 5,744,631 als antiviraler und/oder antifungischer Wirkstoff beschrieben. N,N-Diethyl-2-decyloxypropionsäureamid (CA 88591-89-3) wurde in US 3,228,832 neben anderen N,N-Dialkyl-Derivaten als Mittel gegen Eingeweidewürmer in Tieren beschrieben.
Eine Verwendung der Alkyloxyalkansäureamide (5a), (5b) oder (5c) für die oben angegebenen Verwendungszwecke war jedoch bislang nicht bekannt und ist überraschend.
Überraschend und für den Fachmann nicht voraussehbar war insbesondere, dass die erfindungsgemäß einzusetzenden Alkyloxyalkansäureamide bei der sensorischen Untersuchung einen kribbelnden (englisch: Tingling) und/oder einen als scharf beschriebenen Geschmackseindruck hervorrufen und/oder speichelfördernd sind. Ferner überraschend war, dass die sensorischen
Eindrücke bei höheren Einsatzkonzentrationen relativ stark sind und relativ lange anhalten, so dass die Verbindungen der Formeln (5a), (5b) und (5c)
(sowie deren Mischungen) hervorragend für die genannten Zwecke eingesetzt werden können.
Insbesondere vorteilhaft ist, dass die Alkyloxyalkansäureamide der Formel (5a) einen kribbelnden oder als Tingling beschriebenen Geschmackseindruck verursachen und stark speichelfördernd sind, ohne dabei eine ausgeprägte Schärfe und/oder Wärme und/oder ein betäubendes Gefühl zu vermitteln.
Besonders vorteilhaft ist auch, dass die Alkyloxyalkansäureamide der Formel (5b) einen angenehm scharfen und wärmenden sensorischen Eindruck verursachen, ohne aber den beißendenen und brennenden sowie langanhaltenden Eindruck von Capsaicinderivaten, wie z.B. Dihydrocapsaicin, zu zeigen, so dass die Alkyloxyalkansäureamide der Formel (5b) besonders gut zur Verstärkung des sensorischen Eindrucks von Ethanol und/oder zur Imitierung des sensorischen Eindrucks von Ethanol geeignet sind.
Die Verbindungen der Formel (5b) mit m = 1, R' = H und R" = H, Methyl oder Ethyl sind insbesondere aufgrund ihrer besonderen Schärfe bevorzugt.
Zudem sind die erfindungsgemäß einzusetzenden Alkyloxyaikansäureamide auf Grund der fehlenden Doppelbindungen wesentlich stabiler gegen Oxidation, Licht- oder Strahleneinfluss oder andere Zersetzungsreaktionen als die stark ungesättigten Alkamide wie z.B. Spilanthol (3) oder Pellitorin (4).
Besonders bevorzugt sind die folgenden erfindungsgemäß einzusetzenden Alkyloxyaikansäureamide:
2-Heptyloxyessigsäure-N-isobutylamid (Verbindung 6) 2-Heptyloxyessigsäure-N-2-(methylbutyl)amid (Verbindung 7) 2-Heptyloxyessigsäure-N-piperidinid (Verbindung 8) 2-Heptyloxyessigsäure-N-pyrollidinid (Verbindung 9)
3-Hexyloxypropionsäure-N-isobutylamid (Verbindung 10) 3-Hexyloxypropionsäure-N-2-(methylbutyl)amid (Verbindung 11) 3-Hexyloxypropionsäure-N-piperidinid (Verbindung 12) 3-Hexyloxypropionsäure-N-pyrollidinid (Verbindung 13) 2-Heptyloxyessigsäure-N-(4-hydroxy-3-methoxybenzyl)amid (Verbindung 14) 3-Hexyloxypropionsäure-N-(4-hydroxy-3-methoxybenzyl)amid (Verbindung 15) 2-Heptyloxyessigsäure-N-(2-hydroxyethyl)amid (Verbindung 16) 3-Hexyloxypropionsäure-N-(2-hydroxyethyl)amid (Verbindung 17) sowie Mischungen, die 2, 3 oder mehr der Verbindungen 6 - 17 umfassen.
Wegen ihres besonderen mundwässernden Effekts sind die Verbindungen 6 und 7 sowie andere Verbindungen der Formel 5a besonders bevorzugt.

Ein weiterer Gegenstand der vorliegenden Erfindung sind Zubereitungen, Halbfertigwaren und Riech-, Aroma- und Geschmackstoffkompositionen, welche ein oder mehrere erfindungsgemäß zu verwendende Alkyloxyalkansäureamide enthalten. Vergleiche dazu die nachfolgende Beschreibung sowie die beigefügten Ansprüche.
Die erfindungsgemäß einzusetzenden Alkyloxyalkansäureamide (oder deren Mischungen) können auch in kosmetischen oder dermatologischen
Zubereitungen zur Erzeugung eines Gefühls von Wärme auf der Haut verwendet werden.
In einer bevorzugten Ausführung der Erfindung werden die erfindungsgemäßen Alkyloxyalkansäureamide (oder deren Mischungen) in Kombination mit einer oder mehreren weiteren scharf schmeckenden und/oder ein Gefühl von Wärme erzeugenden Substanzen oder (insbesondere) scharf schmeckenden pflanzlichen Extrakten verwendet. Auf diese Weise kann in entsprechenden Zubereitungen ein besonders abgerundetes sensorisches Profil erreicht werden. Insbesondere die Kombination der erfindungsgemäß einzusetzenden Alkyloxyalkansäureamide mit einem scharf schmeckenden pflanzlichen Extrakt in einem Verhältnis von 0,01 zu 1 bis 100 zu 1, bevorzugt 0,1 zu 1 bis 10 zu 1 erzeugt ein angenehmes sensorisches Profil.
Zur Kombination geeignete scharf schmeckende und/oder ein Gefühl von Wärme erzeugende Substanzen sind insbesondere: Capsaicin, Dihydrocapsaicin, Gingerole, Paradole, Shogaole, Piperin, Alkansäure-N- vanillylamide, insbesondere Nonansäure-N-vanillylamid, Pellitorin oder Spilanthol, 2-Nonensäure-N-4-hydroxy-3-methoxyphenylamidJ Alkylether von 4-Hydroxy-3-methoxybenzylalkohol, insbesonders 4-Hydroxy-3- methoxybenzyl-n-butylether, Alkylether von 4-Acyloxy-3- methoxybenzylalkohol, insbesondere 4-Acetyloxy-3-methoxybenzyl-n-butyl- ether und 4-Acetyloxy-3-methoxybenzyl-n-hexylether, Alkylether von 3- Hydroxy-4-methoxybenzylalkohol, Alkylether von 3,4-Dimethoxybenzylalkohol, Alkylether von 3-Ethoxy-4-hydroxybenzylalkohol, Alkylether von 3,4- Methylendioxybenzylalkohol, (4-Hydroxy-3-methoxyphenyl)essigsäureamideJ insbesondere (4-Hydroxy-3-methoxyphenyl)essigsäure-N-n-octylamid,

