Description
Mashed potatoes in dried form have enjoyed increasing popularity with housewives and for years in the catering sector, mainly because of its advantages in preparation, which is common to housewives especially in the time savings and in large kitchens in the lighter quantity disposition and in a significant savings in personnel.
Zur Zeit befinden sich im wesentlichen zwei Produkte dieser Art im Markt, nämlich Kartoffelpulver (Granules) und Kartoffelflocken (Flakes), wobei letztere in ih«-er Beliebtheit wesentlich höher eingestuft werden müssen, da sie in ihrer rekonstituiei ten \ orm durch ihre flaumige und lockere Konsistenz nut einem frisch zubereiteten Püree nahezu völlig identisch si id.At the moment there are essentially two products of its kind on the market, namely potato powder (granules) and potato flakes (flakes), the latter in ih "-er popularity must be classified much higher, as they in their rekonstituiei th \ orm fluffy through her and loose consistency with a freshly prepared puree is almost completely identical.
In contrast to potato powder, the disadvantage of potato flakes is that they cannot be reconstituted with water and / or milk at boiling temperature, since the use of such high temperatures leads to excessive destruction of potato cells and subsequently to a pasty and sticky mass which can no longer stand up to a comparison with a freshly prepared puree. Potato flakes have to be prepared at a temperature of around 70 to 75 ° C, which, especially in restaurants and canteens, can lead to the puree no longer being consumed at a sufficiently high temperature. This is the reason why potato powder, which can be reconstituted at the boiling point, is often preferred to potato flakes in restaurants and canteens.
In the household, too, arise when preparing puree from potato flakes at boiling temperature Advantages, as it is much easier to boil the preparation liquid than a temperature of 70 to 75 ° C set, as is necessary with the potato flakes currently on the market.
Since the preparation of mashed potatoes from potato powder or potato flakes is usually done with a Mixture of water and milk in a ratio of 2: 1 takes place, which in turn requires a fresh milk supply it is desirable to add milk solids to the potato powder or the potato flakes in more suitable form Add concentration so that only water is required for reconstitution. It is also desirable to make a potato flake, which at the boiling point becomes a puree with an acceptable consistency can be reconstituted.
For example, flic DT-OS 2138 874 teaches in a known manner To make potato flakes, add fat, skimmed milk solids, salt and emulsifiers to potato flakes that can be prepared with boiling water to achieve a good consistency. the end the US-PS 34 47 934 is for this purpose the use of emulsifiers, which consist of a mixture of Monoglycerides and the salt of a lactic acid ester exist, known US-PS 29 80 543 suggests Solution to this task also the use of

No. 3,056,683 also shows the use of emulsifiers, optionally in conjunction with fat and methyl cellulose to improve consistency. Further suggestions in this direction are in the GB-PS

None of the above methods have been able to produce satisfactory results in practice and to gain commercial importance, so that still the commercially available potato flakes cannot be reconstituted at boiling point with a good consistency. It exists still the task of creating a potato flake that contains both the necessary milk components can already contain as well as the use of boiling water and / or milk during preparation permitted. The present invention is based on this object.
Gegenstand der Erfindung ist ein Verfahren zur Herstellung eines bei Siedehitze rekonstituierbaren, verbesserten Kartoffelpürees in Form von getrockneten Flocken nach Waschen, Schälen, Schneiden, Vorkochen, Abkühlen, Garkochen, Pürieren, Zusetzen von Proteinen, gegebenenfalls Monoglyceriden, und Trocknen. The invention relates to a process for the preparation of a reconstitutable at boiling point, improved mashed potatoes in the form of dried flakes after washing, peeling, cutting, precooking, Cooling, cooking, pureeing, adding proteins, possibly monoglycerides, and drying.
This object is achieved in that a low-lactose whey protein in an amount of 2% is used as the protein up to 12% by weight, based on potato dry solids,
The preferred concentration range is 4 to 8%. In addition to the protein, monoglycerides and / or stearoyl lactylate are also preferably used in the amounts known from the prior art, in particular 1.5 to 5%, added.
Die Herstellung<vs The low-lactose whey protein is commercially available available. The protein component consists of milk albumin and globulins from whey, which together as Whey proteins are called. The production
Whey proteins from both manufacturing processes can also be used as a liquid concentrate. The lactose present in considerable quantities in commercial normal whey proteins can lead to undesired browning reactions of the Maillard reaction type during the drying process on the drum dryer. Surprisingly, however, low-lactose whey protein apparently also has a favorable influence on the smell, taste and consistency, especially when stored for a longer period of time, where the properties differ more and more from an otherwise identical puree, which, however, instead of low-lactose whey protein only with, for example, skimmed milk solids, in each case with the same amount of protein. Otherwise, the puree is made in a known manner, the potatoes first being washed, peeled and cut into slices. Thereafter, the potato slices can be used in a temperature range of 45 to 60 0 C, in particular 55 ° C. over a period of 10 to 60 minutes, especially 20 minutes, a temperature treatment, usually in water, are subjected, whereupon the potato slices at a temperature of 65 to 85 ° C, especially at 70 ° C, 5 to 30 minutes, especially 10 minutes , pre-cooked, then cooled in a known manner and cooked with steam under atmospheric pressure and crushed to a pulp. According to the invention, low-lactose whey protein and, preferably, cysteine, which prevents undesired color changes when standing in the warm bath, as well as emulsifiers and possibly milk and seasonings are added to the porridge, whereupon the porridge in known Way is dried on drum dryers.
Durch den Zusatz wird es möglich, Kartoffelflocken bei Siedetemperatur unter ErzielungIt is not exactly known which processes in detail lead to the improved quality, but one is clear difference to the behavior of known mashed potatoes when reconstituting in the boiling heat ascertain. It is Z. B. surprising that the addition of skimmed milk or casein is not what you want Result leads It is believed that the addition of the low-lactose whey protein reduces the starch gel of a Potato mash changed in such a way that its disadvantageous, sensory properties are no longer perceived can be. einer ansprechenden, lockeren Konsistenz zu rekonstituieren und diese Eigenschaft wird bei längerem Lagern noch ausgeprägter.Reconstitute to an appealing, fluffy consistency and this property becomes even more pronounced with prolonged storage.
Die Zugabe des Molkenproteins erfolgt vorzugsweise in Form einer wäßrigen Suspension zum Brei vor der Trocknung bzw. durch Einsprühen dieser wäßrigen Proleinsuspension in den Sumpf der dritten bzw. vierten Auftragswalze eines herkömmlichen Walzentrockners mit fünf Auftragswalzen, wobei die Zählrichtung mit derThe addition of the whey protein is preferably carried out in the form of an aqueous suspension to the pulp before Drying or by spraying this aqueous prolein suspension into the sump of the third or fourth Application roller of a conventional drum dryer with five application rollers, the counting direction being with the

The direction of rotation of the drying roller matches. It is also necessary to add to the puree before it comes onto the rollers, especially immediately after the puree possible and is advantageously carried out by spraying, since the consistency-improving effect of the Last but not least, whey protein depends on its good distribution in the mashed potatoes pureeing is also possible.
The consistency-improving effect of the whey protein additive is surprisingly fully retained, if whole or skimmed milk is added to the mashed potatoes, either native or dried Form is added so that the resulting product can only be reconstituted with hot water got to.
