PATENTAMT.PATENT OFFICE.
^The method forming the subject of the present invention has the purpose of producing the wort required for beer preparation in continuous operations, and relates to the continuous, diastatic saccharification of starch-containing bodies. Until now; became; .. ..in the brewery, when the 'Starkehlehles' was saccharified: by malting. and ^ in the production: the wort discohK continuously worked, χ: '■;■;' ■. ^
.The actual saccharification, i.e. H. the Resolution; of the starch flour and its conversion into sugar and dextrin was up now in more or less large vats (mash tuns), which are made at intervals of time with more or less large quantities of the starch-meal-containing to be treated Materials have been charged. ■, This irrational operation and treatment larger / quantities, of. Cornstarch and diastase containing materials have disadvantages as a consequence, which become noticeable that it is bad in the treatment taken total mass of the malt not only an even distribution of the water, but also to achieve a completely uniform temperature. .
'According to the present process, the saccharification of the starch flour is now continuous, thus carried out without interruption, avoiding the abovementioned inconveniences. '
"All operations of this new brewing process take place without manual labor being required. "
In the accompanying drawing is the sequence of operations of the method illustrated to achieve continuous operation.
The malt grist is fed through the funnel or container T (Fig. 1) and then enters the grinding apparatus C of any suitable construction, in which the grist is ground into flour to the extent that it falls continuously from the feed funnel T. The flour obtained in this way is then introduced into an apparatus H which is used to introduce the mashing water and is connected to the grinder, in which it is moistened by injecting water. So that the whole mass forms a homogeneous pulp, the water-supply device is provided with a central shaft α: which carries arms b , which serve to knead the mass, and because of their slight inclination towards the axis the material can move from one end · Heal the apparatus after the other.
In dem genannten Bottich ist eine Welle α angebracht, welche jedoch nicht wie die Befeuchtungsvorrichtung H eine Anzahl von KnetschaüfelnWith R a tub of U-shaped cross-section is designated; The same is to be called the pre-mashing apparatus because this is where the first chemical transformations, which lead to saccharification, take place, and because the material remains in this vat without a swelling process, as is necessary so that the chemical transformation can take place in the required manner. In said tub, a shaft is mounted α, which, however, not as the moistening device H, a number of Knetschaüfeln
•s.• s.
.has, but has two ordinary transport screws h , which occupy the entire cross-section of the vat. The purpose of these snails is to gradually transport the material forward , but without kneading it. .
As already mentioned above, the first chemical transformations which lead to saccharification take place in this pre-mashing apparatus R , that is, those - which occur at ■. the malt take place at temperatures lower lying than that in "practice of the comparison, zuckerungsprocesses used with success in the present case 40 0 not exceed. ■ It takes place in this vat R a solution of diastase malt and a tlieilweise conversion the protein-containing constituents in peptones, and this dissolution process as well as this peptonization, require a relatively long time and cannot be carried out during the short time during which the material moves through the soaking apparatus.
Numeral 5 denotes a tub, the shape of which is similar to that of the pre-mashing apparatus R , but which is longer and has a smaller cross-section than the first-mentioned tub. This vat bears the name »saccharification vat«. The fruit to be saccharified is gradually introduced into this vat in the Mai'se as it is removed from the pre-mashing apparatus R by the auger h.
In this saccharification tub moves a shaft a, which is provided with spreader tubes b , which are analogous to those of the humidifier H , and which serve to soak the fruit, to facilitate the mixing of it, and to give it such consistency that it can be processed without difficulty can be transported after the end of the saccharification vat. In addition, the saccharification tub 5 is provided with a double bottom and supply pipes t x t for hot and cold water, by means of which, with the aid of suitable devices, the fruit to be treated can be given the required temperature and the necessary amount of water can be added in order to bring about the saccharification process as desired.
The container R 1 connected to the saccharification container serves to receive the goods removed from the saccharification tub. This container, which the inventor calls the "vat for the termination of saccharification", is analogous to the pre-mashing apparatus R in all parts. The saccharification process is ended in this tub R 1 , since the product remains in the same for a longer period of time without being subjected to the swelling process. In its middle part this vat is provided with a shaft which has two augers hh , which move the material in the resting state, i. E. to transport it further without subjecting it to a mixture.
By, the lobeji; described apparatus, which is composed of the three parts RSR 1 , a complete saccharification of the material to be treated is achieved. In addition, this apparatus offers the possibility of letting the saccharification process go on continuously and of continuously removing the saccharified mass from the vat R 1 , while new quantities of raw fruit are constantly being fed in through the grinding or grist mill C.
The temperature in the pre-mashing apparatus R, in which the first saccharification transformations in the ground material take place, is kept at approx. 40 °, while the mass when entering the saccharification apparatus S is kept at temperatures of 58 to 60 ° by the influx of hot water and afterwards it is gradually brought to 62, 63, 65, 66, 70 and 72 °, at which point the mass has reached the degree of heat suitable for the complete dissolution of the starch and for its conversion into sugar and dextrin, and at the appropriate temperature in each case is kept upright for as long as is necessary to achieve good wort quality.
Dieses Maischgut von ioo° kommt mit dem aus dem Verzuckerungsgefäfs S kommenden Maischgut, welches während der ganzen Durchgangsdauer durch den Apparat auf einer viel niedrigeren Temperatur gehalten wurde, in einem einzigen kleinen Mischgefäfs wieder zusammen, wobei durch den Zusammenflufs der verschiedenen heii'sen Maischflüssigkeiten in dem Mischgefäfs V eine Mischung entsteht, welche dieThe three parts mentioned RSR 1 therefore form in their entirety the apparatus which is used for saccharification according to the infusion method, in the manner shown in the drawing in FIG. If, on the other hand, the decoction method is to be used, according to which the breweries that use undermining and thick mash work, then the embodiment of the apparatus shown in FIG. 2 is used. For this purpose the saccharification vessel S is divided in such a way that two apparatus SS 1 of the same construction as the saccharification vessel 5 (Fig. 1) arise. In this embodiment, part of the raw material to be saccharified reaches the saccharification vessel S as it leaves the pre-mashing apparatus R , the other part arrives in the second saccharification vessel S ', where it is heated to a temperature of 100 ° until it leaves the same; is brought. This mash of 100 ° comes together again in a single small mixing vessel with the mash coming from the saccharification vessel S , which was kept at a much lower temperature during the entire passage through the apparatus, whereby the confluence of the various hot mash liquids in the mixing vessel V creates a mixture which the