Nicotinaldehyd, Methylnicotinat, Propylnicotinat, 2-Butoxyethylnicotinat, Benzylnicotinat, 1-Acetoxychavicol, Polygodial und Isodrimeninol.
Auch die Kombination mit scharf schmeckenden und Speichelanregung verursachenden Alkencarbonsäure-N-alkylamiden (vgl. z. B. DE 103 51 422) ist bevorzugt.
Zur Kombination geeignete scharf schmeckende pflanzliche Extrakte sind alle für die Ernährung geeigneten pflanzlichen Extrakte, die einen scharfen und/oder warmen sensorischen Eindruck hervorrufen. Bevorzugt als pflanzliche Extrakte sind insoweit beispielsweise Pfefferextrakt (Piper ssp., insbesondere Piper nigrυm), Wasserpfefferextrakt (Polygonum ssp., insbesondere Polygonum hydropiper), Extrakte aus Allium ssp. (insbesondere Zwiebel und Knoblauchextrakte), Extrakte aus Rettich (Raphanus ssp.), Meerrettichextrakte (Cochlearia armoracia), Extrakte aus schwarzem (Brassica nigra), wildem oder gelbem Senf (Sinapis ssp., insbesondere Sinapis arvensis und Sinapis alba), Bertramwurzel-Extrakte (Ancyclus ssp., insbesondere Anacylcus pyrethrum L), Sonnenhutextrakte (Echinaceae ssp.), Extrakte aus Szechuan-Pfeffer (Zanthoxylum ssp., insbesondere Zanthoxylum pipeήtum), Spilanthesextrakt (Spilanthes ssp., insbesondere Spilanthes acmellä), Chiliextrakt (Capsicum ssp., insbesondere Capsicum frutescens), Paradieskörner-Extrakt (Aframomum ssp., insbesondere Aframomum meleguβta [Rose] K. Schum.), Ingwerextrakt (Zingiber ssp., insbesondere Zingiber officinale), Galangaextrakt (Kaempfβria galanga oder Alpinia galanga) und Jaborandi-Extrakt (Pilocarpus-Spezies, insbesondere Pilocarpus jaborandi).
Die scharf schmeckenden pflanzlichen Extrakte können häufig aus den entsprechenden frischen oder getrockneten Pflanzen oder Pflanzenteilen, insbesondere aber aus weißen, grünen oder schwarzen Pfefferkörnern, Wasserpfefferkörnern, Zwiebeln und Knoblauch, Rettichwurzel, Meerrettich,
Senfkörnern, Sonnenhutwurzeln, Bertramwurzel, Pflanzenteilen der Zanthoxylum-AΛen, Pflanzenteilen der Spilanthes-Arten, Chilischoten, Paradieskörnern oder Ingwer- oder Galangawurzeln gewonnen werden. Dabei werden die getrockneten Pflanzenteile, die vorzugsweise vorher zerkleinert wurden, üblicherweise mit einem für Nahrungs- und Genussmittel geeigneten Lösungsmittel, bei einer Temperatur im Bereich von 00C bis zum Siedepunkt des jeweiligen Lösungsmittels extrahiert, anschließend filtriert und das Filtrat ganz oder teilweise einengt, vorzugsweise durch Destillation, Gefrier- oder Sprühtrocknung. Der so erhaltene Rohextrakt kann dann noch weiter aufgearbeitet werden, beispielsweise mit Wasserdampf bei Drücken von 0,01 mbar bis Normaldruck behandelt und/oder in einem für Nahrungs- und Genussmittel geeigneten Lösungsmittel aufgenommen werden. Für Nahrungs¬ und Genussmittel geeignete Lösungsmittel sind beispielsweise: Wasser, Ethanol, Methanol, Propylenglycol, Glycerin, Aceton, Dichlormethan, Diethylether, Hexan, Heptan, Triacetin, ein pflanzliches Öl oder Fett, super¬ kritisches Kohlendioxid oder ein Gemisch der vorgenannten Lösungsmittel.
In einer besonders bevorzugten Ausführung der Erfindung werden die erfindungsgemäßen Alkyloxyalkansäureamide (oder deren Mischungen) in Kombination mit anderen Tingling und/oder Speichelanregung verursachenden Substanzen oder Pflanzenextrakten, enhaltend diese Substanzen verwendet.
Als Tingling oder Speichelanregung verursachende Substanzen können beispielsweise bestimmte ungesätttigte Alkamide (z.B. Pellitorine, Spilanthole, Shogaoole), Alkaloide (z.B. Pilocarpin), speichelflussfördernde Peptide (z.B. Substanz P, Tachykinine, Physalaemin), aber auch einfache Fruchtsäuren (z.B. Citronensäure, Weinsäure) verwendet werden.
In einer weiteren besonders bevorzugten Ausführung der Erfindung werden die erfindungsgemäßen Alkyloxyalkansäureamide (oder deren Mischungen) in
Kombination mit einer oder mehreren eine physiologische Kühlwirkung verursachenden Substanzen verwendet.
Als physiologische Kühlwirkung verursachende Substanzen können beispielsweise Menthol und Mentholderivate (z.B. L-Menthol, rac. Menthol) Menthylether (z.B. (l-Menthoxy)-1,2-propandiol, (l-Menthoxy)-2-methyl-1,2- propandiol, Menthylmethylether), Menthylester (z.B. Menthylacetat, Menthylisobutyrat, Menthyllactat, Menthyl-(2-methoxy)acetat, Menthyl-(2- methoxyethoxy)acetat, Menthylpyroglutamat), Menthylcarbonate (z.B. Menthylpropylenglycolcarbonat, Menthylethylenglycolcarbonat, Menthylglycerincarbonat), die Halbester von Mentholen mit Dicarbonsäure (z.B. Menthylsuccinat, Menthylglutarat), Menthancarbonsäureamide (z.B. Menthancarbonsäure-N-ethylamid), Menthon und Menthonderivate (z.B. Menthonglycerinketal), 2,3-Dimethyl-2-(2-propyl)-butansäurederivate (z.B. 2,3- Dimethyl-2-(2-propyl)-butansäure-N-methylamid), Isopulegol oder seine Ester (l-(-)-lsopulegol, l-(-)-lsopulegolacetat), Menthanderivate (z.B. p-Menthan-3,8- diol), Cubebol, Pyrrolidonderivate von Cycloalkyldionderivaten (z.B. 3-Methyl- 2(1-pyrrolidinyl)-2-cyclopenten-1-on) oder Icilin dienen.
Die Erfindung betrifft auch der Ernährung, der Mundhygiene oder dem Genuss dienende Zubereitungen, enthaltend eine zum Erreichen eines Gefühls des Kribbeins und/oder der Schärfe und/oder der Wärme und/oder zur Erzeugung des Speichelfiuss und/oder zur Verstärkung oder Imitierung des Geschmacks von Ethanol wirksamen Menge, vorzugsweise eine zum Erreichen eines Gefühls von Kribbeln oder Schärfe oder zur Erzeugung von Speichelfiuss oder zur Verstärkung oder Imitierung des Geschmacks von Ethanol wirksame Menge eines Alkyloxyalkansäureamids der Formel (5a), (5b) oder (5c) oder einer Mischung aus zwei oder mehr Verbindungen der Formel (5a), (5b) und/oder (5c)

