Claims (2)
1. Fremgangsmåde til fremstillingen af ostemælk, omfattende trinnene: (a) at fjerne faststoffer fra råmælk ved en temperatur i området fra 8 til 12 °C, (b) at skumme det resulterende intermediat, (c) at udsætte den derved opnåede skummemælk for mikrofiltrering ved en temperatur i området på fra 5 til 25 °C, hvor mikrofiltreringen udføres med en keramikmembran med en gennemsnitlig porestørrelse på fra 1,1 til 2 pm, (d) at justere det resulterende permeat til at give det ønskede fedtindhold ved at tilsætte en mængde af fløden separeret i trin (b), og afsluttende at pasteurisere den derved opnåede standardiserede mælk (e).
2. Fremgangsmåde ifølge krav 1, hvor opvarmning af råmælken kun udføres én gang, direkte før at ostemælken passeres ind i ostekarret, for derved at effektuere den foreskrevne pasteurisering.
3. Fremgangsmåde ifølge kravene 1 og/eller 2, hvor den derved opnåede standardiserede mælk ikke udsættes for behandling i en baktofuge.
4. Fremgangsmåde ifølge mindst ét af kravene 1 til 3, hvor faststofferne separeres i en separator.
5. Fremgangsmåde ifølge ét af kravene 1 til 4, hvor mikrofiltreringen udføres med en membran med en gennemsnitlig porestørrelse på fra 1,3 til 1,5 pm.
6. Fremgangsmåde ifølge ét af kravene 1 til 5, hvor man under standardiseringen, tager den tilsatte fløde fra den separerede fløde.
7. Fremgangsmåde ifølge ét af kravene 1 til 5, hvor man under standardiseringen, tager den tilsatte fløde fra en vallefløde opnået i en vallefremgangsmåde.
8. Fremgangsmåde ifølge ét af kravene 1 til 7, hvor man under standardiseringen, tilsætter en afmålt mængde af et protein opnået i en mælkeforarbejdningsproces.
9. Fremgangsmåde ifølge ét af kravene 1 til 8, hvor et bakteriekoncentrat separeres fra den pasteuriserede standardiserede mælk.
0. Fremgangsmåde ifølge krav 9, hvor separationen udføres ved centrifugering.
11. Fremgangsmåde ifølge ét af kravene 1 til 10, hvor den standardiserede mælk lagres, før den pasteuriseres.
2. Fremgangsmåde ifølge ét af kravene 1 til 11, hvor den standardiserede mælk pasteuriseres ved temperaturer inden for området på fra 70 til 80 °C og i en periode på fra 20 til 60 sekunder.
