Abstract
Настоящее изобретение относится к способу извлечения бетаина из мелассы, включающему стадию осахаривания, на которой мелассу подвергают воздействию фермента, образующего фруктан, с получением содержащей фруктан мелассы (фруктановая меласса); и стадию разделения, на которой фруктановую мелассу подвергают хроматографическому разделению с получением, таким образом, содержащей бетаин фракции.