Diese erfindungsgemäßen Zubereitungen umfassen gegebenenfalls andere übliche Grund-, Hilfs- und Zusatzstoffe für Nahrungs- oder Genussmittel oder der Mundhygiene dienende Zubereitungen. Die Zubereitungen enthalten in der Regel 0,0000001 Gew.-% bis 10 Gew.-%, bevorzugt 0,00001 bis 1 Gew.-
%, besonders bevorzugt aber 0,00001 Gew.-% bis 0,1 Gew.-%, bezogen auf das Gesamtgewicht der Zubereitung, an einem oder mehreren Alkyloxyalkansäureamiden der Formel (5a), (5b) und/oder (5c). Weitere übliche Grund-, Hilfs- und Zusatzstoffe für Nahrungs- oder Genussmittel oder der Mundhygiene dienende Zubereitungen können in Mengen von 0,0000001 bis 99,9999999 Gew.-%, vorzugsweise 10 bis 80 Gew.-%, bezogen auf das Gesamtgewicht der Zubereitung, enthalten sein. Ferner können die Zubereitungen Wasser in einer Menge bis zu 99,9999999 Gew.-%, vorzugsweise 5 bis 80 Gew.-%, bezogen auf das Gesamtgewicht der Zubereitung, enthalten.
Der Ernährung oder dem Genuss dienende Zubereitungen sind z.B. Backwaren (z.B. Brot, Trockenkekse, Kuchen, sonstiges Gebäck), Süßwaren (z.B. Schokoladen, Schokoladenriegelprodukte, sonstige Riegelprodukte, Fruchtgummi, Hart- und Weichkaramellen, Kaugummi), alkoholische oder nicht-alkoholische Getränke (z.B. Kaffee, Tee, Wein, weinhaltige Getränke, Bier, bierhaltige Getränke, Liköre, Schnäpse, Weinbrände, fruchthaltige Limonaden, isotonische Getränke, Erfrischungsgetränke, Nektare, Obst- und Gemüsesäfte, Frucht- oder Gemüsesaftzubereitungen), Instantgetränke (z.B. Instant-Kakao-Getränke, Instant-Tee-Getränke, Instant-Kaffeegetränke), Fleischprodukte (z.B. Schinken, Frischwurst- oder Rohwurstzubereitungen, gewürzte oder marinierte Frisch- oder Pökelfleischprodukte), Eier oder Eipro- dukte (Trockenei, Eiweiß, Eigelb), Getreideprodukte (z.B. Frühstückscerealien, Müsliriegel, vorgegarte Fertigreis-Produkte), Milchprodukte (z.B. Milchgetränke, Milcheis, Joghurt, Kefir, Frischkäse, Weichkäse, Hartkäse, Trockenmilchpulver, Molke, Butter, Buttermilch), Fruchtzubereitungen (z.B. Konfitüren, Fruchteis, Fruchtsoßen, Fruchtfüllungen), Gemüsezubereitungen (z.B. Ketchup, Soßen, Trockengemüse, Tiefkühlgemüse, vorgegarte Gemüse, eingekochte Gemüse), Knabberartikel (z.B. gebackene oder frittierte Kartoffelchips oder Kartoffelteigprodukte, Extrudate auf Mais- oder Erdnuss- basis), Produkte auf Fett- und ölbasis oder Emulsionen derselben (z.B.
Mayonnaise, Remoulade, Dressings), sonstige Fertiggerichte und Suppen (z.B. Trockensuppen, Instant -Suppen, vorgegarte Suppen), Gewürze, Würz¬ mischungen sowie insbesondere Aufstreuwürzungen (englisch: Seasonings), die beispielsweise im Snackbereich Anwendung finden. Die Zubereitungen im Sinne der Erfindung können auch als Halbfertigware zur Herstellung weiterer der Ernährung oder dem Genuss dienenden Zubereitungen dienen. Die Zubereitungen im Sinne der Erfindung können auch in Form von Kapseln, Tabletten (nicht überzogene sowie überzogene Tabletten, z.B. magensaftresistente Überzüge), Dragees, Granulaten, Pellets, Feststoff- mischungen, Dispersionen in flüssigen Phasen, als Emulsionen, als Pulver, als Lösungen, als Pasten oder als andere schluck- oder kaubare Zubereitungen als Nahrungsergänzungsmittel vorliegen.
Besonders vorteilhaft hat sich auch erwiesen, dass die erfindungsgemäß einzusetzenden Alkyloxyalkansäureamide, insbesondere in der bevorzugten Kombination mit scharf schmeckenden pflanzlichen Extrakten, den scharfen Geschmack von Alkohol in alkoholischen Getränken oder Zubereitungen mit alkoholischen Getränken imitieren und es damit möglich ist, den Alkoholgehalt in alkoholischen Getränken oder in Zubereitungen mit alkoholischen Getränken bei gleichbleibender sensorischer Beurteilung niedriger einzustellen oder ganz zu ersetzen.
Vorzugsweise wird der an den Geschmack von Ethanol erinnernde Geschmack dabei wesentlich durch die Menge an Alkyloxyalkansäureamid(en) bestimmt. Ethanol ist in solchen erfindungsgemäßen Zubereitungen maximal in einer Menge von 0,5 Gew.-% vorhanden, wenn eine Alkoholreduktion gegenüber einem in etwa gleich schmeckenden Vergleichsprodukt angestrebt ist. Vorzugsweise enthält eine solche Zubereitung weniger als 0,1 Gew.-% Ethanol.
Vorzugsweise liegen die erfindungsgemäßen Zubereitungen in Form von Riech-, Aroma- oder Geschmacksstoffkompositionen oder Würzmischungen vor.
Bevorzugt können die Alkyloxyalkansäureamide der Formeln (5a), 5(b) und/oder (5c) oder erfindungsgemäße Zubereitungen in Aufstreuwürzungen, sogenannten (englisch) Seasonings, eingesetzt werden, um das trockene Mundgefühl, das beim Verzehr von Mais-, Kartoffel- oder Reismehl-Chips und -Snacks entsteht, zu vermeiden und den sensorischen Gesamteindruck zu verbessern.
Bevorzugte Aufstreuwürzungen enthalten z.B. neben erfindungsgemäß einzusetzenden Alkyloxyalkansäureamiden synthetische, natürliche oder naturidentische Aromastoffe sowie Trägerstoffe wie z.B. Maltodextrin, Salze wie z.B. Kochsalz, Gewürze wie z.B. Paprika und Pfeffer, Zuckerstoffe wie z.B. Saccharin und Geschmacksverstärker wie z.B. Mononatriumglutamat und/oder Inosinmonophosphat.
Der Mundhygiene dienende Zubereitungen sind insbesondere Zahnpflegemittel wie Zahnpasten, Zahngele, Zahnpulver, Mundwässer, Kaugummis und andere Mundpflegemittel.
Zahnpflegemittel, die erfindungsgemäß einzusetzende Alkyloxyalkansäureamide enthalten, umfassen im allgemeinen ein abrasives
