Abstract

Selon l'invention, l'Agaricus bisporus sérine protéase est exprimée de manière sélective dans le stipe, l'expression maximum étant observée après 5 jours à 18 °C, son promoteur permettant d'exprimer de manière sélective une protéine hétérologue dans le corps du fruit. Des transformants peuvent être sélectionnés sans produire de fruits, au moyen d'un forçage de l'expression à l'aide de protéines humifères. La suppression des gènes post-transcriptionnels est utilisée pour supprimer la sérine protéase, de manière à permettre la récolte des protéines hétérologues du corps du fruit sans dégrader la sérine protéase.
