Description

The present invention relates to a gas burner for a work table of a cooking appliance, in particular of a domestic stove, allowing both normal cooking at high or medium temperature, cooking at low temperature, for example the simmering necessary for the preparation of certain sauces which require low temperatures of the order of 50 to 90 ° C with a very slight temperature gradient on the bottom of the container containing the dish to be prepared.

Using conventional burners, it is difficult to obtain a minimum power significantly lower than 1/6 of the nominal power of the appliance, a value imposed by standards for multigas burners, and therefore theoretically only power burners rated less than 1500 W could allow cooking at low temperatures. For example, with a conventional 2.5 kW burner, the average temperatures obtained at reduced flow are around 200 ° C and the difference in temperatures measured on a steel disc 5 mm thick and 22 cm in diameter placed on the support grid, and the height of which is determined by the hygiene and yield conditions imposed by the standards and centered on the burner, is approximately 29 ° C.

It has been proposed to operate such a burner by all or nothing according to an adjustable cycle and, by playing on the inertia of the container, we obtain a so-called sequential burner whose average minimum power can drop below 1/6 as indicated more high. However, these known devices have ignition difficulties at reduced flow rate, hence the risk of unburnt with poor combustion hygiene. In addition, thermal shocks, which are not always sufficiently absorbed by the inertia of the container, risk causing local carbonization at the points of impact of the flames.

It is also possible, using a burner with diffusing cap, the periphery of which extends beyond the crown of the flames at a reduced flow rate, to achieve a minimum power up to 1/12 of the nominal power and requiring to obtain the necessary adjustment precision a multiplied control device.

Cependant, la mise en oeuvre d'un tel brûleur ne permet pas d'obtenir une température moyenne du fond du récipient sensiblement inférieure à 140° C.However, the use of such a burner does not make it possible to obtain an average temperature of the bottom of the container substantially below 140 ° C.

The present invention, as characterized in the claims, makes it possible to remedy such drawbacks and proposes a gas burner making it possible, thanks to a blowing of fresh air between the flames and the bottom of the container to be heated, to reduce the temperature of the bottom of the container up to 50 ° C, a temperature below which it is no longer possible to cook, while further reducing the temperature gradient on the surface of the container to a value below 10 ° C.

In this context, document CH-A No. 177397 discloses a gas burner having, like the burner according to the invention, two concentric circuits, the external circuit of which is traversed by the gas-combustion air mixture for cooking. The interior circuit is traversed here by a gaseous mixture and feeds the orifices of the pilot lights. This burner therefore does not allow operation at low temperature. Document US-A No. 2239957 also discloses an electric resistance heating plate. The heat released by the resistors is transferred to a pan by air which is blown by a fan against the resistors. The problem of the invention therefore does not arise here.

The invention will be described below in more detail using several preferred embodiments.
  • Fig. 1 is a sectional view of a burner according to the invention, according to a first embodiment.
  • Fig. 2 is a schematic view of the air generator fan connected to the burner according to FIG. 1.
  • Fig. 3 is a schematic view of another embodiment of the air generator fan connected to the burner.

2 à 5.With reference to fig. 1, a burner according to the invention comprises a gas injector 1 disposed in front of a horizontal venturi 2 mounted to slide by means of a seal 3 in the horizontal part of a pipe 4 which is a piece of molding . The vertical part of the pipe 4 has two circuits. Firstly, an external circuit 5 which supplies the main orifices 6 and the pilot orifices 7 of the burner cup 8 with a combustible gas mixture and, secondly, an internal circuit 12 connected to a device for blowing fresh air. which will be described with reference to FIGS. 2 to 5.

The cup 8 comes to bear on the flat part 32 of the head 9 which covers the opening of the passage 10 of the burner in the hearth plate 11 of the cooking appliance. This head 9 comes to bear on an outer rim 34 of the pipe 4, located in the same plane as the flat part 31.

On the left part of the axis AB we see that the diffuser cap 35A, the end of which is arranged opposite that of the cup 8 comprises an axial duct 36 whose walls come to bear on the upper part of the hub 30. Holes (not shown) put this conduit 36 in communication with the space delimited by the diffuser cap 35A and the cup 8.

Dans la partie droite de l'axe AB, la forme du chapeau diffuseur est différente et il vient porter au moyen de picots tels que 40 sur la coupelle 8.In the right part of the axis AB, the shape of the diffusing cap is different and it comes to bear by means of pins such as 40 on the cup 8.

En se référant maintenant à la fig. 2, on voit que le circuit intérieur 12 de la pipe 4 est relié à un ventilateur 13 au moyen d'une canalisation flexible 14 en métal annelé et par un coude rigide 15 maintenus par des colliers de serrage 16.Referring now to FIG. 2, we see that the internal circuit 12 of the pipe 4 is connected to a fan 13 by means of a flexible pipe ble 14 made of corrugated metal and by a rigid elbow 15 held by clamps 16.