System (Schleif- oder Poliermittel), wie z.B. Kieselsäuren, Calciumcarbonaten,
Calciumphosphaten, Alumiuniumoxiden und/oder Hydroxylapatiten, oberflächenaktive Substanzen, wie z.B. Natriumlaurylsulfat,
Natriumlaurylsarcosinat und/oder Cocamidopropylbetain, Feuchthaltemittel, wie z.B. Glycerin und/oder Sorbit, Verdickungsmittel, wie z.B. Carboxy- methylcellulose, Polyethylenglycolen, Carrageenanen und/oder Laponiten®,
Süßstoffe, wie z.B. Saccharin, Geschmacksmodifizjerer, wie z.B. Lactisol,
Maskierungsmittel, wie z.B Hydroxyflavanonen, Kühlwirkstoffe, wie z.B. Menthol oder Mentholderivaten, Stabilisatoren und aktive Wirkstoffen, wie z.B. Natriumfluorid, Natriummonofluorphosphat, Zinndifluorid, quartären Ammo- niumfluoriden, Zinkeitrat, Zinksulfat, Zinnpyrophosphat, Zinndichlorid, Mischungen verschiedener Pyrophosphate, Triclosan, Cetylpyridiniumchlorid, Aluminiumlactat, Kaliumeitrat, Kaliumnitrat, Kaliumchlorid, Strontiumchlorid, Wasserstoffperoxid, Aromen und/oder Natriumbicarbonat.
Kaugummis, die erfindungsgemäß einzusetzende Alkyloxyalkansä ureamide enthalten, umfassen im allgemeinen eine Kaugummibase, d.h. eine beim Kauen plastisch werdenden Kaumasse, Zucker verschiedener Arten, Zuckeraustauschstoffe, Süßstoffe, Zuckeralkohole, Feuchthaltemittel, Verdicker, Emulgatoren, Aromen und Stabilisatoren.
Die Erfindung betrifft auch orale pharmazeutische Zubereitungen, enthaltend eine zum Erreichen eines trigeminalen Effektes (Reizes) wirksame Menge, vorzugsweise eine zum Erreichen eines Gefühls von Kribbeln oder Schärfe oder zur Erzeugung von Speichelfluss wirksame Menge eines Alkyloxyalkansäureamids der Formel (5a) oder (5b) oder einer Mischung aus zwei oder mehr Verbindungen der Formel (5a) oder (5b).
Orale pharmazeutische Zubereitungen im Sinne der Erfindung sind Zubereitungen, die z.B. in Form von Kapseln, Tabletten (nichtüberzogene sowie überzogene Tabletten, z.B. magensaftresistente Überzüge), Dragees, Granulaten, Pellets, Feststoffmischungen, Dispersionen in flüssigen Phasen, als Emulsionen, als Pulver, als Lösungen, als Pasten oder als andere schluck- oder kaubare Zubereitungen vorliegen, die neben erfindungsgemäß einzusetzenden Alkyloxyalkansäureamide auch andere pharmazeutische Wirkstoffe oder für Nahrungsmittelergänzungsmittel geeignete Wirkstoffe enthalten, und als verschreibungspflichtige, apotheken Pflichtige oder sonstige Arzneimittel oder als Nahrungsergänzungsmittel verwendet werden.
Andere pharmazeutische Wirkstoffe oder für Nahrungsmittelergänzungsmittel geeignete Wirkstoffe können z.B. sein: Vitamine, Mineralien, Antibiotika, bakterizide, fungizide, antivirale, antihelmintische, antifungische oder anderweitig antimikrobiell wirksame Wirkstoffe, Mittel gegen Alterung, Mittel gegen innerer Krankheiten, z.B. Herz-Kreislauf-Krankheiten, Mittel gegen gut- oder bösartige Tumoren (z.B. Cytostatica), Mittel zur Vorbeugung gegen Krebs, zur Vorbeugung oder Heilung von Demenzerkrankungen, Mittel zur Verbesserung der kognitiven Leistungen, Wirkstoffe zur Erniedrigung der Koagulation des Blutes, Mittel gegen Augenerkrankungen, Wirkstoffe zur Senkung des Fiebers, und Wirkstoffe zur Reduzierung entzündlicher Krankheiten.
Die Zubereitungen im Sinne der Erfindung können auch in Form von Kapseln, Tabletten (nichtüberzogene sowie überzogene Tabletten, z.B. magensaftresistente Überzüge), Dragees, Granulaten, Pellets, Fest- Stoffmischungen, Dispersionen in flüssigen Phasen, als Emulsionen, als Pulver, als Lösungen, als Pasten oder als andere schluck- oder kaubare Zubereitungen als Nahrungsergänzungsmittel vorliegen.
Erfindungsgemäße Zubereitungen, welche ein oder mehrere Alkyloxyalkansäureamide der Formel (5a), (5b) oder (5c) umfassen, können hergestellt werden, indem das (die) Alkyloxyalkansäureamid(e) als Substanz, als Lösung oder in Form eines Gemisches mit einem festen oder flüssigen Trägerstoff in eine der Ernährung, der Mundhygiene oder dem Genuss dienende Basis-Zubereitung eingearbeitet wird (werden). Vorteilhafterweise werden als Lösung vorliegende erfindungsgemäße Zubereitungen durch Sprühtrocknung in eine feste Zubereitung überführt.
Zur Herstellung erfindungsgemäßer Zubereitungen können gemäß einer alternativen bevorzugten Ausführungsform die Alkyloxyalkansäureamide und gegebenenfalls andere Bestandteile der erfindungsgemäßen Zubereitung
zunächst in Emulsionen, in Liposomen, z.B. ausgehend von Phosphatidylcholin, in Microsphären, in Nanosphären oder auch in Kapseln, Granulaten oder Extrudaten aus einer z.B. für Lebens- und Genussmittel geeigneten Matrix, z.B. aus Stärke, Stärkederivaten, Cellulose oder Cellulosederivaten (z.B. Hydroxypropylcellulose), anderen Polysacchariden (z.B. Alginat), natürlichen Fetten, natürlichen Wachsen (z.B. Bienenwachs, Camaubawachs) oder aus Proteinen, z.B. Gelatine, eingearbeitet werden.
In einem weiteren alternativen bevorzugten Herstellungsverfahren werden die Alkyloxyalkansäureamide zunächst mit einem oder mehreren geeigneten Komplexbildnern, beispielsweise mit Cyclodextrinen oder Cyclodextrin- derivaten, bevorzugt ß-Cyclodextrin, komplexiert und in dieser komplexierten Form eingesetzt.
Besonders bevorzugt ist eine erfindungsgemäße Zubereitung, bei der die Matrix so gewählt wird, dass die Alkyloxyalkansäureamide verzögert von der Matrix freigegeben werden, so dass man eine langanhaltende Aromawirkung erhält.
