Description
Verfahren zur Geschma9ksvariierung von Milchprodukten und anderen Lebensmitteln mit Emulsionsstruktur Patentbeschreibung Die vorliegende Erfindung betrifft eine £methode, um mit Hilfe von in Fett gelösten oder dispergierten Geschmacks-und Geruchsstoffen den Geschmack von Lebensmitteln, die Fett in-emulgierter Form enthalten, wie z. Bo Milch, Rahm, Milchpulver, Käse, Soßen, Mayonnaise, Wurstwaren etc. zu variieren. Solche Geschmacksvariationen durch Zusatz von Geruchs- und Geschmacksstoffen, Essenzen und auch Gewürzen hat man bisher erzielt -durch direkten Zusatz dieser Stoffe zu den Lebensmitteln. Und zwar kann man solche geschmackgebenden Stoffe zusetzen in fester Form, z. B. Kümmel, Dillsaat in wäßriger oder alkoholischer Lösung oder auch in Form von aromatischen Ölen. Diese werden insbesondere -Fetten zugesetzt. Will man aromatische Öle in wäßrigen Lösungen verteilen, so stellt man sie in Form von Aromaölemulsionen her. Bei allen nach den bekannten Verfahren hergestellten Lebensmitteln wird die Geschmacksempfindung dadurch ausgelöst, daß die Geruchs--und Geschmacksstoffe oder Gewürze beim Verzehren des Lebensmittels direkt mit den Geschmacksnerven der Zunge in Berührung komraen. Durch Versuche wurde nun festgestellt, daß viele Geschmacksstoffe, wie insbesondere Fettsäuren, Ketone, Aldehyde, Lactone und auch Gewürzöle wesentlich angenehmer empfunden werden, wenn sie in einer möglichst grof3en Menge Fett gelöst und kolloidal dispergiert werden und dieses Fett als Emulsion in dem Lebensrnittel verteilt wird. Das neue Verfahren bezweckt also einerseits eine Geschmacksverbesserung bei der Anwendung von Geruchs- und Geschmacksstoffen, andererseits erreicht das Verfahren auch eine bessere und schnellereVerteilung von Geruchs- und Geschmacksstoffen in Lebensmitteln und überwindet bisher bestehende technologische Schwierigkeiten bei der Kürzung. Das neue Verfahren besteht demnach darin, daß man natürliche oder künstliche Geruchs- oder Geschmacksstoffe entweder in Fetten bzw. Ölen löst oder, wenn es sich um feste Aromastoffe handelt, in den Fetten suspendiert und dann aus diesem Fettaromakonzentrat eine Emulsion herstellt, und zwar in einer Form, wie sie auch von Natur aus in dem Lebensmittel vorliegt. Bevorzugt wird gemäß der Erfindung das Fett für die Lösung der Geruchs- und Geschmacksstoffe genommen, das von Natur aus Bestandteil des betreffenden llebensmittels ist.
