Definitions
- the invention relates to wrapping paper, in particular for greasy Food products, and a method of preparation of wrapping paper.
- DE 41 33 716 C1 and EP 0 536 861 B1 disclose a wrapping paper for, in particular, fatty food products, which is characterized in that it has at least one surface with a hydrogenated fat of plant and / or animal origin having a melting point between 45 and 62 ° C is coated in an amount of 10-25 g / m 2 .
- the advantages of this wrapping paper over the conventional paraffin-coated paper are described in the two patents and are the reason for the commercial success of this wrapping paper.
- the subject of the present invention is a wrapping paper for fatty foods in particular, which is characterized in that it is on at least one surface with a hydrogenated fat of vegetable and / or animal origin having a melting point between 45-62 ° C in an amount of less than 10 g / m 2 is coated.
- liquid paraffin or liquid grease is applied in conventional coating machines to produce coated wrapping paper and reduced to a coating of about 15 g / m 2 with an adjustable rubber roller.
- This procedure is shown in FIG.
- the liquid paraffin or fat is in the coating bath (6) and the base paper is hung as a rotary roller (4) in the development of this coating machine.
- the guide of the paper web (solid line) is carried out around a arranged in the tub rubber roller (3) (main drive) such that only the outside (bottom) of the paper web is coated with the liquid paraffin or fat.
- the thus coated paper web is then passed over the steel roller (2), wherein the coating amount is reduced by adjusting the rubber roller (3).
- the paper coated in this way is cooled in a cooling system (for example by guiding over cooling cylinder (7) made of steel with cooling medium). If a two-sided coating is desired, the coating process is repeated with the other paper surface.
- the amounts of coating using conventional paper grades are at least 10 g / m 2 and usually much higher, with the amount of coating substantiated to a significant extent by the absorbency of the paper is.
- the so coated paper web is then through the nip between the steel roller (2) and the additional rubber roller (1) guided to the coating amount to the desired level to reduce.
- the reduction of the coating amount in Dependence on the paper used by suitable peripheral speeds the rollers (1) and (2) and suitable Adjustment of the gap between these rollers regulated.
- the hydrogenated fat in the coating bath at a lower temperature than previously used.
- Associated higher viscosity of the hydrogenated fat is the absorption of fat through the paper.
- the viscosity of the liquid fat in the coating bath is accordingly 10 to 20 seconds, preferably 12 to 17 seconds and in particular 13 to 15 seconds, e.g. 14 seconds (measured after the in DIN EN ISO 2431 described procedure at 80 ° C below Use of a 4 mm flow cup, Erichsen, mod. 321, no. 4).
- coating amounts of less than 10 g / m 2 can be adjusted by the procedure described above.
- Eligible coating amounts are 1 to 9 g / m 2 , in particular 2 to 8 g / m 2 .
- the coating amount is advantageously from 3 to 7 g / m 2 and particularly preferably from 4 to 6 g / m 2 , for example 5 g / m 2 . If the coating quantity falls below the value of 5 g / m 2 using conventional paper grades, most of the advantages associated with the invention are still achieved, but with decreasing coating amount, quality losses of the finished wrapping paper may occur because the absolute coating amount may be sufficient to achieve this the desired effects is too low. The extent of such loss of quality, of course, depends essentially on the nature of the paper used and, accordingly, can be affected or minimized by selecting particular types of paper.
- the wrapping paper according to the invention becomes one-sided coated.
- this can be done through a second pass through the Coating machine and the coating treatment described above on the other side of the paper.
- the starting paper to be coated corresponds to the starting paper, as it was previously used for the production of waxed wrapping paper.
- relatively strong paper grades are used having a paper weight of 20 to 60 g / m 2 , preferably 30 to 40 g / m 2 and more preferably about 35 g / m 2 .
- ie animal or Herbal triglycerides used a melting point (common also called solidification point) between 45 and 62 ° C, preferably ranging from 51 to 54 ° C.
- Particularly suitable Triglycerides are those that have an iodine value of 0 to 20 and preferably from 5 to 10 have been hydrogenated.
- Hydrogenated triglycerides are both vegetable and of animal origin or mixtures of animal and vegetable crude oils in which the weight ratio of stearic acid to longer and shorter chain fatty acids in the final product 50:50 to 80:20 and preferably 60:40 to 75:25; such hydrogenated triglycerides show sufficient plasticity and do not break when bent.
- the wrapping paper according to the invention is despite the lower Coating amount in terms of its usability without Further with the wrapping paper according to DE 41 33 716 C1 or EP 0 536 861 B1 comparable. It is obvious that the invention both technical and economic benefits provides (e.g., energy savings by heating a lower Quantity of fat at a lower temperature, smaller sizing the reservoir, lower costs due to lesser Coating quantities, etc.). In addition, the coating amount range becomes extended by the invention what the manufacturer the wrapping paper greater flexibility in the Selection of the initial paper lends when using a wrapping paper has to produce with predetermined paper weight.
- the wrapping paper according to the invention can by suitable folding and bonding in the form of a bag.
- This form is particularly suitable for the storage of Food and baked goods like bread to dry out this Prevent food and baked goods.
- This 5 g / m 2 coated wrapping paper was compared with a wrapping paper, which was prepared according to Example 2 of DE 41 33 716 C1 and EP 0 536 861 B1 and had a coating of 15 g / m 2 (standard coating).
- the wrapping papers were loaded with various fatty foods and evaluated after 24 hours of storage in the refrigerator.
- Food Weight coating according to the invention Standard coating (G) moisture absorption
- Optical impression moisture absorption Optical impression minced meat 300 low okay low okay
- Example 2 From the wrapping paper of the invention prepared in Example 1 were made by folding and gluing bags. In these bags then bread samples were packed and it was the weight / moisture loss over a period of 120 Observed hours at room temperature. For comparison were corresponding conventional bags of uncoated standard paper stocked with bread samples for bread packaging and in the same Method for weight loss / moisture loss. The results obtained are shown graphically in FIG.