Vorzugsweise umfasst eine erfindungsgemäße Zubereitung zusätzlich mindestens eine scharf schmeckende, ein Gefühl von Wärme erzeugende, Tingling oder Speichelanregung oder einen physiologischen Kühlwirkung verursachende Substanz oder mindestens einen pflanzlichen Extrakt enthaltend diese Substanz(en).
Als andere Bestandteile für erfindungsgemäße, der Ernährung oder dem Genuss dienenden Zubereitungen können weitere übliche Grund-, Hilfs- und Zusatzstoffe für Nahrungs- oder Genussmittel verwendet werden, z.B. Wasser, Gemische frischer oder prozessierter, pflanzlicher oder tierischer Grund- oder Rohstoffe (z.B. rohes, gebratenes, getrocknetes, fermentiertes, geräuchertes und/oder gekochtes Fleisch, Ei, Knochen, Knorpel, Fisch,
Krusten- und Schalentiere, Gemüse, Früchte, Kräuter, Nüsse, Gemüse- oder Fruchtsäfte oder -pasten oder deren Gemische), verdauliche oder nicht verdauliche Kohlenhydrate (z.B. Saccharose, Maltose, Fructose, Glucose, Dextrine, Amylose, Amylopektin, Inulin, Xylane, Cellulose), Zuckeralkohole (z.B. Sorbit, Mannitol, Xylitol), natürliche oder gehärtete Fette (z.B. Talg, Schmalz, Palmfett, Kokosfett, gehärtetes Pflanzenfett), fette Öle (z.B. Sonnenblumenöl, Erdnussöl, Maiskeimöl, Distelöl, Olivenöl, Walnussöl, Fischöl, Sojaöl, Sesamöl), Fettsäuren oder deren Salze (z.B. Kaliumstearat, Kaliumpalmitat), proteinogene oder nicht-proteinogene Aminosäuren und verwandte Verbindungen (z.B. Taurin, Kreatin, Kreatinin), Peptide, native oder prozessierte Proteine (z.B. Gelatine), Enzyme (z.B. Peptidasen, Glucosidasen, Lipasen), Nukleinsäuren, Nucleotide (Inositolphosphat), geschmacksmodulierende Stoffe (z.B. Natriumglutamat, 2-Phen- oxypropionsäure, Hydroxyflavanone gemäß EP 1 ,258,200), Emulgatoren (z.B. Lecithine, Diacylglycerole), Stabilisatoren (z.B. Carageenan, Alginat, Johannisbrotkernmehl, Guarkernmehl), Konservierungsstoffe (z.B. Benzoe¬ säure, Sorbinsäure), Antioxidantien (z.B. Tocopherol oder dessen Derivate, Ascorbinsäure oder deren Derivate), Chelatoren (z.B. Citronensäure), organische oder anorganische Säuerungsmittel (z.B. Äpfelsäure, Essigsäure, Citronensäure, Weinsäure, Phosphorsäure), Bitterstoffe (z.B. Ch inin, Coffein, Limonin), Süßstoffe (z.B. Saccharin, Cyclamat, Aspartam, Neotam, Neohesperidind-hydrochalkon, Tagatose, Sucralose), mineralische Salze (z.B. Natriumchlorid, Kaliumchlorid, Magnesiumchlorid, Natriumphosphate), die enzymatische Bräunung verhindernde Stoffe (z.B. Sulfit, Ascorbinsäure), ethe- rische Öle, Pflanzenextrakte, natürliche oder synthetische Farbstoffe oder Farbpigmente (z.B. Carotinoide, Flavonoide, Anthocyane, Chlorophyll und deren Derivate), Gewürze, sowie Riechstoffe, synthetische, natürliche oder naturidentische Aroma- und Geschmackstoffe.
Als andere Bestandteile für die erfindungsgemäßen oralen pharmazeutischen Zubereitungen können alle üblicherweise weiteren Wirk-, Grund-, Hilfs- und
Zusatzstoffe für orale pharmazeutische Zubereitungen verwendet werden. Die Wirk-, Grund-, Hilfs- und Zusatzstoffe können in an sich bekannter Weise in die oralen Applikationsformen überführt werden. Dies geschieht unter Verwendung inerter, nichttoxischer, pharmazeutisch geeigneter Hilfsstoffe. Hierzu zählen u.a. Trägerstoffe (z.B. mikrokristalline Cellulose), Lösungsmittel (z.B. flüssige Polyethylenglycole), Emulgatoren (z.B. Natriumdodecylsulfat), Dispergiermittel (z.B. Polyvinylpyrrolidon), synthetische und natürliche Biopolymere (z.B. Albumin), Stabilisatoren (z.B. Antioxidantien wie Ascorbinsäure), Farb-stoffe (z.B. anorganische Pigmente wie Eisenoxide) oder Geruchskorrigentien sowie Geschmackskorrigentien.
Bevorzugt enthalten erfindungsgemäße Zubereitungen eine Aroma¬ komposition, um den Geschmack und/oder Geruch der Zubereitung abzu¬ runden und zu verfeinern. Geeignete Aromakompositionen enthalten z.B. synthetische, natürliche oder naturidentische Aromastoffe sowie Riechstoffe, insbesondere aber auch andere scharf schmeckende und/oder wärmeerzeugende Substanzen oder Pflanzenextrakte.
Ein weiterer Aspekt der Erfindung betrifft den Einsatz der erfindungsgemäßen Zubereitungen als Halbfertigwaren, insbesondere mit dem Ziel der Aromatisierung von aus den Halbfertigwaren gefertigten Fertigwaren.
Die erfindungsgemäßen Zubereitungen, die als Halbfertigwaren dienen, enthalten in der Regel 0,0001 Gew.-% bis 95 Gew.-%, bevorzugt 0,001 bis 80 Gew.-%, insbesondere aber 0,01 Gew.-% bis 50 Gew.-%, bezogen auf das Gesamtgewicht der Zubereitung, der erfindungsgemäß zu verwendenden Alkyloxyalkansäureamide und ggfs. einen oder mehrere andere Geschmacks- und Aromastoffe, ggfs. auch verschiedene Träger- und Hilfsstoffe oder verschiedene Lösungsmittel.
Insbesondere sind Halbfertig waren zur Aromatisierung von Fertigwaren bevorzugt, die die erfindungsgemäß zu verwendenden Alkyloxyalkansäureamide (oder deren Mischungen) in Kombination enthalten mit einer oder mehreren scharf schmeckenden und/oder ein Gefühl von Wärme erzeugenden Substanzen oder (insbesondere) scharf schmeckenden pflanzlichen Extrakten, enthaltend diese Substanzen und/oder in Kombination mit anderen Tingling und/oder Speichelanregung verursachenden Substanzen oder Pflanzenextrakten, enhaltend diese Substanzen, wobei die Halbfertigwaren auch verschiedene Träger- und Hilfsstoffe und/oder verschiedene Lösungsmittel beinhalten können.

