Claims (2)

  1.     - wherein the angle V between the arcuate back edge (2) and the cutting edge (3) amounts to 9-10°,
    - wherein the ration between the length (1) of the cutting edge (3) and the width (k) of the working element (1) at the connecting point between the cutting edge (3) and the step-like element (4) amounts to approximately 1 / k = 5.6 - 5.8

    - wherein the handle (6) is of trapezium-shaped cross-section with rounded edges (11) which extend, slightly diverging, towards the free end face (8) of the handle (6),
    - wherein the underside (10) of the handle is of arcuate form,
    - wherein the front end face (14) facing the working element and also the free rear end face (8) of the handle (6) are arranged obliquely converging towards the underside (10) and are rounded.
  2. The carving knife according to Claim 1, characterised in that on the handle (6) the thickened portion (13) is of triangular shape at the lateral surfaces (7) and is of trapezium-shaped cross-section, wherein the distance between the sides of the cross-section increases towards the free end face (8).