Such an assembly can be fixed to a support plate 17 of the cooker by means of screws such as 18.

1 ).Likewise, the injector 1 and its supply tube 20 can be screwed onto a support 19 which is itself fixed to the sheet 17 (fig. 1).

Dans ses positions extrêmes, ce volet obturateur obture complètement soit l'ouverture 24, soit le passage de l'air dans le circuit 12.In addition, the elbow 15 has an opening 24 communicating with the atmosphere, the useful air flow rate being adjustable by means of a shutter 25 capable of pivoting about an axis 26 and the control of which can be ensured. distance by a flexible or angular gear system of any known type, operated by a handle similar to that actuating the burner tap. In its extreme positions, this shutter completely closes either the opening 24 or the passage of air in the circuit 12.

Finally, fig. 1 shows the grid 22 of the stove supporting a pan 23 for example.

The operation of such a burner is as follows:
  • When it is desired to cook at a low temperature, the burner is set to operation at reduced speed and the fan 13 is started. The air blown in this way therefore borrows the circuit 12, then the space between the cup 8 and the diffuser cap 35A or 35B.

Note that at such an operating regime, the flames do not exceed the edge of the diffuser cap.

Of course the fan should only operate in low temperature cooking mode. For this purpose, its supply circuit includes a switch, the closure of which is ensured by a cam integral with the turning of the valve, and cutting this circuit as soon as its position corresponds to a higher gas flow no longer suitable for simmering at low temperature, so as to keep the burner at full capacity for ordinary cooking.

It will also be noted that the diameter of the diffusing cap 35A or 35B is limited by the need to allow the flames, at nominal flow rate, to directly reach the bottom of the pan 23.

In addition, the adjustment of a simmer can be done in various ways:
  • One can, for example, operate by varying the flow of blown air. For this purpose, the section of the duct 14 which opens into the open air through the opening 24 of the elbow 15 can be more or less reduced until completely closed by means of the shutter 25, the control of which can be ensured remotely , by a flexible or angular return system of a known type, operated by a lever similar to that actuating the burner valve.

Another possibility consists in modulating everywhere or nothing the electric supply of the ventilator according to a variable cycle at will using a known device such as a rotary switch, a mobile or electronic bimetal energy regulator which thus realize sequential fan operation.

One can, of course, make this adjustment by varying the speed of the motor actuating the fan.

In fig. 3, reference 4 designates the burner pipe, the vertical part of which has an internal circuit 12 as previously described, connected to a device for blowing fresh air by fan according to another embodiment.

The other elements of the burner have not been shown for reasons of simplification. They conform to the representation of FIG. 1 and the corresponding description.

The device according to this embodiment comprises a circular disc 127 placed between a housing 128 (replacing the elbow 15 of fig. 2) and the outlet of the fan 113 whose positioning has been modified to allow the removal of the tube 14 of this same fig . 2, and thereby a more compact construction.

Le boîtier 128 est complètement fermé à l'exception de son orifice d'entrée d'air 129 et de l'ouverture 30 permettant le passage de l'extrémité inférieure verticale de la pipe 4.The housing 128 is completely closed except for its air inlet orifice 129 and the opening 30 allowing the passage of the vertical lower end of the pipe 4.

The disc 127 is provided with a pin 131 passing through the front wall 132 of the cooking appliance as well as the control panel 133 and receiving at its end the control lever 134.

4.The disc 127 obscures the air outlet port 135 of the fan 113, except when the cutout 136 visible in the front view in FIG. 4.

By turning the lever 134, one thus realizes either the complete closing of the orifice 135, or its progressive opening.

In order not to disturb the operation of the burner when you do not wish to cook at low temperature, there should be a minimum clearance between the disc 127 and the wall of the fan housing provided with the orifice 135, but the absolute sealing is not necessary; a return spring 138 pressing the disc on the wall is sufficient.

Fig. 5 is a variant of FIG. 4, according to which the cutout 136 of FIG. 4 has been replaced by several juxtaposed cutouts 137 separated by bridges of material and ensuring better rigidity of the disc 127 without disturbing the passage of air too much, which is shown in FIG. 3 by arrows.

Pour régler le débit d'air dans le circuit intérieur de la pipe 4, on agit donc sur la rotation du disque 127 par le bouton 134.To adjust the air flow rate in the interior circuit of the pipe 4, the rotation of the disc 127 is therefore acted on by the button 134.

1 et 2.Simultaneously, it would be possible to modulate by all or nothing the electrical supply of the fan according to a variable cycle at will using a known device such as a rotary switch, a mobile or electronic bimetal energy regulator which thus realize a sequential operation of the fan as in the case of the embodiment described in FIGS. 1 and 2.

One can also, of course, make this adjustment by varying the speed of the motor actuating the fan, as previously indicated.