Beispiel 1 Darstellung von 2-Heptyloxyessigsäure-Λ/-isobutylamid (6)
Isobutylamin (80,9 g, 1,1 mol) wurden in Aceton (180 ml) und Natronlauge (45 g/450 ml Wasser) vorgelegt und unter Stickstoff eine Lösung von 2-
Heptyloxyessigsäurechlorid (193,2 g, 1 mol) in Aceton (180 ml) zudosiert. Das
Gemisch wird über Nacht gerührt, mit 200 g Wasser versetzt und das öl abgetrennt. Die organische Phase wird in Ethylacetat aufgenommen und mit π-Hexan ausgefällt. Nach Kristallisation bei -20 0C wird das Produkt über eine gekühlte Filternutsche isoliert (62 g Ausbeute, 25 %, GC 98,8 Flächen-%); aus der Mutterlauge können weitere Fraktionen mit GC > 99 % gewonnen werden.

Pyrrolidin (2,03 g, 28 mmol) wurden in Aceton (4 ml) und Natronlauge (1 g/10 ml Wasser) vorgelegt und unter Stickstoff eine Lösung von 2- Heptyloxyessigsäurechlorid (4,5 g, 23 mmol) in Aceton (4 ml) zudosiert. Das Gemisch wird über Nacht gerührt, mit 20 g Wasser versetzt und mit
Ethylacetat extrahiert. Durch vollständiges Eindampfen erhält man das Produkt als gelbliches öl (2,8 g, 54 % Ausbeute, GC >95 Flächen-%).
Beispiel 5 Darstellung von 3-Hexyloxypropionsäure-ΛMsobutylamid (10)
Isobutylamin (2,14 g, 30 mmol) wurden in Aceton (4 ml) und Natronlauge (1 g/10 ml Wasser) vorgelegt und unter Stickstoff eine Lösung von 3- Hexyloxypropionsäurechlorid (4,0 g, 20 mmol) in Aceton (4 ml) zudosiert. Das Gemisch wird über Nacht gerührt, mit 20 g Wasser versetzt und mit Ethylacetat extrahiert. 2-Methylbutylamin (2,18 g, 30 mmol) wurden in Aceton (4 ml) und Natronlauge (1 g/10 ml Wasser) vorgelegt und unter Stickstoff eine Lösung von 3-Hexyloxypropionsäurechlorid (4,0 g, 20 mmol) in Aceton (4 ml) zudosiert. Das Gemisch wird über Nacht gerührt, mit 20 g Wasser versetzt und mit Ethylacetat extrahiert. Durch vollständiges Eindampfen erhält man das Produkt als gelbliches öl (1,58 g, 33 % Ausbeute, GC >95 Flächen-%).

