Claims (12)

1. Fremgangsmåde til fremstillingen af ostemælk, omfattende trinnene: (a) at udsætte råmælk for varmebehandling ved en temperatur i området fra 70 °C til 80 °C og over et tidsperiodeområde fra 20 sekunder til 60 sekunder, (b) at fjerne faststoffer fra det varmebehandlede produkt, (c) at skumme det resulterende intermediat, (d) at udsætte den derved opnåede skummemælk for mikrofiltrering under anvendelse af en membran med en gennemsnitlig porestørrelse på 1,3 til 1,5 pm, (e) at justere det resulterende permeat til det ønskede fedtindhold ved at tilsætte en mængde af fløden separeret i trin (c), og (f) at pasteurisere den derved opnåede standardiserede mælk i et sidste trin.
2. Fremgangsmåden ifølge krav 1, kendetegnet ved at den derved opnåede standardiserede mælk ikke udsættes for behandling i en baktofuge.
3. Fremgangsmåden ifølge kravene 1 og/eller 2, kendetegnet ved at varmebehandlingen udføres i en varmeveksler.
4. Fremgangsmåden ifølge mindst ét af kravene 1 til 3, kendetegnet ved at faststofferne separeres i en separator.
5. Fremgangsmåden ifølge mindst ét af kravene 1 til 4, kendetegnet ved at membranen er en keramikmembran.
6. Fremgangsmåden ifølge et hvilket som helst af kravene 1 til 5, kendetegnet ved at under standardiseringen, da tages den tilsatte fløde fra den separerede fløde.
7. Fremgangsmåden ifølge et hvilket som helst af kravene 1 til 5, kendetegnet ved at under standardiseringen, da tages den tilsatte fløde fra en vallefløde modtaget i en vallefremgangsmåde.
8. Fremgangsmåden ifølge et hvilket som helst af kravene 1 til 7, kendetegnet ved at under standardiseringen, da tilsættes en afmålt mængde af et protein opnået i en mejerifremgangsmåde.
9. Fremgangsmåden ifølge et hvilket som helst af kravene 1 til 8, kendetegnet ved at et bakteriekoncentrat separeres fra den pasteuriserede standardiserede mælk.
10. Fremgangsmåden ifølge krav 9, kendetegnet ved at separation udføres ved centrifugering.
11. Fremgangsmåden ifølge et hvilket som helst af kravene 1 til 10, kendetegnet ved at den standardiserede mælk lagres, før den pasteuriseres.
12. Fremgangsmåden ifølge et hvilket som helst af kravene 1 til 11, kendetegnet ved at den standardiserede mælk pasteuriseres ved temperaturer inden for området på fra 70 til 80 °C og i en periode på fra 20 til 60 sekunder.
