Method for the production of artificial honey The invention relates to a
Process for the production of artificial honey and is held by the application of whey
Water marked for the dissolution of the beet sugar to be inverted. Of the
Invention is based on the knowledge that in this way the artificial honey product
can give a taste and aroma very close to real honey.
Sweet or sour whey can be used to carry out the process
as it occurs in particular in the production of quark.
The new process preferably produces a fairly liquid one
Product. According to the inventor's knowledge, this property is probable
due to the remaining protein content of the whey. Since a more solid one
The solidification state of the artificial honey, especially for reasons of packaging and the
Shipping is often desirable or even necessary after another
Proposed feature of the invention, the whey prior to its use according to the invention
by methods known per se more or less completely from their protein content
to free. Because this protein content on the other hand for nutritional reasons
may be desired in synthetic honey, the invention further provides that prior to the inversion process
Proteins separated from the whey after implementation
der Tn: vertierung
to add again. cla the liquefying effect of the protein only occurs
if they are present at the inversion.
Ausführungsbeispiel a oo Icg Zucker werden in 66 kg heißer
vertierung ausreichende eienge organischer o<Irr anorganischer Siiure zugegeben,
z. B. r Liter konz.
Embodiment a oo Icg sugars are dissolved in 66 kg of hot whey and about cooked io minutes. After clarification, a sufficient amount of organic or inorganic acid is added for inversion, e.g. B. r liter conc. Hydrochloric acid. It is then neutralized to 1 acid number with NaOH in a known manner, the inverted sugar solution is drained from the kettle and still hot by adding. further whey is adjusted to the desired percentage of dry matter (for example 7 8% "). When it is still hot, more aromas are added. It is then allowed to cool in a cooling basin or in some other way to about 23" C so that the synthetic honey mass can still be stirred and bring them to another agitator, where further flavorings are added at the usual temperature while stirring. The artificial honey is then ready and can be bottled. Of course, the product can also be supplemented with vitamins.