Beispiel 7 Darstellung von 3-Heχyloxypropionsäure-N-piperidid (12)
Piperidin (2,14 g, 24 mmol) wurden in Aceton (4 ml) und Natronlauge (1 g/10 ml Wasser) vorgelegt und unter Stickstoff eine Lösung von 2-
Heptyloxyessigsäurechlorid (4,0 g, 20 mmol) in Aceton (4 ml) zudosiert. Das Gemisch wird über Nacht gerührt, mit 20 g Wasser versetzt und mit Ethylacetat extrahiert. Durch vollständiges Eindampfen erhält man das Produkt als gelbliches Öl (1,72 g, 36 % Ausbeute, GC >95 Flächen-%).

Beispiel 8 Darstellung von 3-Hexyloxypropionsäure-A/-pyrrolidinid (13)
Pyrrolidin (2,03 g, 24 mmol) wurden in Aceton (4 ml) und Natronlauge (1 g/10 ml Wasser) vorgelegt und unter Stickstoff eine Lösung von 2- Heptyloxyessigsäurechlorid (4,5 g, 23 mmol) in Aceton (4 ml) zudosiert. Das Gemisch wird über Nacht gerührt, mit 20 g Wasser versetzt und mit Ethylacetat extrahiert. Durch vollständiges Eindampfen erhält man das Produkt als gelbliches Öl (3,01 g, 58 % Ausbeute, GC >91 Flächen-%).

Stickstoff eine Lösung von 2-Heptyloxyessigsäurechlorid (1 g, 5,2 mmol) in
Aceton (4 ml) zudosiert. Das Gemisch wird über Nacht gerührt, mit 20 g
Wasser versetzt und mit Ethylacetat extrahiert. Durch vollständiges
Eindampfen erhält man das Produkt als gelbliches Öl (0,5 g, ca. 30 % Ausbeute, GC >95 Flächen-%).
MS (HPLC-APCI+): m/z = 310,15 (20 %, [M+H]+), 618,81 (100 %), 619,74 (22 %, [2M+H]+).
Beispiel 10 Darstellung von 3-Hexyloxypropionsäure-Λ/-(4-hydroxy-3- methoxybenzvQamid (15)
4-Hydroxy-3-methoxybenzylaminhydrochlorid (1 g, 5,3 mmol) wurden in Aceton (4 ml) und Natronlauge (1 g/10 ml Wasser) vorgelegt und unter Stickstoff eine Lösung von 2-Hexyloxypropionsäurechlorid (1 g, 5,2 mmol) in Aceton (4 ml) zudosiert. Das Gemisch wird über Nacht gerührt, mit 20 g Wasser versetzt und mit Ethylacetat extrahiert. Durch vollständiges
Eindampfen erhält man das Produkt als gelbliches Öl (0,5 g, ca. 30 % Ausbeute, HPLC > 95 Flächen-%).

