Claims (15)
1. Fremgangsmåde til fremstilling af en kaffeekstrakt, hvilken fremgangsmåde omfatter følgende trin: a. at tilvejebringe en blanding af ristede kaffebønner og vand, b. at formale blandingen af ristede kaffebønner og vand i et kammer, der er sat under tryk, og c. at separere den formalede blanding i en flydende kaffeekstrakt og kaffegrums.
2. Fremgangsmåde ifølge krav 1, hvor vandet opvarmes forud for blandingen med ristede kaffebønner til opnåelse af en blanding på 80 °C eller derunder.
3. Fremgangsmåde ifølge krav 1, hvor vandet opvarmes forud for blandingen med ristede kaffebønner til opnåelse af en blanding på 90 °C eller derunder.
4. Fremgangsmåde ifølge krav 1, hvor vandet opvarmes forud for blandingen med ristede kaffebønner til opnåelse af en blanding på 95 °C eller derunder.
5. Fremgangsmåde ifølge et hvilket som helst af kravene 1 til 4, hvor den formalede blanding holdes i kammeret, der er sat under tryk, i 5 minutter til 2 timer før separationen.
6. Fremgangsmåde ifølge et hvilket som helst af kravene 1 til 5, hvor den formalede blanding holdes i kammeret, der er sat under tryk, i 10 minutter til 1 time før separationen.
7. Fremgangsmåde ifølge et hvilket som helst af kravene 1 til 6, hvor blandingen af ristede kaffebønner og vand ifølge trin a. finder sted i et kammer, der er sat under tryk.
8. Fremgangsmåde ifølge et hvilket som helst af kravene 1 til 7, hvor hovedparten af det CO2, der frigives fra de ristede kaffebønner under blandings- og/eller formalingstrinnene, bevares sammen med blandingen af ristede kaffebønner og vand.
9. Fremgangsmåde ifølge et hvilket som helst af kravene 1 til 8, hvor trykket af den formalede blanding sænkes forud for separationstrinnet.
10. Fremgangsmåde ifølge et hvilket som helst af kravene 1 til 9, hvor temperaturen om nødvendigt sænkes til mellem 0 og 30 °C forud for separationstrinnet.
11. Fremgangsmåde ifølge et hvilket som helst af kravene 1 til 10, hvor trykket under formalingstrinnet er 50 kPa [0,5 barg] eller mere, fortrinsvis 100 kPa [1 barg] eller mere.
12. Fremgangsmåde ifølge et hvilket som helst af kravene 1 til 11, hvor de ristede kaffebønner formales til en gennemsnitlig partikelstørrelse på ΙΟΟΟμιτι eller derunder.
13. Fremgangsmåde ifølge et hvilket som helst af kravene 1 til 12, hvor den flydende kaffeekstrakt separeres yderligere i en vandig kaffeekstrakt og kaffeolie.
14. Fremgangsmåde ifølge et hvilket som helst af kravene 1 til 13, hvor separationen finder sted i en eller flere perkolationssøjler.
15. Fremgangsmåde ifølge et hvilket som helst af kravene 1 til 14, hvor den ene eller de flere perkolationssøjler drives kontinuerligt eller semikontinuerligt.