Anwendunαsbeispiel 1 Sensorische Bewertung
Die zu verkostende Substanz (siehe unten) wurde in Ethanol gelöst und die ethanolische Lösung dann mit 11 %iger Zuckerlösung verdünnt (Endkonzentration: c). Zur Verkostung wurden jeweils ca. 5 ml der Zuckerlösung heruntergeschluckt. Wenn der Schwellenwert der Substanz bekannt war, wurde für die Verkostung ein Wert knapp über dem Schwellenwert gewählt. Eine Gruppe von 6 - 8 Prüfern hat die Lösungen verkostet.
a) Profil 2-Heptyloxyessigsäure-N-isobutylamid (Beispiel 1 , Verbindung 6):
c = 10 ppm: Speichelfluß steigt langsam an, nur leichtes Kribbeln auf der Zungenspitze, milder und nicht so prickelnd wie trans-Pellitorin;
b) Profil 3-Hexyloxypropionsäure-Λ/-isobutylamid (Beispiel 5, Verbindung 10):
c = 10 ppm: mundwässernd, Tingling, leicht kühlend
c) Profil 3-Hexyloxypropionsäure-Λ/-(4-hydroxy-3-methoxybenzyl)amid (Beispiel 10, Verbindung 15):
c = 10 ppm: scharf, brennend, Wärmeeffekt, nicht sehr langanhaltend, leicht speichelanregend
Verqleichsbeispiele
d) Profil Dihydrocapsaicin:
c = 100 ppb: leicht verzögert einsetzende Wirkung im Rachenraum, aggressiv, brennende Schärfe (Chili, leichte Wärmeentwicklung), langanhaltend
e) Profil 2E,4E-Decadiensäure-Λ/-isobutylamid (trans-Pellitorin)
c = 10 ppm: mundwässemd, starkes Tingling, im Nachgeschmack betäubend
Anwendungsbeispiel 2 Anwendung in einer Zahnpasta als Aromastoff
Die Inhaltsstoffe der Teile A und B werden jeweils für sich vorgemischt und zusammen unter Vakuum bei 25 - 300C 30 min gut verrührt. Teil C wird vorgemischt und zu A und B gegeben; D wird hinzugefügt und die Mischung unter Vakuum bei 25 - 300C 30 min gut verrührt. Nach Entspannung ist die
Zahnpasta fertig und kann abgefüllt werden.
Sensorische Beschreibung: deutlich wahrnehmbarer speichelanregender Efffekt ohne Tingling auf der Zunge, dafür leichtes Tingling im hinteren Rachenraum; angenehm ohne nachhaltigen Effekt.
Anwendungsbeispiel 3 Anwendung in einem zuckerfreien Kaugummi als Aromastoff
Teile A bis D werden gemischt und intensiv geknetet. Die Rohmasse kann z.B. in Form von dünnen Streifen zu verzehrsfertigen Kaugummis verarbeitet werden.
Anwendunαsbeispiel 4 Anwendung in einem Mundwasser als Aromastoff
Die Inhaltsstoffe der Teile A und B werden jeweils für sich gemischt. Teil B wird langsam in Teil A eingerührt, bis die Mischung homogen ist.
Anwendungsbeispiel 5 Anwendung in einer zuckerfreien Hartkaramelle als Aromastoff
Palatinit wird in Wasser bei 165 0C gelöst und die Mischung auf 115°C abkühlen gelassen. Das Aroma und die ethanolische Lösung werden zugegeben und nach dem Durchmischen in Formen gegossen und darin erstarren gelassen.
Anwendun sbeis iel 6 Anwendun in einer Hartkaramelle als Aromastoff
Saccharose wird in Wasser bei 115 0C gelöst. Das Glucosesirup wird zugegeben und die Mischung auf 1400C gebracht. Das Aroma und die
ethanolische Lösung werden zugegeben und nach dem Durchmischen mit einer Temperatur von 130 - 135 0C in Formen gegossen und darin erstarren gelassen.
Anwendungsbeispiel 7 Anwendung in einer Aufstreuwürze für frittiertes Knabbergebäck
100 g nicht gewürzte Tortilla Chips werden mit einer Mischung aus 7 g Käse- Trockenaroma für Snacks und 0,07 g 3-Hexyloxypropionsäure-N-isobutylamid (Beispiel 5) überstreut.
Anwendungsbeispiel 8 Anwendung in einer Kekscremefüllung
100 g Standard-Cremefüllung werden mit 0,4 g Erdbeer-Aroma und 0,1 g 3-
Hexyloxypropionsäure-N-isobutylamid (Beispiel 5) intensiv vermischt.
Anwendungsbeispiel 9 Anwendung in einem Apfelschnaps als
AI kohol-Gesch macksverstärker
Für die Zubereitung werden alle Zutaten gemischt und das Aroma zuletzt dosiert.

1. Verwendung eines Alkyloxyalkansäureamids der Formel

und
R1 einen Alkylrest darstellt,
und
m eine Zahl 1 oder 2 bedeutet

als (i) Aromastoff und/oder (ii) zur Erzeugung eines Gefühls von Kribbeln und/oder (iii) zur Erzeugung eines Gefühls von Schärfe und/oder (iv) zur Anregung des Speichelfusses im Mund und/oder (v) zur Verstärkung des Geschmacks von Ethanol und/oder (vi) zur Imitierung des Geschmacks von Ethanol.
2. Verwendung nach Anspruch 1 in einer der Ernährung, dem Genuss oder der Mundhygiene dienenden Zubereitung.
3. Verwendung nach Anspruch 1 in einer oralen pharmazeutischen Zubereitung.
4. Der Ernährung, der Mundhygiene oder dem Genuss dienende Zubereitung, umfassend eine zum Erreichen eines Gefühls des Kribbeins und/oder der Schärfe und/oder der Wärme und/oder zur
Erzeugung des Speichelfluss und/oder zur Verstärkung oder Imitierung des Geschmacks von Ethanol wirksame Menge eines Alkyloxyalkansäureamids der Formel
(5a)

5. Orale pharmazeutische Zubereitung, umfassend eine zum Erreichen eines Gefühls des Kribbeins und/oder der Schärfe und/oder der Wärme und/oder zur Erzeugung des Speichelfluss und/oder zur Verstärkung oder Imitierung des Geschmacks von Ethanol wirksame Menge eines Alkyloxyalkansäureamids der Formel
(5a)
wobei
n eine Zahl 1 oder 2 bedeutet
und
R1 einen Alkylrest darstellt,
und
R2 einen gegebenenfalls mit ein oder mehreren Hydroxygruppen substituierten Niederalkylrest darstellt,

wobei
n eine Zahl 1 oder 2 bedeutet
und
R1 einen Alkylrest darstellt,
und
m eine Zahl 1 oder 2 bedeutet

6. Zubereitung nach Anspruch 4 oder 5, umfassend eine oder mehrere weitere scharf schmeckende und/oder ein Gefühl von Wärme erzeugende Substanzen.
7. Zubereitung nach einem der Ansprüche 4 bis 6, umfassend eine oder mehrere weitere ein Kribbeln (Tingling) oder eine Speichelanregung verursachende Substanz.
8. Zubereitung nach einem der Ansprüche 4 bis 7, umfassend mindestens eine eine physiologische Kühlwirkung verursachende Substanz.
9. Als Halbfertigware vorliegende Zubereitung nach einem der Ansprüche 4 bis 8.
10. Als Riech-, Aroma- oder Geschmacksstoffkompositionen oder Würz¬ mischung vorliegende Zubereitung nach mindestens einem der Ansprüche 4 bis 9.
